I made this for dinner last night with a side salad and it was absolutely delicious. The spice/herb combination wasn't one I would have thought of myself but it was a truly wonderful mix. The sweetness of the fennel seeds and the earthiness of the cumin seeds along with the subtle floral note that the thyme brings really struck a lovely balance. The squeeze of lemon at the end and chopped cilantro added a ton of brightness, complimented by the heat lent by the ground paprika and red pepper flakes. I'll definitely be making this again and will be looking further into Kenyan cuisine from now on with this guy as my first professor.. Thanks Chef! Edit: I made this a second and then third time. I love this chicken/onion/potato preparation, i intend to keep it in my rotation and I hope you do too.
I found your video this afternoon but sadly had no cilantro or fennel seed. I added yellow sweet pepper and Pak choi to the potatoes and added chopped spring onions when serving. Great recipe and it was delicious

Hi @neisha, so the cumin and fennel combination worked together? I never thought of that combination. I put cumin in just about everything I cook. Another nice combination is fennel and coriander especially on fish.

I did it for mother’s day today in France. It took me a bit longer to heat. The meat is delicious. Next time I will separate meat from potatoes as I am more used to serve this way. Thank you for this very enjoyable dish with flavours I am not used to.

I love a one dish meal. That looks simple. I seldom have parsley on hand, but will get some I use chicken breasts a lot when they are on sale. I made a simple meal with a cauliflower and leftovers recently. It was simply delicious, but I don't always have leftovers that I can remember what I used!. I used grated cheese, milk and salt and pepper and little bits of cooked onion rings that I had brought home from a restaurant and just cut up. I put it in the oven for about 40 min.'

Hey Chef, I cooked this dish last night for dinner, I made it at lunch time, I kept the chicken and onion separate from the pan fried potatoes, I reheated the chicken and while the potatoes were frying up again in my wok, I mixed them together and served them with chopped coriander.
