    Refried beans are a staple when it comes to Mexican cuisine. Their creamy texture and layers of flavor makes them the perfect side for an entree. You can top them with crumbled queso fresco. While are at it, fry a couple more Serranos and chiles de arbol, the perfect touch of color.

      I was born and raised in Detroit and I prefer beans, vegetables, fruits, peppers, and spices from Mexico 🇲🇽
      I live in Texas now and SuperMercado, El Rancho,
      La Michoacana are the best!

      I'm pretty sure most of our store-bought beans come from processes that have advanced a bit through technology, but even if the exact methods have changed radically, the reason for the dirt is still essentially the same.

    Pretty amazing how people growing up eating refried beans out of a can have no idea how easy it is to make from scratch. And unless you burn them or over salt them, they are ALWAYS so much better than the canned. I add a big spoonful of chicken bouillon, oregano and cumin to mine, otherwise I pretty much make them just like Rossana does here. Biting into an arbol that didn't get picked out is always a real surprise, but I love it!

      No doubt making it from scratch is always better, but it's only one component of a dish and people are busy. You'll never convince me to bake my own bread because I wouldn't have time to make the main meal.

      @@paulkang6842 depending on the bread, that can take SOO LONG! But imo bread maker bread is bomb. A loaf can't last more than two days in my home.

      Grew up on homemade beans. Sometimes beans boiled in clay pot (next flavor level). I always know if beans are from a can because they have metal, tinny flavor.

    Wow! Wow! Wow!
    I made three of your dishes this weekend, all for the first time. Beef Fajitas, Mexican, rice, and refried beans. All three of your recipes are absolutely phenomenal. Each of these was the best I have ever had even at any restaurant. I’ve never made any one of these three before. I will be making them a lot. I give you all the credit because you’re teaching and recipes are what did the trick. I can’t give you enough compliments. Thank you thank you thank you!     I remember the first time I had authentic refried beans when I was in a village near Ensenada. They are absolutely incredible.

    Your husband is correct. In fact, when I was a boy, growing up in southern Nuevo Mexico, it was my job to "sort" the beans before they were cooked for the family meal and in so doing, I regularly encountered small sticks, rocks, etc. The beans were then washed and placed in a pot to soak for hours just before cooking. That was in the early 1970s, but today the production process from field to grocery store results in far fewer foreign objects in the finished product and less effort in achieving a delicious pot of frijoles! P.S. When 're-frying' the beans, use manteca -- it's much more delicious! ;)

    It’s amazing how many ways there are to cook refried beans. I remember my grandma adding cheese or milk. Sometimes bacon,
    Sometimes just bacon fat.
    Sometimes mashed with a masher,
    Sometimes with a blender. Lol
    Just depended on what we had at home and what our $$ would allow.

    I love these! I’m from Sweden, and though Mexican cuisine is new to me, every single taste of it I’ve had so far has been delicious! I didn’t have any beans at home, so I tried this recipe with red lentils and it still turned out delicious! I couldn’t get chiles Serranos specifically, so I used jalapeños instead, still turned out great! Made corn tortillas with this and shredded cheese for breakfast, easily one of the best breakfast I’ve ever had.

    From an ethnobotanical standpoint that discription of flailing the beans is spot on and fully correct! It may differ from culture to culture and plant species to plant species but in general that is the common way of doing this by hand and goes back to the neolithic period. Even my great grandmother watched them still do it with wheat here in austria by hand.

    I struggle to find Mexican ingredients here in the UK, like serrano, so have to order them or translate the recipe into things I can find.
    Going to try and grow a heap of my own chillis this year. Keep my tongue tingling all of next winter.

      If you see this, serranos are worth the struggle to find/grow! The flavor is unique and amazing, especially for guacamole. I dont like really spicy things, so I cut them SUPER small, and I don't use a lot (just enough for the flavor).

    Made this tonight and was absolutely AMAZING! First time making homemade refried beans, so I need to adjust a few things next time, but still turned out really good! I also added a bit of lime juice for a slight tang. Another recipe of yours that has been wonderful for me and my family ❤️

    I am definitely going to try this this looks awesome I have never done this and my boyfriend's Mexican from Mexico we just do the Crock-Pot beans but that's worth trying I'm definitely going tomorrow and getting all that stuff onion peppers I have the beans already all right take care

    Absolutely right about 'sorting beans'. I (in the usa) normally didn't bother with that for beans. Until....you get that one bag that has stones and messes up the entire dish. Now, I use a sheet pan and inspect all the beans. And I still often come up stones. It's life...it's kinda how things work.

      I like the addition of the fried chilies - I think you might apologize too much for having them there - I think more of us need to know how best to use and appreciate them- we like making refried beans especially black beans

    I learned so much from watching this. I developed a one-pot refritos recipe based on what you taught. I soak 1lb of frijoles pintos overnight in a deepish 11-inch fry pan. The next day I pour off the water and rinse the beans, then fill with filtered fresh water about 1.5 inches to cover. I bring to boil on med heat and add 1/3 large onion, 1 jalapeno, 1-2 Roma tomatoes, and some cilantro, all roughly chopped, and whole 3-5 chili de arbol. Then simmer on med low with lid slightly askew, as you show for 1-1/2-2 hours until beans are soft. I keep an eye on it and add more water as need. At the end of the cooking I let most of the water boil away. I retain all the bean broth this way. I remove the arbol chilies and season los frijoles with salt, 1-2 tsp onion power and 1 tsp grnd cumin. Then I add 2 Tbsp avocado oil and fry the beans as you showed. The onion, jalapeno, tomato and cilantro have all disintegrated and their flavors are infused in the beans. I mash the beans with a large, thick plastic cooking spoon. I just press down on the beans as I stir-fry them to the consistency I want - with chunks, like you show. Then I add in filtered fresh water until the beans are slightly runny, like you suggest. Then I turn off the heat, cover and let them sit for at least 20 min to let all the flavors meld. Then I enjoy them with with avocado and Trader Joe's truly hand made flour tortillas. It's so easy and flavorful, just one pot. It can be my meals for an entire day.

    Refried beans and tortillas, the quintessential go to meal. Lard and ham hocks would have added tons of more flavor profile. But your vegan method definitely rocks

      @@VillaCocina I missed some steps so mine was not as delicious as yours. It was my first time though. I forgot to save the broth. I dumped it and when I got to point where I needed it, I am like oh no 😁 I then replaced the broth with water. Also, I could have bailed the beans a little longer. I also didn't have those peppers that you used. I nevertheless enjoyed it. It tasted very good to mee 😁😁 thanks for the leçon ❤️

    Americas Test Kitchen showed me to soak beans in 2 tablespoons of salt. You must stir salt til it disappears. I soaked black beans for 48 hours (in same salt water) and beans plumped up beautifully, and cooked fast. Tasted. So good.
