    If you want to take this great recipe to the another level of flavors, add chopped onions when the rice is toasting and sauté for a few minutes… chefs kiss

      That’s what I do! Once the onion begins toasting, I add a lil crushed garlic. As soon as the garlic begins turning brown, I add the blended sauce.

    I followed this recipe and my rice turned out mushy and still had some hard pieces of rice in it. What did I do wrong? And it came out a Lil bit too salty. 😞

    All I have to say is thank you for making all your videos easy to follow. I'm half latina and I was raised by my Caucasian mom who didn't cook mexican food. I can now gladly say you have taught me so many wonderful Mexican dishes that I have always wanted to know how to make. Thank you!

    I'm a trained Chef and have for a few years now been trying to find a Spanish rice I liked and this is the one, made it twice this week using fresh paste tomato, onion and serrano from my garden, added 1/4 tsp sugar the second time and used paprika instead of the annateo (did not have any) the first time and a smokey paprika the second time and boy is this better than any restaurant Spanish rice I've had, the wife felt the same, thanks...

    If there's a rice expert it's definitely my wife and she said this was hands down the best Mexican rice she's ever had. And I couldn't agree more as the rice overshadowed the main course! Incredible...

    When I was 13, I fell in love for the first time, she was Hispanic and Her family welcomed me with open arms. I cared about her deeply, but when I think back I loved feeling like I was part of her family even more. And her mom and grandma used to make all these Mexican dishes her dad used to fix us Carne Asada for us, her mom would make Fideo and Menudo. But her grandma would make this Mexican rice and tamales that were like earth shattering. And I swear to God this rice takes me right back to her kitchen. I can’t tell you how wonderful this recipe is, thank you for making me feel like a kid again.

      I had the experience of working for a Mexican family at their restaurant. I was a teenage white kid, but I worked for them for a number of years and I got to be friends with them. They invited me to their homes and parties and welcomed me like I was one of their own. Part of their culture was to always share and open their homes and never ask anything in return. Great people and great culture.

    This is very similar to how I make rice, but one difference is I like to season my rice with tamari as well as salt and I flavor the oil with a bay leaf or two before adding the rice. I’ve found the flavor of bay leaves is greatly enhanced by cooking them in oil.

      @@corkywilliams3716 I suggest leaving the bay leaf in when you are toasting the rice. I always remove them before adding the sauce

    Very important tip when pouring the tomato sauce in stir quickly cover with lid and turn stove top down to like 3 very light simmer for 20 mins and whatever u do dont take the lid off until the 20 minutes is up

    Yes! You are using olive oil. Don't use corn oil which causes heart disease. Corn oil or vegetable oil is the preferred oil of fast food joints which is causing everyone to have heart disease and diabetic. Only use olive oil, avocado oil, coconut oil or lard. Stay healthy with Mexican food. Great recipe.

    I'm making this today along with your carne asada recipe. It looks amazing, and so similar to what I usually cook, but yours has ingredients that I hadn't tried before, like the achiote and serrano pepper. My stepdad was born in Silao, Guanajuato, so you know as aromatic as Mexican food is, I could just "smell" this recipe as I was watching the video lol

    I’m not sure how I managed to stumble across this, but I’m so very glad I did. All I had on hand was long grain jasmine rice, but it worked very nicely. I skipped the pepper because I can’t handle the spice. Annato achiote isn’t something I have access to, but I did find a substitute online of 1 ½ Tbsp paprika, 1 Tbsp white vinegar, and ¾ tsp dried oregano. It made a nice paste which I definitely feel the rice would have missed had I been forced to skip it. I’m very much looking forward to making this again. The flavor was excellent, and it wasn’t over complicated to make

    Looks delicious. I use Calrose mediuii rice gluten-free. Same way ,you matke it rice,I put 2 table spoon of butter and the rice comes out soft. Cumi, garlic powder, tomato sauce. Pinch of salt. To your, taste.

    This is a classic Mexican rice. I like to add a Chipotle pepper with a tsp of sause instead of a serano pepper. Good job.

    I made three of your dishes this weekend, all for the first time. Beef Fajitas, Mexican, rice, and refried beans. All three of your recipes are absolutely phenomenal. Each of these was the best I have ever had even at any restaurant. I’ve never made any one of these three before. I will be making them a lot.     Oh my goodness! I just made this dish. The toasted rice and fresh ingredients made this a much more nuanced dish than I had thought it would be. Thought I didn't like Mexican rice, based on restaurant versions. This is lightyears of difference. Also, made it to go with the carnitas, refritos, and salsa roja. Together a wonderful layering of flavors. Thanks for the great recipes.

    This is THE rice from the Mexican restaurant.
    I cheated and used some caldo de tomate instead of straight tomato/paste, but this recipe is the best on TH-cam. Period. Stop looking elsewhere. Make this now. 🤣🙃😎

    I'm mexican but from the central region of Mexico and we don't use the spices you mentioned but I'm excited to give it a try. Always be open to something new! Hopefully I can still put bananas on top (add a bit of salt to bananas and yum!)
    Update: I didn't have annatto but it still came out great!

    Used this recipe last night served up with my family favorite "Back Yard Bario Asada" and Mexican Macaroni salad. MmmmmSabor!!! The serrano pepper is the pièce de résistance for me. Been eating Spanish/Mexican rice since I was able to crawl and I have never been able to get the right amount of spice (I like it spicy) without over doing it for everyone else at the table. The split serranos hit the mark perfectly... Muy Caliente!!! Thanks for sharing!!! My new family favorite!!!🤘🤩🤘 Frito

    So it looks like the Annatto is what gives the Mexican rice its color(Besides all of the damn tomato/paste lol) I always wondered why Mexican Rice was always a different color than rice from other parts of the world, which I have also tried.

    okay the way she just made her rice right now is exactly the way I've just made my rice the other day plus I made it for years my husband's Mexican we meant we were teenagers and I lived with the family for a while so I learned all of my authentic Mexican meals from my mother-in-law as a matter of fact that's all I know how to make I don't even really make white American dishes but I just started dabbling into that but since my husband's a diabetic I had to change things up

    There was a spice you added with the cumin that I have never heard of. I wonder how difficult it will be find it.

      Achiote (annatto)- If there is a local Mexican store near you I would start there.

    Mexican rice in restaurants is usually dry.....this looks more wet sticky like jambalaya

    First recipe I've come across that actually remembers to rinse the rice first. Skipping this step makes mush. How we get that nice fluffy texture we want in Spanish rice. Well done!

      We made rice this wkend and was told not to wash it by a friend ( I’ve washed it in the past). I feel the rice didn’t cook well. I had to keep adding water. rice seemed mushy 🤦🏻‍♀️ Why?? Bcuz it wasn’t washed?

    Just made this LOVED it. Love the smell, the flavor and I stole some of that 'juice' to make a gravy just to avoid ruining it with something else. 🙈 Just decided I'm doing this every week if not two times a week. Living in south africa, so not getting much Mexican dishes, so this definitely the flavor I hoped for. 😍 Thank you so much for making it so easy. 😎

    This is a fabulous recipe. My family loves your wonderful rice. Two of my children does not care for Spanish rice, but when I made your's, they ate it all up and asked for seconds.

    I’ve commented on this recipe before, but it bears commenting again.. Best Mexican rice recipe I have yet encountered, bar none. I’ve been cooking Mexican food for over 20 yrs. This rice recipe has supplanted what used to be my stand by’s. Tremendous bang for buck in its simplicity to flavor quotient.

    I also have not had in SOOO LONG CHILI RELLENO like Vellarta Grocery in CANOGA PARK..... the Mexican food deli, the decorations & tables made U feel U were on VACATION could sit eat peacefully feeling nurtured. CALM.....
    I ❤ their fried green peppers & onions.
    The green peppers were perfect not to HOT but a SWEET HOT........

    I like Mexican rice but is not the best. Is plain rice. The best one is PUERTO RICAN RICE ARROZ CON GANDULES AND NEXT SHRIMP FRIED RICE CHINESSE.

    Today I felt like looking up Mexican rice recipes for ideas. Yours was the 18th one I came across and the first that didn’t make tomato rice. As in tomato paste, bouillon, onion and rice. I like the idea of using achiote; I will have to try that in my rice… after I try your recipe. I usually throw some dried New Mexico chiles in the blender but have been experimenting with other chilies. Happy cooking!
