Love the spices in there and nutritional yeast is so smart, I never thought of adding that myself! There is an easier way to make chickpea chips (imo). You can make a batter instead of a dough (which you let sit in the fridge for a couple of hours), then you pour out a thin enough layer over an oiled baking sheet and bake it until it is solid enough to be cut into chips. You then bake those chips until they're crispy (that last step works really well in an airfryer too). I just made a batch this morning and it was super easy and fast (I prepared the batter last night: 1 cup chickpea flour, 1 cup water and some salt. I added some baking powder just before I used the batter)
I accidentally made red lentil tortilla chips a while ago, those work easily too. Just blend them raw with some water and bake the slurry in thin sheets (oven or skillet).

It is well understood among health practitioners that saturated fat isn't even the problem - the hydrolyzed fats are. Coconut oil is good for you.
