      Looks delicious! For the dark parts of the Leeks I save mine in a ziplock in the freezer and add to the pot when making stock/broth!

      What a beautiful piece of impressionist art! I live in goat cheese and asparagus country, so I'll be sure to try this one.
      I'm too frugal to throw away all the lovely green tops! Discard the tired bits and use them in a soup, they simmer tender in no time. Leek/potato or chicken/rice are my favorites.

      Oh this looks so healthy and delicious! I wonder if this could be made in muffin cups, baked, and frozen separately to grab and go for work? I wouldn't add the cheese of course. Can't wait to try. 🙂

    Don’t forget to save the tops of the leeks for stock. I wash them then put them in the freezer until I need them.
    I’m new to your channel and love it. Next week we are tackling the WHOLE 30. I’m a little worried but your ideas have helped. 😁

    I’ve made this twice now for dinner because we love it! ❤️ First time I made it I didn’t have frozen peas - substituted frozen chopped broccoli and it was delicious! Thank you for this recipe - it’s definitely a keeper and so easy to make.

    Excellent tips, thank you! I use a saucer to tap my eggs on because the shells can be so soft they crack at the slightest tap (it also makes it easier to slide them into a frypan without breaking the yolks). If you bend asparagus it will snap the woody end off at the right place too.

    I like to saute leak longer than 15 minutes. Otherwise it makes me gassy 🙃. I love leak for stews and I often make my version of Vichissoise changing butter for olive oil, potato por carrots and leaving out cream. Healthy and delicious when adding black pepper, nutmeg and a teaspoon of soy sauce.

    I was thinking about frittata ingredients this morning, made a quick 'pan frittata' with one of my faves, mushrooms :-) I love asparagus & goat cheese, and have not cooked with leeks in ages, must remedy that! I have a ton of Feta in the house just now, so may switch that for the goat cheese, but honestly this recipe sounds perfect as is.

    OMG... I made it today and just finish eating the frittata from this recipe and can I say delicious to the 2nd degree!? It was so so good. I did leave out the peas because I didn’t have any, used/substituted French feta cheese (it’s what I had on hand) instead of goat cheese, added some bacon bits to a 1/4 of the pan (husband likes meat with breakfast) and also added cayenne to the egg mix (we like spice). So yummy! Thank you for the recipe. Thinking of adding sauté mushrooms and/or roasted cherry tomatoes next time. I think the yogurt was key?.... not sure, but something made this so good.

    Gave me some new ideas of what to put in my frittata, usually I do pepper, mushroom kale and spinach and use cheddar cheese but I will try with asparagus and goat cheese.

    Frittata is my big nemesis in the kitchen, I always end up burning it or undercooked 😐 mum makes it just on the pan, always perfect.
    When I find a pot that also goes in the oven I'll deginately try this method too 😀

    I am always trying to reduce the “caloric” content. My regular omelettes are 1 full egg and 4 egg whites. Would this still work if I substituted some of the eggs for just whites? What ratio of egg to white would you suggest? Would I need to alter the amount of yogurt? Thank you! I am so enjoying your videos and website!!! I feel as though I found my “zen” again after a couple of years. I am so grateful for your gentle reminders to get back to my happy place. 💕
