    The ingredients for the recipe:
    2+ tbsp Red Curry Paste
    5 oz Chicken
    2 tbsp Fish sauce
    3-4 tsp Sugar
    1/4 cup Basil Leaves
    1/3 cup Bell Pepper (strips)
    3-4 Kaffir Lime Leaves
    1/2 cup Bamboo Shoots
    1/2 cup Water
    1 1/4 cup Coconut milk

    I used this recipe, but with a store-bought red curry paste, to make dinner last night. A friend of mine who has eaten many curries in Thailand thought it was pretty damn authentic (she actually said it was restaurant quality!) so that's a great vote for your recipe :)

    This recipe is amazing. Just made it and tasted SO SO good. We doubled the recipe easily (because who doesn't want leftovers) and it was delicious. Double it because you won't have any left. I promise.

    This is the best Thai curry I've ever made! The kaffir lime leaves give this dish that extra unique flavor that I've been looking for for so long. The only modifications I made were to reduce the sugar and fish sauce in half. Thank you so much!!

    Just to clarify for those who might be wondering: this is Thai basil, aka holy basil. Not the usual basil we have here in Europe that's often used in Italian cooking.

    We have a Lao restaurant here that makes kaeng phed. And that auntie makes it amazing and Omg when fresh sweet basil is available it takes it to a whole new level. I've turn this dish onto lots of people and their addicted to it as much as I am. I've also learned to cook it.

    YUM!! Just made this tonight using Mae Ploy red curry paste. So good, taste just as good if not better than our local Thai restaurant.....and it was so easy!! Making curry before I could never quite pin down what was missing....pretty sure it was the sugar and fish sauce. Mmmmm thank you!!!

    INGREDIENTS:
    4 Tbsp vegetable oil
    4 Tbsp red curry paste
    2 ½ cup coconut milk
    10 oz chicken
    1 cup chicken broth
    7 kaffir lime leaves
    7 tsp sugar
    4 Tbsp fish sauce
    1 cup carrots
    ⅔ cup bell pepper
    ½ cup basil leaves
    DIRECTIONS:
    Heat up vegetable oil in a saucepan over medium-low heat. Add the curry paste and cook, stirring for about 1 minute. Add half of coconut milk and stir together until well combined. Add in cooked chicken and chicken broth, reduce heat to low and let it simmer for 10 minutes.
    Add kaffir lime leaves, sugar, and fish sauce. Add the other half of coconut milk and stir together. Add in carrots and bell pepper and raise heat to bring to a boil. Add basil leaves and turn off heat. Stir everything together, then serve over rice.

    I used light coconut milk and substituted brown sugar, & olive oil to make a bit healthier, it
    came out amazing. Thank you, thank you, thank you for the recipe. Will definitely be making this again.
    I did not know the curry paste must've already have spices, I added chili sauce and it is fire!

    Pro tip for you at home cooks: add more paste for stronger/spicier curry. If you're not a huge fish sauce fan, add maybe 1-1/2 TBSP.

      Pretty sure it’s supposed to have a soupy consistency. It’s not a thick gravy like Indian curries.

    I've made this many times, the directions always say to cook the curry paste in coconut milk until the oil comes out. Now I know why I've never been able to get the oil to come out Haha. Khap khun krap

    I noticed with the curry paste that if you add too much you kill the

    I used some key lime juice (Floridian) in place of the kaffir lime leaves as they are harder to find than Jimmy Hoffa and it came out great.

    I just tried making red curry from a recipe I found online and it turned out terrible. I want to try again, and this recipe is very different from the one I used so hopefully I will have better results!
