    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the TH-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via TH-cam videos, her cookbook, and cooking classes.       @@randalllaue4042 Find yourself an Asian market, each bottle should cost you around $3-$6. Add some cabbage, carrots, bean sprouts and spam.

    Growing up with Thai food, it surprises me when people tell me that I must have eaten pad thai, green curry, or tom yum a lot. Yes, we had those occasionally but most of time, it's something stir-fried with this sort of sauce. Other recipes that Pai has shared that make up the Thai weeknight dinner table include: stir fry cabbage with fish sauce, omelette with pork and water spinich stir fry.
    Pai, you should make a playlist that includes these sort "everyday Thai foods that Thai people eat." :)

      Stir fried cabbage in oyster/soy sauce with pork and king prawns. That’s also a common dish in my house growing up too, at least once or twice almost every week.

    Oyster sauce + fish sauce + sugar (+sometimes dark soy) = the best combo! Something about seafood based sauces are just umami overload.

      Yeah, I always combine soy, oyster (either Maekrua or Lee Kum Kee), fish and hot sauce with a little bit of roasted sesame oil...

      I prefer to use "Tabasco Habanero" (I do not know if it's available in your country). It's not just hot, it's also very fruity and flavorful.

    I found this sauce and I'm never going to let it go!!! I had some leftover "cauliflower rice" from a recipe that came out pretty boring. I used this universal sauce recipe to make it into "stir fried cauliflower rice" and it was perfect!!! Thank you, thank you Pai!🤗🙌🏾😋

    Baby corns benefit from browning, too. I tried searing them before I added them into my curry the other night, inspired by a ramen place that serves their noodles with grilled baby corns. That eliminated the raw veggie flavour and boosted the sweetness.

    After watching this video last nigh, I cooked the Mixed Vegetables with Egg Noodles using the sauce recommended here and added Vinegar and hot Chilly Sauce to it and also a teaspoonful of Chinese Salt ( Sodium Mono glutamate) Flavor enhancer. My wife loved it and remarked that she never tasted a Veg Stir Fry as delicious as this one.
    Next I will try it with King Prawn/Veg Stir Fry soon.

    Pai, your universal sauce reminds me of what my mom uses all the time to cook, marinate, etc in the kitchen. Mom always put oysters sauce, fish sauce, black pepper, salt, sugar and msg. Depending on the dish or stir fried noodles, she’ll use soy sauce and/or dark soy sauce.

    I use a little sugar and corn starch in my stir fry sauce. Minus the fish sauce. I might try that. My wife is Thai and she cooks. Love watching you and mark. I learn a lot. I do marinate my meat the night before in a sealed bag. Yummy

    I have learned so much from your videos, especially the one on rice noodles. Your recipes provide a lighter, lower calorie substitute for the carb heavy Italian meals I love so much. I can usually find enough vegetables, along with several pantry items (fish sauce, tamarind, Golden Mountain Sauce, oyster sauce) to assemble a decent stir-fry following your suggestions. Thank you.

    It's funny... I've been doing that universal sauce without realizing realizing it, for ages. I had a friend for lunch the other day.. and she said it was absolutely delicious. I found out later that her only exposure to Asian food has been Panda Express! Lol. I tried 3 different dishes there a few years ago and realized that every dish tasted the same (I think they buy 55 gallon drums of General Tso's Chicken Sauce)!

    It’s a great stir fry sauce. So easy to make and so good. Fried different vegetables with the sauce. Even used it for yam rice; 1.5 TBSP for 1 cup of rice. Thanks Pailin!

    I had started making a version of this but didn't think to make up a batch and save it.
    I'm enjoying your book but I think the most important thing I've learned is to not worry so much about having the exact ingredients and to use what I have on hand. I wish I'd learned to cook this type of food 50 years ago. Better late than never.

    Great video as always. I never considered making a large bottle and storing in the fridge. Maybe i am using too much, for two large portions of choi sum and chicken I pretty much use that exact amount in the whole dish (maybe bit less than 1/4 cup oyster). But then i would throw in maybe 1/4 cup of water near the end for a juicy/watery base. Just wanted to say big thanks, I have been watching for at least 5 years I have learnt so much from you. (ps just subscribed with newer acct)

    Yes YES! I love the Panda brand Oyster sauce and always the Golden Mountain soy sauce, except for sushi, its Kikkoman. I gotta try your sauce on venison / deer meat. For anyone that has never tried this type of Thai sauce on deer meat, you don't know what you are missing. I use Oyster sauce, fish sauce, raw egg, palm sugar as a marinade and cook it down with butter and canola oil, served with sticky rice, jeow bong and papaya salad. I'd love to see a recipe for your version of Jeow bong Pai. Thanks for this sauce recipe.

    My combo for every stir-fry stuff ever: garlic, oyster sauce, a little bit soy sauce or MSG (shocking) or both if large food portion, some ground pepper, and sesame oil.

      Oyster sauce usually has a good amount of MSG, so that’s a good way to get the MSG in 👍🏼
