My English Gran came out to Canada in 1920 to marry my Scots grandfather. They met at a hospital in Nottonghamshire where he was recovering from wounds received at Ypres. She was not able to bring much but her Grannie's recipe for lemon curd was one of them. May have been older. The recipe used real loaf sugar although we made do with sugar cubes or granulated . I still have the double boiler she used over a century ago, it still has the big dent from where my great grandfather tried to sneak it off the window sill. The recipe makes a rich smooth buttery curd and still the nicest version. It can be canned. Thanks for bringing back the memories as I am the only one left now. You're so right - it takes us back to being a kid 😊 I'm an Aussie in my sixties and this is exactly how my mother taught me to make Lemon Butter (Lemon Curd). We only use two lemons but I might give your three lemons a go. I can recall my first attempt to make it on my own as a teenager - yes, the eggs cooked into lumpy bits 😆. My only gripe is that it always makes so little, but you're right it doesn't last long with the eggs so it's best to have only what you can use while it's fresh. My lovely late Mum used to make 2 naughty sweet treats - one was a light and crisp honeycomb and the other was LIME curd - both were SO delicious. Sadly, I was too young and stupid to realise the importance of passing recipes along and so I never asked her how she did it and what the ingredients were. Now it's too late! Supermarket lemon curd is nothing like the real thing. It's so easy to make at home, in fact it's one of the recipes I made with my children when they were quite small. It never lasted ten days because it was eaten in a couple of days it's so good!
I made curd this way in my job as a pastry chef,I used some yolks,and whole eggs.We used it as a filling for lemon tarts,and if someone ordered a lemon occasion cake.The one suggestion I have is to add a little bit of salt to the recipe,salt in desserts is as important as in savory dishes,and I see so few chefs using it.😊
I make it the old way with a Bain Marie. Not any more this is so Quick and looks just as delicious and is so much quicker. Thanks z Rik you’ve done it again.

I love homemade lemon curd or lemon cheese as my mum calls it ,I use the same ingredients as you Rik but I do mine over a pan of simmering water I find the continuous stirring very relaxing and the smell as it cooks is amazing , your way looks great I may try your method one time as I make it often , thank you 🍋Amanda xx

Long time ago a lady, Phyllis from Kent in UK showed me how to make lemon curd and lemon meringue pie. She used egg yolks in both recipes. Never forgot receipe or Phyllis. She was a tall, slim smiling person. Mother of 4 and kind. Not sure if she was Kentish maid or maiden of Kent. Thanks for memory. Carry on cooking.
