    Sam, my son followed your recipe for carne asada . It was our all time favorite! He fixed it often, we never tired of it! My son passed away almost two years ago. He was our family grill master! I am going to give this receipe to my grand son a hopefully he will become our newest grill master. My son Nick followed you regularly and made full use of our grill. It never got too cold in Ohio for his grill!!!

    1 head of cilantro, chopped fine
    3 large cloves of garlic, minced
    1 Tbsp of cumin
    1 tsp of pepper
    1 tsp of salt
    1/2 cup of olive oil
    Handful of brown sugar
    1 lime, zest and juice
    2 Tbsp of soy sauce
    Marinade 1 to 4 hours

      Is brown sugar normal for this style of meat? I feel like I'm doing something very wrong adding sugar to meat.

      So what is a handful of brown sugar? I made this and something was off. I added a tablespoon of brown sugar. I don’t know yet..... I’m going to try again next week.

    Sam the cooking guy ..I wanted to share that I was in the hospital for 98 days I have been home since 9/1, I was in a coma for 30 days and when I woke up I couldn’t eat or drink for almost 8 weeks, I was being fed through my nose and iv and eventually a feeding tube. During that time all I watched was cooking shows and videos, it helped for some reason lol, that’s where I came across your channel. I just wanted to say thank you for your videos and personality. I love to cook and have made quite a few of your recipes. Keep up the great work, your videos helped me get through some tough times. They had the hospital locked down so no visitors. So thank you again for what you do it really helped me get through.
    If it wasn’t for God, my Wife , prayer and Sam the cooking guy videos, well I am here and thankful to be alive !!!!

    People that don’t know anything about food will criticize it, but I actually think it looks very good. People probably think is sweet but is just a little kick to balance all the flavors together. I’m from Monterrey Mexico and I can tell you that there’s thousands of carne asada recipes with different ingredients. Some people add vinegar, lemon juice, adobo, pineapple juice, beer, orange juice, jalapeños, cilantro, cumin, wine, chimichurri, black pepper, white pepper, bay leaves, oregano, mustard, brown sugar, garlic, cajun seasoning, olive oil, etc etc…

    Hello Sam, I am a 53 year old chef according to my family but I tell you that every time I make something that you show and teach us how easy it truly is to cook with flavor and love, she says “ That is the best thing you have made.” I have tried different spices before but sometimes have used too much of it and then ruins it for a while. I use your measurements to a tee most times and it never goes wrong from the tequila lime shrimp and grits I made for her birthday to the most recent Carne Asada, the best thing ever.     So finally did this exact marinade for my fam, got to say- amazing! Grew up making carne asada and this is the winner. No need to put beer, or a bunch of home sauces. Simple and amazing. The meat maintains its own flavor . This will now be my go to marinade for flank steak-

    I made this exactly but without the brown sugar and it tastes AMAZING. 10/10 it works so good the flap meat and the charring was insane. It tastes exactly the carne asada my mother used to cook for me in my childhood.

    Soy sauce goes with just about all steak marinades. If you don’t like soy just get braggs liquid aminos. It taste the same just a healthier version. Give it a shot

    I just watched this yesterday, it looked so good. So I went home but only had boneless chicken thighs and used the same recipe and put over the BBQ, it was the best chicken we ever had!

    Hello Sam. I made this recipe yesterday and it was phenomenal! First one of yours I tried. All of you should try it. Very important to marinate 4 plus hours. Use thermometer. Cook to 139 degrees then pull off and wrap in foil. Cut and freeze what you don't use. I make tacos all the time now, thanks to Sam!

    Catching up with this channel which I just found. Made this today and it is amazing!!!! So delicious and fresh tasting, which is very different than any steak I've ever had. Told a bowl of cut up pieces of the meat to my neighbors and they were blown away!!! Highly recommend.

    I made it and added Toreados chili peppers to the marinade! Served with cilantro lime rice and black beans. No words to describe how unbelievably delicious it was with layers of flavor!

    The marinade I use is garlic, beer (MGD) orange juice and spices. Refrigerate for four hours then grill.

    I made this the first time with flat iron steak because we could never find good skirt or Flank steak. Tonight, I used beef tenderloin and it was SUPERB. The whole family thinks I'm amazing. 🤣🤣 I fessed up that it was Sam's recipe.

    Have made this recipe about a dozen times over the last two years and shared it with everyone (always the people I make it for who demand it, LOL). I've used the marinade with chicken and lots of of other different beef cuts, using Braggs Aminos instead of Soy. It's ALWAYS fantastic. The BEST is when it's marinated at least a full day (24 hours). I char it but do it on the pellet grill. SO FREAKING GOOD.

      @Jay Kemme , my parents are from Michoacan and Guadalajara. Having visited relatives down there all I've ever seen as anything resembling traditional carne asada consisted of whatever thinly cut of diesmillo or arrachera steak, lightly salted, grilled. Nothing fancy, no marinades, just plain steak. Same stuff in the mercados, on the street. Even in sit down restaurants, unless they offered something as a house specialty, a carne asada plate was just a simple, thinly cut steak, either bistec or sliced. I have never, in all my travels in Mexico, ever had
      carne asada that was marinaded or "preprada". In the US, yeah, we would get it if we wanted only because it was different but it's not the norm.

      I agree. There's alot of stuff out there that are variations of the traditional stuff I grew up with that my Mom, Aunts, and Grandmothers would make. As long as it taste good, it's all good. I will say mention something else that made me laugh. Several years ago, Carl's Jr. advertised, what they were calling, a traditionally authentic California burrito. They showed the streets of Tijuana, and points south. I emailed their marketing team informing them that there was no such thing as an "authentic" California burrito and that saying this stupidity is insulting the intelligence of a lot of Southern Californians considering that many are very familiar with authentic Mexican food. While I never saw that commercial again I'm sure they received the same type of feedback from others.

    Have used this marinade twice on stove seared to oven cooked chuck steak. OMG it's DOPE! Seriously! I'm eating the steak now w/ a cucumber tomato salad. OMG. SO GOOD!!! You are right. You are a GENIUS!!!

As a an avid foodie and cook I've learned that authentic doesn't necessarily/always mean better than non authentic. I care more about quality of ingredients and creativity of use of ingredients, rather than doing something by the book.

    Honestly I've used this recipe so many times. And it always turns out amazing. I do tweak the measurements a little but still one of the best marinades out there. Thanks for the great video

    Recipe never disappoints........Just whipped this up again last night with skirt steak. Absolute killer. Kicked the Brown Sugar, added Chili powder in place, hot fire. Chopped it up for burrito's.

    I love how it works on citrus, but my favorite reason, is how well it perfectly grates Pecorino Romano for adding to my Carbonara sauces!

    Need to let you know that I've seen, re-viewed, and used this video to make the carne asada dozens of times now. Personally, I don't use the brown sugar, but otherwise, Sam, this recipe ya done did, is freaking wonderful. The carne asada it ALWAYS gets applause. Love it-love it-love-it.

      @@joerivas9847 Yup. I like letting as much of the meaty goodness come through. No need to hide the taste. The soy sauce is good in the mix, but I've done without, too, and it's fantastic.

    This is my go to recipe for steak tacos /fajitas. Really great results with skirt, but I've used it on flat irons and flanks as well and it is still amazing!!

    These are so easy and delicious (thanks Sam!). I buy the flap in bulk and make 6-8 of these at once, then freeze them individually and make them almost every weekend with some form of a STCG burger and the grilled veggies.

    So i use your recepy for my.wedding and this meat was the first thing to be gone. I use it at list once a year and always is the first meat to be gone and to be praised.

    When my oldest Son comes to town and me and him and his little Bro hang out, this is the exact recipe they want. We do it just like you show. The 3 of us go in the kitchen and make the marinade, then visit for 1-2 hours with it in the fridge, then fire up the grill. It is always amazing!!! As a side note, we eat it straight off the cutting board. (also like to add a bit more salt and pepper after the marinade.) Thanks Sam. My Sons think I'm a chef. Really, I just follow your recipe.

      I actually use a little water and tablespoon of vinegar along with everything else he described.
      I was expecting a twist of something else to add to give it the meat flavor. 🤔

      Just curious, we found a different recipe for the marinade , this woman added Oregano in HER marinade . Have you ever heard of this?     I made this twice already. You gotta try it. One of my favorites now. The flavor is amazing. I let mine marinade for 24 because it ended up raining. Worked out for the better
