Tried this dish a few days ago. Turned out to be so popular amongst my family that they wanted me to make it again today! But I changed it quite a bit to suit our taste buds. I added a little bit of onions and a halved green chilli with the garlic, and a pinch of turmeric as well to enhance the colour. I also added carrots with the brocolli, and some cream at the end to make it a bit richer. And it came out fantastic - all in less than 20 mins! Thanks for this great recipe! Next time I shall add a hint of lemon.
Laura - I just discovered you on You Tube and I have to say I'm hooked! Your recipes are just what my Mom cooked for me when I was a kid. My favorite part is when you take a taste at the end. this recipe reminds me so much of my grandma's recipe when I was a child. She used copious olive oil but no butter, but the idea is similar. Try it everyone! If it weren't for this dish, having been a picky child I might not have grown to love broccoli as much as I do today!

Just a quick note Parmigiano reggiano = Parmesan cheese and chicken stock = chicken broth. Just thought I'd say something because I saw a lot of questions about them in the comments. :)
But, it is NOT just any Parmesan and certainly NOT like that stuff in a cardboard box. In fact, it wasn't till I turned on to the Reggiano that I began eating Parmesan. What I actually hated, as it turned out, was the Romano mixed in with the Parmesan in those cardboard boxes. Shudder. Parmigiano Reggiano tastes very buttery with just the slightest hint of pineapple-nothing like the nasty stuff in the boxes. I have found one American brand that closely approximates the more expensive Reggiano under the name Bel Gioioso.

Simply being fresh Parmesan does not ensure that it is not nasty. Laura uses Reggiano exclusively because it is the best fresh Parmesan available. Reggiano is an import, only, and is expensive. It is worth the extra $$ if, like me, someone has had bad experiences with off-brands. I will say, however, that ONCE I purchased genuine, imported Reggiano that was as hideous as any nasty Parmesan I ever tasted and I have no explanation for that. It happened only once. Now, however, I am content to use the domestic BelGioioso (sorry I misspelled it in the earlier post) brand since discovering it because it is nearly identical to Reggiano at about half the price. But if one has the extra $$ and can afford the Reggiano import-why not? Be well.
Laura, we grew up eating this too in NYC, no body made it like grandparenrs, old sicilian family. This is one dish I loved, you dont even need garlic bread with it lol.

I like this dish but I use Orecchietti instead. I find that lemon is a nice addition also, along with some fresh tuna if you want some protein to go along with your pasta.
Kira G - No problem. I liked it so I figured others would also. It brightens up the dish a bit. I've tried it with pine nuts and raisins also. It wasn't bad but it isn't necessary. I made some Caponata a few weeks ago, added the pine nuts and raisins and felt like they got lost in the dish. Too many ingredients can bring a dish down.

I made this recipe adding bacon cut into cubes, and only using water from the pasta to thicken the sauce with.. no additional salt ofc, the bacon has plenty - it was absolutely lovely!!! Tastes great without bacon too of course :D I love your recipes Laura
Today I made it again but this time I used my left over cooked rice instead of pasta ! it was even more simpler since I didn't have to cook the pasta ! I put them into the pan and stirred well just like when I did it with pasta. the result was like cheesy, rich risotto. Absolutely love this recipe. quick tip: cover the broccoli florets with boiling water for a minute before stir :) they'll be soft very quickly !

Can't wait to try your pasta with cauliflower recipe!

Oh my gosh, I just made this. I used pecorino romano (that's what I had on hand) in place of the parmiggiano. This recipe is a keeper!!!!
