Who else loves Mexican rice ?
Do a chile relleno recipe!
Uh me
I do
I do
My mom makes hers a little different but yours looks like it'd be alright
Whats ground anado?
Orale. Tu sabes quien!
Just had an idea what if we make it with smoky salsa and any additional ingredients to get that smoky flavour.
I'm a trained Chef and have for a few years now been trying to find a Spanish rice I liked and this is the one, made it twice this week using fresh paste tomato, onion and serrano from my garden, added 1/4 tsp sugar the second time and used paprika instead of the annateo (did not have any) the first time and a smokey paprika the second time and boy is this better than any restaurant Spanish rice I've had, the wife felt the same, thanks...
If there's a rice expert it's definitely my wife and she said this was hands down the best Mexican rice she's ever had. And I couldn't agree more as the rice overshadowed the main course! Incredible...
Yes I called it a " DROP THE MIKE" moment. Today I'm trying it with achiote which first time I made this deliciousness I did not hv. Will keep you posted on how it turns out. Making now as I type. Whoo hoo......

If you want to take this great recipe to the another level of flavors, add chopped onions when the rice is toasting and sauté for a few minutes… chefs kiss
That’s what I do! Once the onion begins toasting, I add a lil crushed garlic. As soon as the garlic begins turning brown, I add the blended sauce.
nana, this level is just fine
I would put some chopped raw onion on top
The onion is in the sauce
All I have to say is thank you for making all your videos easy to follow. I'm half latina and I was raised by my Caucasian mom who didn't cook mexican food. I can now gladly say you have taught me so many wonderful Mexican dishes that I have always wanted to know how to make. Thank you!
Sam but I’m Puerto Rican and white but my hubby is Mexican so I had to learn 😊
Same!
It was the opposite with me. Mexican dad and Caucasian mom. Did not learn his families recipes. Now I’m I’m learning all these great dishes!
When I was 13, I fell in love for the first time, she was Hispanic and Her family welcomed me with open arms. I cared about her deeply, but when I think back I loved feeling like I was part of her family even more. And her mom and grandma used to make all these Mexican dishes her dad used to fix us Carne Asada for us, her mom would make Fideo and Menudo. But her grandma would make this Mexican rice and tamales that were like earth shattering. And I swear to God this rice takes me right back to her kitchen. I can’t tell you how wonderful this recipe is, thank you for making me feel like a kid again.
Thank you for sharing your story. Glad you found the recipe helpful ☺️
I’m going to try it. Tried of boxed rice.
I had the experience of working for a Mexican family at their restaurant. I was a teenage white kid, but I worked for them for a number of years and I got to be friends with them. They invited me to their homes and parties and welcomed me like I was one of their own. Part of their culture was to always share and open their homes and never ask anything in return. Great people and great culture.

Made this for the 3rd time and it is our absolute favorite! Everyone goes back for more until it’s gone. Definitely going to be a weekly side dish in our family. Thank you!
Best recipe hand down!!! I followed this recipe about a month and a half ago and my boyfriend LOVED IT !! He has been begging for it every since !! so I’ve been searching for this video to find the recipe again ❤️👏
Made this tonight with oven roasted chicken thighs and OMG. It was amazing. Such a simply recipe that has so much flavor!!!!!! ❤
The addition of the chicken breast sounds good.
Me an Indian..tried this recipe..and got appreciation from my Indian guests too...thanks a ton
Awesome! Glad to know.
Lately when I do a search for recipes within TH-cam your channel often appears at the top of the list. Your videos are consistently well shot, your video and written instructions quite clear and of course the results are outstanding! Thank you Roseanne ❤️
I’ve made this recipe numerous times after trying it several months ago.. It is “Heaven on Earth”! My family and I love, love, love it. Thank you for sharing it with us.❤️
So happy it worked for you! This rice is a keeper for sure!
Followed this recipe just as shown and it turned out perfectly one of the best I've ever had thank u thank u
Very important tip when pouring the tomato sauce in stir quickly cover with lid and turn stove top down to like 3 very light simmer for 20 mins and whatever u do dont take the lid off until the 20 minutes is up
Wow! Wow! Wow!
I made three of your dishes this weekend, all for the first time. Beef Fajitas, Mexican, rice, and refried beans. All three of your recipes are absolutely phenomenal. Each of these was the best I have ever had even at any restaurant. I’ve never made any one of these three before. I will be making them a lot. I give you all the credit because you’re teaching and recipes are what did the trick. I can’t give you enough compliments. Thank you thank you thank you! I can’t wait to start trying some of your other recipes.
Wow, thank you so much! So glad you enjoy the recipes!
Your recipe looks soo amazing !! Your video is the first video I have seen for Mexican rice that has used fresh ingredients and no bullion, and you actually rinsed the rice..Thank you for sharing!!!!
You are so welcome!
Yes, don’t tell my Mexican MIL but your rice recipe is much better!! Thank u!!
I’ve commented on this recipe before, but it bears commenting again.. Best Mexican rice recipe I have yet encountered, bar none. I’ve been cooking Mexican food for over 20 yrs. This rice recipe has supplanted what used to be my stand by’s. Tremendous bang for buck in its simplicity to flavor quotient.
I am happy I can help! 😊 thanks for the feedback
Just made this for me and my hubby, and it was freaking AMAZING!! We had it with a nice big steak, which i highly recommend 😻
Great to hear!
Made this for my coworkers one day and now they demand more LOL
I used this recipe two days ago to make a bed for chile colorado. It was so easy and the final product was absolutely delicious. Thanks for providing this.
Sounds great! Glad it was helpful 😊
I made this tonight for my family because I told them they don’t know what they’re missing with all the boxes rices. It’s all gone, lol, literally reminds me of my families home cooking growing up! Thank you so much for sharing!
This is very similar to how I make rice, but one difference is I like to season my rice with tamari as well as salt and I flavor the oil with a bay leaf or two before adding the rice. I’ve found the flavor of bay leaves is greatly enhanced by cooking them in oil.
Do you keep the Bay leafs in the whole time?
@@corkywilliams3716 I suggest leaving the bay leaf in when you are toasting the rice. I always remove them before adding the sauce
I’m not sure how I managed to stumble across this, but I’m so very glad I did. All I had on hand was long grain jasmine rice, but it worked very nicely. I skipped the pepper because I can’t handle the spice. Annato achiote isn’t something I have access to, but I did find a substitute online of 1 ½ Tbsp paprika, 1 Tbsp white vinegar, and ¾ tsp dried oregano. It made a nice paste which I definitely feel the rice would have missed had I been forced to skip it. I’m very much looking forward to making this again. The flavor was excellent, and it wasn’t over complicated to make
Hola! I made this for my fiance yesterday and she LOVED it! I used 3 cloves of garlic because of course I did. We love garlic! She said "this is some of the best Mexican rice I've had." Thank you SO much. Going to try your refried beans recipe soon, too. God bless.
Thank you so much! My husband who is Mexican and I just moved from the US to Chihuahua and I want to learn how to cook dishes from his culture. It looks yummy, can’t wait to try it out in the kitchen🌶
Love the enthusiasm, let us know how this dish turns out.
Beans, rice, and corn tortillas are enough to make a happy life.
Yes it is... especially here in New Mexico USA
I second that from Los Angeles California
Agreed
I would add cheese, limo, chile and some sort of meat to this list.
This is the ONLY time I’ve ever made arroz rojo and have it turn out perfectly!! I looked at the site, followed your notes on doubling and it TURNED OUT amazing 😻 Thank you SO much, been driving me crazy all my life. Don’t know why but it finally clicked 😂
Tonight we did this recipe with your refried beans for bean rice and cheese burritos and they were absolutely amazing! Thank you!
This is a fabulous recipe. My family loves your wonderful rice. Two of my children does not care for Spanish rice, but when I made your's, they ate it all up and asked for seconds.
Thank you for sharing.
I tried this for me and my son and it was amazing. Il be cooking this all of the time from now on. Thank you for inspiring me to cook alot more mexican cuisine.
Thank you for this wonderful comment.
OMG this is the best rice I have ever done! It turned out perfect!!! Thank you!!
My pleasure!!
@@VillaCocina gracias! Que rico!!
I made your rice yesterday as a side dish for fajitas AND it was fantastic! It looked just like yours, fluffy, the coloring, little specks throughout. Thanks so much. Oh, the flavor was excellent. This is amazingly easy to make. I'm thinking I'll make my fried rice in this manner, too. Thank you, thank you, thank you!
I have tried to cook Mexican Rice many times and this method is hands down the best! I Could not stop eating it! Thank you for making it simple!
Great to hear!
My God! This is my first time making Spanish rice outside of the Rice-a-Roni version and it is so good my son devoured the entire pan. Great recipe! Thank you!
Awesome!!! Love it
lol
My mother is German and made Spanish rice a lot while I was growing up. She made it the same way except instead of mixing the ingredients in a blender she diced green pepper and pimento pepper and added that to broth and tomato paste. I think the spices she added were about the same but I'm not sure.
I loved this dish and as a kid looked forward to it. I will definitely be trying your recipe! Thank you for sharing it.
Thank you for sharing your story 😊 let us know how the recipe turned out.
Oh my goodness! I just made this dish. The toasted rice and fresh ingredients made this a much more nuanced dish than I had thought it would be. Thought I didn't like Mexican rice, based on restaurant versions. This is lightyears of difference. Also, made it to go with the carnitas, refritos, and salsa roja. Together a wonderful layering of flavors. Thanks for the great recipes.
Sounds Fantastic!
I have to say she does a great job teaching. I live in South Tejas and I have never tasted better!
Authentic and delicious! I love this recipe I do most of the cooking at home and my wife thinks this rice is the beat she has ever had! Thank you! Happy Cooking!
Wonderful! Happy to help 😊
OMG can I just say how thankful I am for you sharing this recipe! You have such a rich history and wonderful food. I am thankful that you have chosen to share them with me!
Thank you so much! its a pleasure
Your recipe was presented in a easy to follow vlog...loved it and your music wasnt distracting. Cant wait to try you recipe. Thank you
I agree 100%. Right to the point, clear and easy to understand and wonderful recipes.
Perfect! This is my "go-to" Mexican rice recipe. It hits every time! Thank you!!
I just made this, to pair with my enchiladas and refried beans.
It is superb!!!
I just made this for my daughters birthday party taco bar and I never seen rice go so fast. Thank you for sharing with us. God Bless
I'm making this today along with your carne asada recipe. It looks amazing, and so similar to what I usually cook, but yours has ingredients that I hadn't tried before, like the achiote and serrano pepper. My stepdad was born in Silao, Guanajuato, so you know as aromatic as Mexican food is, I could just "smell" this recipe as I was watching the video lol
I like the blender aspect of preparing the spices/ingredients. I’ll try that next time. Thanks
This is a classic Mexican rice. I like to add a Chipotle pepper with a tsp of sause instead of a serano pepper. Good job.
You're the only one that makes this properly. I trust all of your recipes
Toasting the rice is some new to me! Thank you for this tutorial!
Me too on the toasting the rice....Googled a Mexican rice recipe and didnt believe it....thats how i found this video...... had to look it up on TH-cam to see for myself....glad i did she is awesome
Yup It's the same way for fideo
For years I tried to make red rice and it came out horrible. I followed your recipe and it came out great. My family loved it. Thank you for sharing!
Made this 3 times now thank you so much for teaching me how to do Mex rice right... Turn out 👍
I cooked this for my family last new year's eve and everyone loved it! Used beef broth instead because we didn't have chicken. Thank you for sharing!
It’s a pleasure! Happy you and your loved ones enjoyed it! 😊
I love Mexican rice! Thank you once again for yet another delicious recipe. I’ve been planning a Mexican feast, takes time gathering the ingredients as I live in the UK but I’m almost ready to try them. Can’t wait!🇬🇧
Your joy is contagious! Thanks for making us smile!
Thank you 🙏🏻 you are too sweet. I’m glad you enjoy the recipes
I stumbled upon your channel while looking for another Mexican recipe and decided to watch. I'm glad I did and I'll definitely have to try it. Thank you.
Yep same here, I tried it tonight and this was hands down the best Mexican rice I've ever had. My house smells so good tonight!
Thank you for using a blender that makes so much sense!
Thank you Rosanna. 😍 Just made this for the first time for dinner. Came out fabulous! I impressed myself. Lol 😋🤩
Awesome recipe and technique, I was amazed at how much the rice fluffed up in volume! Thx!
One of my favorite dishes! Looks so good.
Mines too!
I love Mexican rice it's delicious.
I’m Mexican and know how to make rice but I really enjoyed your video, voice and presentation. Thank you for sharing
I love the “happy dance”!!! Everything you cook looks good......even things I don’t eat I want to try now. Well done!!!!!!

I’m the Philippines. I love Spanish rice especially with Spanish sausage, chicken or pork chop! Thank you for this easy recipe!
I cooked this yesterday and it was AMAZING!! Thank you xxx
I was trying to fry rice with onion and butter, then realized I needed help. I couldn't have done this without you. So good!
This is a great recipe for those of us that grew too many tomatoes! I'm going to make it right now! 😁👍
I'm fasting and you made me hungry... I'm going to try it tonight for our dinner... thank you.
Thank you so much for these videos. I love how you get right into the cooking. You are an awesome teacher!
Thanks !!!!! Im glad you find the videos helpful.
I made this last Sunday to go with my chicken enchiladas. This is truly amazing. Fantastic. Thank you.
Making this now and my whole house smells amazing!
Mmm good I’m drooling 👍

I've made this, your carne asada, your salsas... love them all!
Used this recipe last night served up with my family favorite "Back Yard Bario Asada" and Mexican Macaroni salad. MmmmmSabor!!! The serrano pepper is the pièce de résistance for me. Been eating Spanish/Mexican rice since I was able to crawl and I have never been able to get the right amount of spice (I like it spicy) without over doing it for everyone else at the table. The split serranos hit the mark perfectly... Muy Caliente!!! Thanks for sharing!!! My new family favorite!!!🤘🤩🤘 Frito
I can tell just by looking at this rice that it's the best recipe I've seen for Mexican/Spanish rice.
Hope you can try it soon.
@@VillaCocina - I plan on trying it in the next week or two, thank you.
@@VillaCocina - Hello, I did try your rice and and I really liked how it turned out. I was missing the Annatto and the Serrano pepper, plus I don't think my wife toasted the rice enough. Aside from those problems, I thought it was excellent. I made some Enchiladas Suizas and the rice complimented the dish perfectly. I'll never buy any of the Mexican/Spanish boxed rices ever again (they taste like cardboard), the quality and taste is night and day.
TWO SUNNY SIDE UPS ON TOP AND TWO FILIPINO GARLIC PORK SAUSAGES AND A CUP OF SUMATRAN COFFEE. PERFECTO SENORITA!
I used to eat a rice like this mixed with hardboiled egg chunks and bananas when i was a little kid. Sounds crazy but if you have any leftovers...
Thank you for your simple basics, I made this for my family & I got "it's perfect". That's a really good compliment we live in Israel and Mexican is a foreign food here 😅
Love it! Cheers!
I'm mexican but from the central region of Mexico and we don't use the spices you mentioned but I'm excited to give it a try. Always be open to something new! Hopefully I can still put bananas on top (add a bit of salt to bananas and yum!)
Update: I didn't have annatto but it still came out great!
Thanks for coming back and letting me know how this went.
Bananas on top of rice? BANANAS? Or do you mean platain or maduros?
How do you make your rice? What spices?
@@VillaCocina What can we use instead of annatto (hard to find)? I've seen some people comment on using paprika. What do you think of this substitute?
Loved this!! I used chicken bullion cube because didn't have stock on hand today. Doubled the recipe because 1 cup rice is not enough, ma'am! My kids loved it.
Can't wait to make this! Hoping it tastes like my Abuela's. Thank you for sharing.
I made this last night along with her Carne Asada recipe and this rice was very good.
Excellent technique! Especially with the Serrano Chile in the middle.
Thanks Rosanna. From a bachelor who wanted Mama's arroz..I tried and looked at others but they weren't right. My SOPA de Fideo with chicken turned out perfect too. No more just sandwich steak and hamburgers.Gracias again
Very happy to help ☺️
This was really good. I never knew this rice was pan fried in oil.
Glad I could help ☺️
This is the best recipe I’ve seen for Mexican rice, great video.
You had me at "Hi, everyone!"
I made this rice last night and it is the BEST Mexican Red Rice I’ve ever tasted! Thank you !
First recipe I've come across that actually remembers to rinse the rice first. Skipping this step makes mush. How we get that nice fluffy texture we want in Spanish rice. Well done!
We made rice this wkend and was told not to wash it by a friend ( I’ve washed it in the past). I feel the rice didn’t cook well. I had to keep adding water. rice seemed mushy 🤦🏻♀️ Why?? Bcuz it wasn’t washed?
Just made this tonight for the family and it was amazing!! Thanks for the great recipe
Im the only one that eats it in my familiy and they think im weird cause i eat it so much and its so delicioso and today i made it for my family and they said this is amazing wow
Im so glad you were able to enjoy this recipe with your Family.
Hi, Im here in England, every time me and my family went to our favourite restaurant( The Bell/ Hungry horse) I always order Mexican Rice as side dish. They added Mexican beans, very smaller size of Kidney beans, and its very tasty!
Nice! Let me know if you give this recipe a go ☺️
Villa, I love your recipe and this is the one I really needed thank you I am a subscriber I have to make this so I can put a little pico de gallo in it thank you again

I made this rice today and it was delicious omg the family could of eaten the whole pot.

i love how concise this video is. no bs easy to follow and so great to play while doing the steps yourself
Thank you for your reply Senorita ( hope that's an appropriate salutation 🤗
I love the way you explain and narrate as you go. Such wonderful memories of real Mexican food. Thanks for sharing.
I substituted a habanero instead of the jalapeño. Best decision ever.
Rosanna thanks for taking time from your schedule to help us beginners your delicious recipes!
Today is the third time I made this recipe. It's fantastic! Thank for the great tutorial.
Your rice is wonderful. You have a great way of teaching and sending the love. That love has reached my family! I am inspired and will make more of your recipes for them.
I find your recipes interesting. Me, being a Spaniard, who grew up with many influences from American, Mexican and Indian with my grandparents and also a translation from Denver Colorado have a unique cuisine....dig your style and I think your recipe is spot on..
Thank you
Big thank you for this! Followed the steps almost exactly and it's PERFECT! Rice I can eat on its own it's so good.
