    I'm really glad that I came across your channel. No clickbait-titles or contrived chaos, just skillfully simple stories that seem right.
    This seems to me to be homesteading at a realistic pace, not trying to do too much too soon, not needlessly disorganised with far too many projects going on at once, calm and sure. You seem to be genuinely trying to follow a lifestyle and achieve a quality of life that so many more people could and should.

    Beef short ribs was one of my favorite meals growing up. My mother would BRAISE IT and used the fat to saute the veggies. When you said that brisket is not your favorite.....all the TEXANS gasped😮 !

    if you have a stand mixer you can buy a meat grinder attachment and all the cuts you don't like like the short ribs you can cut the meat off and turn it into burger.

    An old Sicilian guy behind the alley from us gave mom his spaghetti sauce recipe. All home grown of course, but he added seared short ribs to the sauce.     I am by no means a vegetarian lol. But it was still a bit sad to watch peaches last day. 😮

      I love the idea of the closed loop, self sustaining cycle… I just don’t know if I could raise them and then process them. As an animal lover who is also a meat eater, it’s a tough dichotomy (and admittedly a big hypocritical)

    It’s too late for this comment to help you for this beef, but the gentler you are when moving the frozen meat, the less likely you are to break the seal on the vacuum sealed bags. That will ensure it lasts as long as possible in the freezer. By the way, rogue cows are so stressful. I think you did a good job of getting her loaded. I’m so glad no one was seriously injured. I love your channel!

    Those short ribs can be great if you make beef strogenoff and make it in a pressure cooker. My mother made so many meals with the pressure cooker and believe me she was a great cook and those home made egg noodles with ox tail was actually the one meal that I still think about 60 years ago now.

    I like that you use zucchini for relish. Years ago I substituted honey for the sugar in the recipe (using half the measurement) and the flavor is awesome. It's my signature zucchini relish. But I'm older now, time to share my secret.
    Also, once I was trying to remember my signature zucchini relish recipe from memory and I used ground mustard powder instead of mustard seed. It turned out to be another hit, and I dubbed it "picnic relish." Secrets out now.

    Nothing better than grass fed beef. A friend of mine’s dad raises cattle and hogs that’s where we get our meat. We only have 21/2 acres we have laying hens and ducks and raise meat chickens and grow vegetables. Keep up the good work. God bless!

    Thank you! This was like a tutorial for those of us learning how to cook grass-fed beef. It is different than grain fed for sure.
    Please show me how you cook your shank. 🙏 I think I have a winner of a recipe but my first time cooking it was a disaster.

      You're welcome! It might make it into a video sometime, but it is basically the same as the roast she made in the video. Might just need to adjust the heat and time a little since it's a thinner cut.

    Oats and egg with seasoning is exactly how my mum would make home made burgers too! She always said it just helps to bind everything together and not fall apart on the grill/pan.

    Man, I feel you on this brother! We've been doing vows for 6 years now and you'd think we had it figured out 😅 finally this summer built a shoot, and had one phsyco cow that jumped over the 6ft brand new oak fence, crushing it as my husband drilled the last screws in! She was nuts. I know the pain of trying to load.
    Also listen to Michelle. Don't do pigs 😂 they are even worse to load. We loaded up 4, and started at 4pm and didn't finish until 3AM!! They are crazy and *thats* when we almost died. LOL. 💀

      I like using MILLET and BLACK BEAN for veggie burgers. Flax eggs as a binder if you don't use eggs.

    I recommend cooking short ribs in a slow cooker. Just season it with whatever spices or combination of spices that you like (salt, pepper, cumin, coriander, paprika, chili flakes, garlic powder) and put it in the slow cooker for either 4 hours on high or 6 hours on low. Add a little water to coat the bottom of the slow cooker. If you want, you can add carrots, onions, garlic or whatever and you have a full meal. Enjoy and keep up the great work. Thank you.

    The beef ribs are best cooked by smoking. Like you said they are pretty greasy so the long smoking helps render it out. Another use is you could render them for some beef stock. It would still be pretty greasy but you could skim the skum off.

My wife and i just sold our home and packed up our 9mth old son and everything we own and moved to a more homestead friendly place, in order to do what you guys have done.     Love that you showed all the struggles and mistakes of raising your own beef! In my own personal experience, messing up is how you learn the most lol.
    Our heifer is pregnant and we plan on raising up her calf to put in our freezer! We buy a side of beef from a local farmer but I’m so excited to have our own!

    Please share your recipe or make a video on cooking those shanks. I get them with our beef and every internet recipe I've tried was awful. 🤮 I have some in the freezer if I can make the best roast beef sandwiches, I'm all for that! Thank you!
    Here's what I do with some of those other cuts.
    I've ruined a few briskets in the oven so now I season sear and cook in the slow cooker with a little water/broth and liquid smoke (splash) Its very good that way. You can add sliced onions also, Shred and make bbq beef sandwiches.
    Short ribs seasoned and cooked in the instant pot then finished under the broiler with bbq sauce, is pretty good. We save all the bones and add more bones for our bone broth. Ive heard shanks make a great broth but I've not tried it. Thanks for another great video Blessings to you all. ❤

    My Farmers Market connection keeps trying to get me to try beef tongue, Does Michelle have a good recipe for Beef Tongue? would love to see a video. Also not eeww beef heart, It is so good grilled it is very much like a piece of tenderloin. And for the liver I put it in a bullet processor with an egg and mix it into my meatloaf so all of the nutrition and none of the liver and onions smell in the house like Mom used to make.

    omg I love your Vvlogs....... cooking with what your are growing is amazing......... the only thing I worry about is watching the cows going in and then you see them no more untill they are all chopped up............. but I get I can get over it......     I make corned beef using the brisket. I follow Jill Winger's recipe (using half the salt, Prairie Homestead. Give it a try!

    Definitely smoke the short ribs over hardwood, oak or hickory low at around 250-275. The meat will slide off the bone. Make sure to remove the sinew film off the back of them first. You can thank me later :) season with SPG keep it simple.

    great videos, keep it up! We are in Texas, and raise grass fed beef, our cost for raising and butchering our steers (Aberdeen) come out to about $4.64/lb. Way cheaper than the grocery store, think about steak for $4.64/lb!!!

    I relate to your 'loading the calf wreck'. I built a load alley way. If a beef can't see the end of the alley way (curved) they will enter it better. That can be a logistic/space problem. So I just built a straight alley way but left it open. Over time (going to water or just boredom) the cattle will get used to walking thru it. Then when you load, the animal thinks - "I've always gotten thru it before with no problem!" Also I worked my cattle quietly and mostly by myself. They get used to you. I've had help before where the guy had a scarf (rag) and a big belt bucket. That mouthly noisy 'cowboy' was just a problem. I finally told him - "This isn't a damn John Wayne movie! Act accordingly. 🙂

    Thank you Michelle for the cooking lessons. I'm getting a quarter of Rocky in February. Not sure what cuts I'll get, some steaks, a roast or two. My friend says I'm the first to ask for the tallow. Some of my family is upset my meat is named. Knowing where it came from is so important, also the life it had.     Hey guys, finally got round to watching this vid. A big thanks for all the time in producing it! MMMMM MEAT, delicious ;-) May I ask, here in Australia the Govt requires every property that keeps livestock to have a PIC code (property identification number) that we pay for every 2 years. We also must register all animals to that number and tag them if they are moved from one property to another. It is like a sensis for who has animals . Anyway, do you have something similar, or are you allowed to keep any livestock without notifying Govt. Or is this only if you get your livestock butchered at a butcher?     just found you guys nice,,,,,I cook those fatty ribs in crock pot with asian type seasoning soy garlic onion b sugar ketchup little vinegar sesame oil low and slow till meat falls off bone very rich but soooo delish

    Boil your short ribs before you do anything with them! You get more meat off them and it will cut some of the grease. After they boil, I put mine on the grill or slow bake. I don’t eat pork anymore so if I crave ribs, I go for the beef short ribs.

    The short ribs are a pain. But my husband always pulls them out. I like to pressure cook them, strip the meat and use it in an Italian red sauce with spicy sausage. I use red wine in that pressure cooker, by the way.

    Awwwww I love this video....to celebrate I'm going to go out for a juicy cheeseburger after work ....which might not seem like a big deal to some people...but I only eat out in a restaurant a handful of times in a year....handful..like 5 times...just because I like eating my own cooking after decades of working in restaurants....

    Short ribs? Chef Jacob Burton does a fancy recipie that tells you all the tricks for this cut. Now, heart! Take heart, it's the leanest meat you brought home. It does have some gristle to contend with, but is really delicious steak and yours is a decent size to learn from. Dice and slow cook in a casarole, stew or hagis (don't bother with the traditional type, I do a Cottage Pie, Steak & Kidney style, with some liver added (brown them all in a frypan first) delicious!). Great video.

    Awesome video! I have been binge watching today. Love how you built the root cellar. We love Azure but would also love to know more about purchasing from Dutch Valley Foods. Do they have a way for us to order and meet the truck unload and bring our food home? How are you able to buy from them?

    I have never put an egg in my ground beef when making hamburgers. I just usually use some kind of seasoning. Do you put the egg in to hold it together? I believe you also said oat flour. What is the purpose for that? I have a lot of oats that I could grind into a powder/flour to use, just not something I had ever thought to do. They did look good and they browned up nicely. So glad you didn't get hurt from the cow.

    For everything meat, dry brine is the way to go for an absolute level up in flavor and quality, I suppose that'd be hard to do with frozen meat but give it a try as an experiment some time to see if maybe you want to figure out a way to implement it into your kitchen system.

    I can't do pink meat, sorry, but otherwise I love the look of those steaks. That roast looked good, as did the hamburger. Can you tell us how long this beef will typically last you? And how many different cuts do you get and pounds of ground beef? And isn't beef tallow just lard?

    Get your butcher to cut those beef ribs across the bones AKA flanken ribs or Korean BBQ. Thickness about 1/3-1/2 an inch. Grill them for a minute or two on each side over a scorching hot grill to char grill them. You can marinate them ahead of time or simply baste them with a teriyaki or similar sauce while cooking. Serve with rice cooked with a couple tablespoons of coconut oil and your favourite steamed veges like bok choy etc.

    My friends and I go in together to get a cow and they just want the basics. So I get the suet, organs, and bones. This year they gave me the ribs because just like you they didn't like them with the excessive fat. Same here but now I have 6 packs I'm gonna have to figure out a good receipe..maybe some kinds stew
