Finally, a recipe where I have all the spices. I have bought so, so many spices, but every time I watch a vegan TH-cam video, I never have the spices I need! They use stuff that I’ve never heard of and can’t find. This was very simple, and I’ll be making it in the future.

My mother, grandmother and auntie could make the most delicious meals out of simple ingredients and thankfully they taught me. I strayed from that more often than I'd like to admit but this type of cooking is restoring me to health.

Rice and Beans, we Mexicans are used to eating this every day. I start by frying the rice first and then adding the other ingredients; that's the way my family cooks it in Sonora, Mexico. Delish!!
I cooked this for my mum, dad and sister and everybody was satisfied (including me). I couldn’t get my hands on any peppers so i swapped them with carrots which worked just as well :) thank you for creating such a delicious dish
I think even kids today have tried it . Meat costs are up and post covid we are struggling. This fills you up feeds many and tastes amazing . I add to tortillas and fry with cheese .
So good... I added a package of Taco seasoning instead of the cumin and paprika separately. Also garnished with a dollop of sour cream and sliced avocado.
I tried this recipe today without not much expectation and it came as a delicious surprise. My husband and I both agreed it’s going on our favorite food staple now. Packed with veggies and so much goodness. Thanks for sharing:)

I made this tonight but swapped rice for quinoa and corn for baby corn I had. It was honestly so delicious! I love that you can add more stock if you want more liquid (like a stew). I'll definitely be using this as a stable food from now on. Thank you ❤️
You can add literally anything to it . Shredded chicken and a salad if you want or tacos . Tortillas and cheese fried . Even as a side dish when making burgers
This is super tasty, easy, and cheap. I accidentally added 2 cans of beans. I did one pinto and one black bean. I used a whole can of diced tomatoes and a little extra broth. It was perfect and now it will stretch a little further. Thank you so much!
I am making this right now. I made from what I had on hand, so I made some substitutions. Used canned, drained, rinsed black-eyed peas, frozen mixed vegetables with corn & Mahatma packaged yellow rice. I used your vegetables & spices. It's cooking & smelling good so far! Thanks!

Just made it for the first time. Due to a family member being a "picky" eater I had to change the beans from Black to Kidney beans. Everything else remained as per the recipe. The family gave it a big Thumbs Up, even my 17 yr old grandson loved it, asked for the recipe and will make it himself.

Hi, I just made this recipe and it is really good. I used brown basmati rice (soaked for 4 hours) and cooked it a bit longer and increased strained tomatoes to 1 cup. Added a chopped jalepeno. Flavor is great. Quick and easy recipe! Thanks!

We made this tonight with the only deviation being jasmine rice vs basmati (we have several pounds of jasmine). It did require more broth but we just paid attention. Very tasty and filling and will be a staple. Thank you!

Absolutely delicious! Makes a lot for some easy make-and-jar-and-freeze for later, too! I changed it a little bit: I used fresh tomatoes given to me from my parents' garden, and also cut fresh ears of corn. I chopped up the tomatoes and put them in about 3 minutes after sauteeing the onions (letting them clarify a bit). From there I just kept sauteeing them until most of the liquid had evaporated and became more a thick oniony-tomato blop. THEN added the bell peppers and continued the recipe as shown. Rather than lemon, squeezed out one whole lime, which also worked perfectly :)

I just made this and it is delicious. I didn't have any cayenne, so I omitted that, and added some mushrooms I did have. I did find that the rice took longer to cook than 15 minutes, - I added about 10-15 minutes to that and it's still not soft I used the juice of a whole lime, as I love lime. I'm sure it will taste even better tomorrow. Yum, thank you.

Had it for dinner this week, it was very very good! My family loved it. Had it with guacamole, some nachos and a little cheddar on top. Totally satisfying, absolutely no meat necessary.

I made this for dinner tonight, and it was absolutely delicious! I added a little homemade epis, I didn’t have red bell pepper, so I just use extra green and instead of lemon juice I use lime. This recipe is definitely a keeper!
This is a simple, healthy and delicious meal. I followed your recipe, except that I decided to cook the rice separately and then miix in at the end. I've found that rice cooked with all the other ingredients (especially the beans) tends to get a little pasty. I cooked the main ingredients (sans rice) on low for about 8-10 minutes. Then I cook the rice in a heavy sauce pan with a tight seal lid for 15 minutes on low and never remove the lid, and then 5-10 off heat with lid still on. Then fluff up and add to the main ingredients (use a Dutch oven). I added a little more liquid as well.

It is delicious. A low budget meal for many times. With corn tortillas and Mango , it was a feast for me. I froze have of it in 4 portions and when I want some, I pop it in the microwave and have a quick meal. 💖

@@Cuentainutilizada2 I put it in a containers with tight fitting lids. I happen to have class bowls that have the lids. Plastic containers will to. I filled them 3/4 full just the amount I want for one meal and put it in the freezer compartment. One recipe gives me about 5 meals in total. I am sure ziplock bags will work as well. When I want a bowl, I take it out of the freezer, open the lid and heat it in the microwave. 😋

This looks delicious!!! Can't wait to try it! However, I'm gonna substitute hulled barley for the rice and corn. Started using hulled barley as a way to watch blood sugar, but came to like the sturdy texture. Rice and corn have glycemic index about twice that of barley, whether hulled or pearled. If you're unfamiliar, heads up: takes longer to cook. Can be pre-soaked and/or partially pre-cooked.
Basmati rice after having been washed out of starch, combined with lots of beans, veggies and lemon when eaten in moderation (probably difficult to eat in large quantities anyway due to filling ingredients and good oil) can’t be that bad. So go ahead people, enjoy it. Unless you are severely diabetic.
That's a great idea! I use hulled barley in my morning porridge but I'd like incorporate it into evening meals. I made it with brown basmati and minimal corn this time but I'll do it your way next.
@@dianeladico1769 Glad you like the idea. Lately, I've been putting overcooked barley (want it very tender for this) in a blender with some water to make mush. Then, I add enough masa (Maseca favorite brand) until the texture is just right, then proceed to make "corn" tortillas the usual way. They taste perfectly fine &, in spite of my high blood sugar, allow me to enjoy a few tortillas!

Been eating beans and rice on the regular was looking for affordable ways to spice it up plus recipes to inspire more of a plant base a meals that's amazing by itself with out meat or meat substitutes and this is that.

I am particularly fond of your One Pot recipes since we do not have a dishwasher and One Pot recipes means fewer dishes as well as a satisfying meal all in one pot! I made this the other night step for step ingredient for ingredient and it is very delicious! I really like how this channel list everything from ingredients to measurements. I can't wait to check out more videos on this channel.
I would like to suggest a way that i follow to rinse rice for a lesser water waste. Instead of using a colander and rinsing in running water, roughly for a cup take a cup and a half or two. Rinse and repeat. I rinse three times for indian sona masoori rice and five times for Basmati as it is starchiest of all. So many find it too much but after those many rinses only my water is somewhat clear to my liking.

Thank you for the delicious 😋 recipe. I had a 1 cup can of tomato sauce and used it all, I didn’t want to save it/waste it. Then I put 1 cup of broth. I should have cut that to 3/4 cup. My rice is too sticky, but overall recipe is tasty.

Factor in the passata, the liquid from the frozen corn ad residual liquid from the onions etc this should work fine

I just made this and it is delicious. I didn't have any cayenne, so I omitted that, and added some mushrooms I did have. I did find that the rice took longer to cook than 15 minutes, - I added about 10-15 minutes to that and it's still not soft I used the juice of a whole lime, as I love lime. I'm sure it will taste even better tomorrow. Yum, thank you.
I just discovered this channel and where have you been all my life?! The recipes are simple and the presentation is so relaxing. And you're from Canada so I recognize all the brands! This is where I'm getting a lot of my ideas lately! Eating plant based doesn't have to be boring!
Had it for dinner this week, it was very very good! My family loved it. Had it with guacamole, some nachos and a little cheddar on top. Totally satisfying, absolutely no meat necessary.

I made this for dinner tonight, and it was absolutely delicious! I added a little homemade epis, I didn’t have red bell pepper, so I just use extra green and instead of lemon juice I use lime. This recipe is definitely a keeper!

100g rice
260g can black beans
3 tbsp olive oil
100g onion
1 Bell Pepper (red or green)
1 tbsp garlic (around 4 cloves)
90ml tomato puree
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp cayenne pepper
65g corn
125 to 165ml vegetable broth
50g green onion
15 cilantro
1 tsp lime juice
black pepper to taste
drizzle of olive oil

This is a simple, healthy and delicious meal. I followed your recipe, except that I decided to cook the rice separately and then miix in at the end. I've found that rice cooked with all the other ingredients (especially the beans) tends to get a little pasty. I cooked the main ingredients (sans rice) on low for about 8-10 minutes. Then I cook the rice in a heavy sauce pan with a tight seal lid for 15 minutes on low and never remove the lid, and then 5-10 off heat with lid still on. Then fluff up and add to the main ingredients (use a Dutch oven). I added a little more liquid as well.

I think I want to make this recipe tonight, I may substitute the rice for jasmine and the lemon for lime BUT it looks delicious and is right up my alley as far as meals go😋
Sounds good! For jasmine rice adjust the water quantity and cooking time accordingly.
It is delicious. A low budget meal for many times. With corn tortillas and Mango , it was a feast for me. I froze have of it in 4 portions and when I want some, I pop it in the microwave and have a quick meal. 💖

Hi! Can you tell me how you freezed it? I am thinking about using this recipe for meal prep but am reticent about the rice, do you mean you stored it in the fridge?
@@Cuentainutilizada2 I put it in a containers with tight fitting lids. I happen to have class bowls that have the lids. Plastic containers will to. I filled them 3/4 full just the amount I want for one meal and put it in the freezer compartment. One recipe gives me about 5 meals in total. I am sure ziplock bags will work as well. When I want a bowl, I take it out of the freezer, open the lid and heat it in the microwave. 😋

This looks delicious!!! Can't wait to try it! However, I'm gonna substitute hulled barley for the rice and corn. Started using hulled barley as a way to watch blood sugar, but came to like the sturdy texture. Rice and corn have glycemic index about twice that of barley, whether hulled or pearled. If you're unfamiliar, heads up: takes longer to cook. Can be pre-soaked and/or partially pre-cooked.
Basmati rice after having been washed out of starch, combined with lots of beans, veggies and lemon when eaten in moderation (probably difficult to eat in large quantities anyway due to filling ingredients and good oil) can’t be that bad. So go ahead people, enjoy it. Unless you are severely diabetic.
That's a great idea! I use hulled barley in my morning porridge but I'd like incorporate it into evening meals. I made it with brown basmati and minimal corn this time but I'll do it your way next.
@@dianeladico1769 Glad you like the idea. Lately, I've been putting overcooked barley (want it very tender for this) in a blender with some water to make mush. Then, I add enough masa (Maseca favorite brand) until the texture is just right, then proceed to make "corn" tortillas the usual way. They taste perfectly fine &, in spite of my high blood sugar, allow me to enjoy a few tortillas!
@@libbyholt3863 You have the best ideas. I have some Maseca masa I couldn't use due to the BG spike. I will try this. I also make chickpea ones that I can add the masa to for the corn flavor for Southwestern dishes instead of the usual Southeast Asian. Thanks again.
Been eating beans and rice on the regular was looking for affordable ways to spice it up plus recipes to inspire more of a plant base a meals that's amazing by itself with out meat or meat substitutes and this is that.

I made this the other night step for step ingredient for ingredient and it is very delicious! I really like how this channel list everything from ingredients to measurements. I can't wait to check out more videos on this channel.
I would like to suggest a way that i follow to rinse rice for a lesser water waste. Instead of using a colander and rinsing in running water, roughly for a cup take a cup and a half or two. Rinse and repeat. I rinse three times for indian sona masoori rice and five times for Basmati as it is starchiest of all. So many find it too much but after those many rinses only my water is somewhat clear to my liking.
I make a very similar casserole type dish that you bake. I’m excited to try your version as it looks quite tasty and takes less time.

Thank you for the delicious 😋 recipe. I had a 1 cup can of tomato sauce and used it all, I didn’t want to save it/waste it. Then I put 1 cup of broth. I should have cut that to 3/4 cup. My rice is too sticky, but overall recipe is tasty.
