Just made my first pan of Puttanesca last night similar to this one it was so good I can’t believe I haven’t made it sooner! It’s very complex and rich in flavor blows all other red sauce out the water it’s my new favorite!!
I put slivers of sundried tomatoes as well in my puttanesca to enhance the overall flavour 😂 and sometimes served with a fillet of panfried fish. A drizzle of evoo! Bang!!!
Probably my favourite pasta sauce. The anchovies give such a depth to the sauce. Is is truly delicious and traditionally made with no fresh ingredients, all from the cupboard. Use chilli flakes rather than fresh chilli. Skip the oregano, garlic and parsley. None of them are necessary and just confuse the flavours of the tomato, olives and capers. Definitely no cheese, never ever on puttanesca. Never ever cheese on a spicy pasta sauce like this one or arrabiata. Never, ever.

I think he was referring to the amaount of salt per 100g of Pasta. The portion he used is definitely more, can already see that. More like 200 - 220g of Pasta in total.
