This is a good recipe. If you don't have achiote, use paprika. I also reduced the quantity of chicken broth to 3 C for a slightly firmer rice, to avoid clagginess.
It looks delicious. What about using a single jalapeno in the blender for a little heat and flavor? I did not know Staub made pans with glass lids like that, that is pretty sweet. I have a Staub Sapphire Blue 7 Qt Cocotte (Dutch Oven) and I love it.

An option is to put the coriander and cumin powder into the toasting rice with the diced onion instead of putting them in the tomato sauce. It changes the flavor of the cumin and coriander making them more complex and a little stronger.
I made this last night with several modifications, mostly due to which ingredients I had on-hand. I used half a green bell pepper instead of a red one, and two large jalapenos instead of one serrano since that was what I had. Instead of fresh garlic, I used pre-minced garlic in a jar. For chicken broth/stock I used Knorr chicken bouillon powder dissolved in warm water. Since I didn't have any achiote (annato), I substituted Goya Sazon "con azafran" (with Saffron) seasoning. I kept the cumin, coriander and other measurements the same though. It did have an unusual flavor that I wasn't able to identify, possibly due to the extra coriander and cumin in the sazon or the addition of the turmeric and Mexican saffron which are also included in the sazon seasoning, although I only used one packet of sazon. This made A LOT of Mexican rice! I didn't notice until after I realized I had a full pan of rice that this recipe makes 12 servings. I'll be enjoying this rice for a week.
😅 Had I gotten here earlier I would have reminded you to freeze meals in separate containers since cooked food can only stay good for consumption within 4 days MAX. Any longer and bacteria will start to overgrow and ruin any quality of flavor you had besides adding their own 😷. It looked like you wanted to make it so bad your mind got occupied juggling substitutes otherwise you would have noticed it was two cups unooked rice ✌🏻😬😬. I feel like you will gag now by the mention of rice and won’t be making this recipe until you had kids. 😂

I made this and it was good but it did not taste great. I definitely did something wrong. The recipe is great I did not add enough spices. I added salt but did not want to run the risk of over salting. I will def try again. ❤

FYI that Staub pan inside is coated with black ceramic so you don’t have to worry about scratching it. It’s just like the white enamel coated in Le Cruiset pans.

it reminds me so much of other cultures mixed rice. i make ghanaian jollof and the cooking style is quite similar.

You are correct! I’m Indian and we always cook our seasonings in a little oil to develop the flavor.
