- Today I'm sharing my family's secret ingredient to making incredibly tender Italian meatballs! They're better than any Italian meatball I've had and are the best addition to serve with your favorite pasta. I hope you enjoy this recipe as much as my family and I do!
SECRET INGREDIENT ITALIAN MEATBALL RECIPE:

INGREDIENTS
1 lb ground beef 85% lean is best
1 lb ground pork (or split 1/2 lb pork + 1/2 lb veal)
1 cup breadcrumbs
2 eggs
1 cup ricotta cheese
1 cup fresh parmesan
1 small onion or half of a large or medium onion
2 garlic cloves
2 teaspoons fresh parsley, finely chopped
2 teaspoons fresh basil, finely chopped
1 teaspoon fresh oregano, finely chopped
1/2 teaspoon (each) salt & black pepper
3-4 cups marinara

My family cooks the meatballs right in the sauce. No oven or frying in the pan. Put them straight in the pot of sauce and cook. All the flavor of the meatballs helps flavor the sauce. So good. I am going to try the ricotta cheese next time I make meatballs. And great job for being the first time. It's harder than you think talking to a camera

My Family did it EXACTLY the way your family did it! Always cooked them in the sauce...never baked or fried!
One of my most cherished friends mother was from Sicily. This is exactly how she taught me to cook meatballs, too! Always so delicious!

Finally!!! A meatball recipe that I actually like. I was in Tuscany several years ago and had the best meatballs of my life, I've tried over a dozen recipes by many different Italian TH-camrs but none have come close. This one is almost perfect. The texture is spot on. Love it. I'm definitely subscribing and can't wait to try some more of your recipes. ❤
I appreciate that a lot, Damian!! These are definitely the best I've had. A lot of Italians in Italy like to do milk with the breadcrumbs/soft bread for moisture, so that's an option instead of ricotta. But i think ricotta does the trick perfectly:) I'm glad you enjoyed them so much!

try chopping then sauteeing the onion if you don't want it to be noticable inside the meatballs, it works as well.
My mom occasionally did it that way so there wasn't raw onion in them - great tip!
I always do that along with green pepper for meatloaf.

Yes! Grating the onion for meatballs is so much better than diced or even minced. Makes them so much easier to shape without little cubes of onion.

Don't know how and why white took over decorating but, it is soo sterile, cold and unwelcoming.
@@marwar819 I made the decision to go all mostly white (my island is oak) because I didn't want to regret bold colors after 5-8 years. Neutral would be the safest decision, but I'm still trying to figure out how to warm up the space!

These are the ingredients I use also, except for oregano. I grate the onion & garlic so there's no chunks at all and I prefer to use bread instead of crumbs but I do still use crumbs at times and I like to mix all ingredients (except meat) together then mix into meat, I think it makes a difference. Nice video, thank you.

You know your stuff! The ricotta is the secret ingredient. It gives it that velvety flavor and the moisture that many meatballs lack. I like the blend of herbs as well. First time viewer and my mouth is watering over these meatballs. I think the ricotta cheese will be the game changer for me... and the grated onion. Made these today can’t wait to taste them! I grew up surrounded by Italian moms cooking and my dad’s cook offs with the musicians in his band. Even so I have trouble deciding ingredients some time these really appealed to me AND I have all that ricotta left for desserts. I love ricotta’s flavor.

I made these today for the family, and the girls brought there boyfriends.
OMG Lady they went down so well you would not believe it !!!.
My oldest daughters boyfriend waited until after the meal and said to her 'Your dad bought these didn't he'
The reason he asked her that is that whilst at Collage he worked in an Italian restaurant called Bianco's which had two genuine Italian chefs, and he said your meat ball recipe was better than there's 😮😮

Thank you for sharing your recipe. Good video, good explanations and demonstrations, very easy to follow. I make my meatballs almost identical to yours, but I have never put in the ricotta before, will give it a try next time for sure. I do like to use the three types of meat as well. Also, I tend not to use bread crumbs instead I finely ripped apart bread and soak it in milk. I think the ricotta would make up for that. I too prefer to bake my meatballs.
