I remember making this for my mom as a mothers day breakfast, I knew she wanted something relatively healthy and this was what I came up with. She was amazed by its flavour and simplicity when I mentioned the ingredient involved. The trick is to take your time cooking the tomatoes so they really develop a rich flavour.

Yup. Italian from Sicily had a lot of interaction from Arabs North Africa. A lot of Italian food is actually from the middle east. Even Swedish meatballs just proven a couple years ago to originally Turkish Kebabs. One of the Kings of Sweden was educated in Istanbul under the Ottoman Empire. He missed the kebabs and Swedish meatballs came from that.
