    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.     I like pad ped because it's so versatile. Today I made it with bamboo shoots, baby corns, and cherry tomatoes.
    I know that red curry paste already contains lemongrass, but I like to add more regardless (add it at the beginning just before the red curry paste, very thinly sliced).

    Made a variation tonight based on what I had on hand. Julienned half carrot, 1 sliced celery, half sliced red bell pepper, 2 chicken breasts, Holy basil.... The spices were excellent. So happy to find your channel!

    PailinsKitchen made it for supper tonight with coconut milk, red bell pepper, snow peas, broccoli, ginger and garlic! We used Maesri red curry paste, and that had much more of a kick then I thought I would! I love me some spicy foods but I'm not used to store bought products surprising with how spicy they are.

    I made this today it's great. Didn't have any of those vegtables, but I used brocoli, 2 different chillies red and orange from out garden and tomatoes from our garden.

    I once had those foods while I was there in Bangkok, they are my #1, favourites than any other even I spent more than a decade in Tokyo and am now in Calgary, AB. but nothing changed my appetite and am ready to have those everyday for ever!

    I love this dish and make it regularly. I am so fortunate that I live literally one building over from the biggest Asian market in the city (making it likely the largest in the country!), so I can pop over any time and get fresh green peppercorns, finger root, thai eggplants, basil, etc, flown in from Thailand twice weekly.

    Hello Pailin. Today was the day. My first Chicken Red Curry Stir-Fry Recipe. Wow, how good does that taste. A little bit of free-style improvisation was required. Turkey instead of chicken. Sugar snap peas - young peas, fingerroot - normal ginger, lime leaves - lime pulp, young peppercorns pounded into a paste in a mortar (flavor ❣️), add. young carrots, all julienne.
    The whole thing is very tasty. A whole new sense of asiatic taste. Thank you Pailin

    Wow wow wow was this dish amazing! It was the first thing I cooked in the wok I got for Christmas! I used snow pees and snap pees, garlic, onion, bok choi, and tomatoes. I also added some additional Thai chilies beyond the red curry paste, and I will probably add more in the future. I used chicken stock but even so it tasted so good! I'd like to try it again with more spice and coconut milk!

    Question: can the peppercorns and fingerroot be found at my local asian market?
    And if so, whereabouts in the store are these located?
    If fresh, is there any presoaking needed for these before putting them into the recipe?

    Could you make a thai eggplant stir fry? I had that a thai restaurant and it was to die for. I'm not sure its traditional, I'm half Vietnamese so I wouldn't know, but if you could make something like it that would be great.

    Aloha Pai, What a delicious looking recipre! I have both Thai Basil, and Kaffir lime growing in my garden. I also have a jar of green peppercorns, I even have 6 coconut trees in my backyard so fresh coconut milk close at hand. I have everything but the finger-root, maybe I can find it in Honolulu Chinatown. Thank you VERY much.

    I recommend KARA NATURAL COCONUT CREAM. I also got some great canned coconut milk from the Asian market but was mega impressed with the KARA Brand that came in a box. It made a good difference to the canned c-milk I have been using. mmmmmmnmmmm~!

    hi pailin - without coconutmilk and a bit more water it's more or less a gaeng pa... can you make once a gaeng pa (jungle curry) video? i'm sure you have some special tricks ;-)

      You don't keep thai basil in the fridge, you keep it in a pot and water it about once a week.

    How do you store soysauce or fishsauce the right way once open? In the fridge or is it ok to leave them out?

      Here in Thailand we keep them outside of the fridge. In the fridge is absolutely fine but make sure to cover them up tightly, they have very strong distinctive smell especially a fishsauce!

    sorry to be a pain but she doesnt state how long we are cooking the chicken for with the curry paste and coconut milk .. i am learning to cook and i am scared of over cooking or drying out the chicken ..
    im also assuming shes cooking the chicken with the paste on medium to low ?

      +andy lee The small piece of chicken is really easy to cook though with medium to low heat, with all the sause it's not going to dry out.

    Hi. I love your channel. Can I ask if the stove top burner you use is specifically for woks or is it a camping burner? I have halogen and its useless for wok cooking.

    PailinsKitchen I have some frozen finger root in my freezer that I bought spontaneously and was wondering if it can be used as the ones in brine in your video. Should it be shredded? Is there a difference in taste between frozen and pickled? Sorry for the lengthy question. :)
