  • cant go wrong #fresh lemons. home made lemon spread, butter or curd. really cheap and easy to make so so yummy. makes 4 jars. recipe below
    6 eggs beaten
    2 cups sugar
    2 table sp grated lemon rind
    1 cup lemon juice
    120g butter chopped
    store in the fridge lasts approx 1 month

    Just made this. MOG! AWESOME! I used largest eggs and possibly the most awesome lemons. 4 jars of 250 ml. I am not a fan of sweet things but this recipe is fantastic. Remember to have bowl inside hot water all the way or it takes 10 min + 5 min until it starts to thicken.

    Blitz up your sugar and zest in the food processor ,makes the sugar better with the lemon oil from the zest...

    Lemon butter would be great to use on fish. Looks creamy and easy to make.

      i think it might be a little to sweet for fish but in saying that i will always try something once and i shall try that :) it is awsome to use in a lemon chicken recipe dont need a lot only a little but is very mourish. have a great night mate :)

      Question .. I try keep clear of sugar. Especially with daughter with special needs... I love this and buy it from someone who makes it... but I need to get off the sugar.... can I use coconut sugar?

      gday nat you sure can mate. it will come out a different color and have a slight caramel flavor to it but i have been told it is really nice. hope that helps xo

    hi just found an old cookbook of mums... and in it the recipe calls for just egg yolks not the whole egg.... any thoughts ? also a quick tip so there is not lemon rind .. quick process the rind and sugar to infuse the sugar with the lemon oils... and then this is a lot finer to add to mix :)

      there are so many different recipes and variations of this but yet i still believe it is the best one as it is the same as what i had as a kid....the lemon rind pretty much dissolves in the cooking process i have never noticed it in the spread after. have a lovely day Christina 😊💜

    It looks amazing, I have always wanted to make it, but what are simple things to make with it? I assume theings like lemon meringue and pancakes...but what else? Cheers

      its mainly eaten on toast. you can also put on top of cheesecakes, lemon tarts, lemon mousse, great fillings in cakes and biscuits . ill be making lemon lamingtons and a heap of lemon and lemon spread recipes over the next month too. have a great night Tande :)

      hmmm im not really sure you can always give it a go might start tasting to eggy but hey you never know. some of the best things that come out a kitchen is from those who try the unknown. good luck with it Dan let me know how you go if you add extra usually after its been in the fridge for a while it thickens just right....thanks for giving it a go mate it really is awesome every time my lemons are ready i litterlaly make dozens of jars. all the nieghbours just love it. have a great day 😊

      im really not sure why how long are you stirring it for does it coat the back of spoon. it should get thicker in the fridge after a few hours...xo

      3 eggs....1 cup sugar....1 table spoon lemon rinds....1/2 cup lemon juice....60g butter chopped.....no its not the same mate this is made as a spread where as meringue pie is a lot thicker. i have a lemon meringue pie that the filling is just awesome if that helps xo th-cam.com/video/Xt0qy1PkNJc/w-d-xo.html

      there are a lot of different recipes this one is how i do it. the spread is awesome in cakes as a filler. on pancakes. bread and butter pudding. toast fresh bread its mad on scones. when my next lot of lemons are ready i will do more recipes and ad them to the end of this one. have a lovely day dan.

      they cook . when you pour the lemon spread into the jars it is boiling hot. they are very cooked
