Very good. I had no fresh basil, but rosemary... just wonderful!! And you have a new friend in France. PS They used to make flatbread in a pan, similar to this, for the fishermen in the South of France, when they went out for the day...hence the rosemary!
I have made Panelle before but with disastrous results, so I tried yours because I like the mold and the method you used, I’m so glad I did, the measurements are right on, 3 parts water one part flour. I let it cool down for about 3 hours outside on my deck, temperature was 2 degrees. Then I understood what I was doing wrong before, cooking and trying to fry right away' doesn’t work. My husband was delighted I made them, he loves them and always talks about eating them in Sicily. He placed special order “Make me 300 of those” Thank you for sharing your recipe

La soluzione del tubo di plastica è geniale. Posso sapere cosa hai utilizzato? Ti ringrazio e ti ho mandato "un caffè". E' poco ma tante gocce formano un fiume!

My Sicilian friend made these and she had lemon wedges to squeeze the juice on just before you ate them. The lemon juice makes the dish in my opinion.
