6 quart instant pot
Cook time for beef foot and tripe: 50 minutes
With hominy add 12 Minutes + time for pressure to release
* Please be careful when releasing pressure
*allow pressure to release on its own for best flavor
Recipe time will vary depending on how much time you have amigos
Ingredients
3 pounds beef honeycomb tripe (pancita para Menudo)
3 pounds beef foot
1 medium onion (white or yellow)
3 green onions
1 whole garlic
1/2 Tbsp salt (adjust to taste)
Enough water to cover the beef foot and tripe (Max line)
For the wash
2 limes
2 tbsp baking soda
1 tbsp salt (sea salt)
Enough water to rinse beef foot and tripe
This recipe pairs well with Toasted bolillo bread or corn tortillas
Toppings- Finely chopped onions, cilantro, lime, oregano, pepper flakes (chiltepines), lime

I'm watching as I comment. From Califas and we eat corn tortillas with menudo, and found it funny when visiting my family in El Paso and how they eat menudo with pan bolillo too, and they laughed at us because we use tortillas and add cilantro, oregano, onion and lemon to our own bowl.

I didn’t know that you can make Menudo though in the instant pot. I’m definitely going to buy one now and make menudo. I use to make the old way that took all day to make.
