    I love your outlook and philosophy. I’ve been guilty of being so busy putting up food that I was too busy feeding my kids and grandkids instead of being with my kids and grandkids. You are wise beyond your years.

    Just a thought you might try a vacuum sealer. We do corn every year and meat in bulk. The sealer really cuts down on freezer burn. Good luck!

    Love your honesty about how much you can do without over doing it. I have often wondered that and have been overwhelmed just observing the demands of homesteading!

    Burnout seems to be really common in the homesteading community. I feel like the biggest difference is when the children get a little older and can start to help with some of the chores 😂

    Just dicovered the channel, already a couple vids down, great content all over!
    When you live homestead like this, do you have "sundays" (i.e whole days where you can relax), or is it more like "moments" (pizza + movie night, picnic in the forest...) ?

      So glad you're here! We do have Sundays, and we take little vacations now and then. On the Sundays where we don't do any extra work, we do still have to milk the cow and gather eggs, but that's it. We also really try to have those "moments". In the beginning of our homestead journey it was a lot different. We still took Sundays off, but the "moments" were few and far between. We've found it to be really important not to let the homestead take over. We literally got burned out in the first few years. My best advice is to start in slowly.

    Wow! Your own food stock. Love the walk in fridge. Im sure your know when things are spoiled or not. The thing is it's your own resources and that you and your family are resourceful. And I love your editing, it shows respect and thoughtfulness for one another. ❤😅 tku for your vlog.

    Personally, I plan on canning beans because they're a big part of our diet but there are so many days when even the relatively short cooking time for black beans takes too many "spoons." This is a good reminder to have both options accessible!

    I cant believe you hate canning. I love it, i think its s fun project.
    People can beans to make them quick and convenient. You cant start dinner at 4:30-5:00 and eat by 6:00 with dry beans. They have to soak, be rinsed, cooked. It absolutely makes sense to prepare beans ahead of time.

    Very wise of the two of you too know your limits and work within them. I'm not sure I've learned that lesson yet. I got pretty burnt out back in August.

      Shelli's burnout was so bad she had to be on the couch most of the time. It was a really long road to healing. It took us too long to learn, so I hope we can encourage others before it gets that far!

    You should put a a railing across the front of the shelves to keep the bottles from falling off in an earthquake.

    You can store root veg in sand. That stops them drying out and last for months.

    Cody for heart burn take 1 tbs of Organic Raw Applecider Vinegar with the mother. I guarantee...gone. Same with gurd, acid reflux etc. My mom almost had an experimental surgery to cut her esophagus. I brought her a small bottle...she called me so excited and said IT WORKED. I didn't know what she was talking about at first. She cancelled her guinea pig surgery.

    Keep your sustainable farming sustainable!!! Awesome reminder to enjoy your family. Including your children in as many chores as possible with a grateful heart is something I’m still growing in. I never liked dishes and I started complaining. If I were to do it again, we’d listen to musicals or books on tape while we did the dishes so it was something to look forward to instead of something I thought them to dread. Selah.

    Great larder. We don't have basements/cellars here in Las Vegas, NV. That sucks. I love everything about canning food except for paying for the food. I love taking leftover meats or soups and put in canning jars. If I don't have enough I put them in freezer until I have at least 7 jars to fill my canner. I take them out 2 days before I can so they can thaw. Then I can. My husband had adrenal issues too. When he went high fat/low carb/moderate protein, everything went away. Not sure that would help everyone but it is amazing how many health issues go away. I freeze a lot of meat but convert to canned meat after 3-6 months to preserve quality. I can jams/jellies/butter only if someone gives me fruit. I can very few veggies. I'd prefer to dehydrate and then powder some of it or vacuum seal it. There was a time when people canned to feed a large family for 4-6 months. If one isn't part of a large family then canning massive amounts of any one thing isn't necessary. You all have done a great job. Love it.

    Thank you so much for this video and your advice. You are so right about choosing to grow and provide foods that do not require a lot of stress. Also your point was so helpful, about not canning up everything. For example with the beans, being more stable dried than canned. Also, some things actually lose most of their nutrition, after canning. So some things are just best preserved in different ways, and honestly used as fresh as possible. It's all about balance, and working on doing our routines, smartly, and with peace. Very inspiring to see all you have done. Thank you again.

    If your still thinking of having a room sized freezer, I saw a guy here on you tube who had freezing temps outside for weeks at a time and he also had about 30 five gallon buckets which he would fill with water and let them freeze outside and then he's bring them into his insolated room, stack them up on one of more walls, and the frozen buckets of water he said, lasted him almost all the way past August which by then the weather was getting cold again and so he'd refreeze the buckets and begin again. I thought it was genius.

    My husband and I are obsessed with watching you videos lol. We just purchased a house on 48 acres and will be homesteading come spring. I already make my own medicine and have a pretty big garden that I preserve most of the food from. I would love to know how you built your shelving for the canning foods.

      That's awesome! Congrats! Glad we can be part of the journey. I wanted to make the shelves strong, but as simple as possible. I just used 2x12s for the shelves and the ends, and added strips on the front so the jars don't fall off. Super simple!

    Really would love to see a full video on Michelle's "adrenal fatigue" and what exactly she means by that, how she felt during it, how she feels now that she's not in adrenal fatigue, and if she saw any medical doctors for this, etc.

    Awesome storage y'all have built up. What a blessing to have that dedicated space for it. I love to can but honestly I never thought about what I grow in my garden in terms of ease of storage. 🤔 I think that is food for thought to balance between convenience of storage and family preferences. Also, I have to mention I'm one of those that DOES can beans just for convience to have them for a quick dinner. 🙃

    Truly love your philosophy of how to be “more than farmers” and finding ways to be more efficient to avoid burnout. I wondered how you avoid freezer burn and if vacuum sealing is something you’d consider in future. TFS

      We use the Ziploc freezer bags, and very rarely have freezer burn. The food also doesn’t usually get stored longer than a year. We would consider a vacuum sealer, but at this point, we haven’t found it necessary to spend the extra money, time, and have another gadget taking up space.

    I havent done it : but folks store carrots in sawdust: I think it helps keep up humidity. worth a try

    The two of you must have an abundance of energy to have all of that food either stored or frozen, that is amazing. I would have to say, that it would be wonderful in the winter months to have all of that easily accessible. One thing I have to ask is if you have any issue freezing items in glass jars, like the glass cracking? I have always used plastic Tupperware products for freezing, so just wondering. Hats off to you to have 4 children, Homesteading and raising a lot of your own food, simply amazing.

      I definitely don't feel like I have an abundance of energy 😊 I think for us we've learned how to be more efficient, and we're very intentional about what we choose to do. Our hope is to help people learn to do the same! We have had cracked jars, but only if they get filled too full. Shelli is just really careful about how much she fills them up. She doesn't like using plastic because of the chemical leaching. Thanks for the kind words 😊

      @@morethanfarmers Thanks, my brother had a tumor on his Adrenal so know all about the fatigue issue. He was able to get a doctor at Mayo Clinic to remove the tumor and seem to be feeling better.

    The citric acid in canned tomato products is what gives people heart burn. Harvesting bush green beans is a pain in the butt haha...I started growing a green bean variety that is a "pole" bean, and it grows up a fence or trellis/cattle panel, and it's so much easier to harvest ;-)

    On one of your videos, you mentioned that the crumble topping on your raspberry crisp is sinking. Try adding one and a half cups of frozen raspberries to your canned raspberry pie filling before you put your topping on. It should solve your issue.

    We live in the south and several times a year we have power outages. You have so much frozen food fruit and meat and we have so humid warm conditions. We can buy potatoes, put in pantry and even put them on racks and before the week is out they will start a few sprouting. We love greenbeans and i feel they are amazing with bacon onion and potatoes...and canning beef and veggies individually gives me something quick to throw together and make anything soup stew related etc in a few minutes. Pressure cooking woth a big dial pressure cooker is sooo tine consuming!!! The big change for me was getting an electric presto precise canner. It does all the keeping tract for you and even sterilzes jars etc all one pot easy and quick. During the busy harvesting time, something have to be frozen for later. But i find i loose a lot of space and have to keep all things going to figure out my load and capacity. Im not sure where you are or what your zone but sometimes when you live closer to family and friends you can barter for the things you grow plenty of so you dont have to grow it all etc. Id love the butter!!!

      Sounds like you've got a lot going on! We have very few power outages here in Ohio. We're very fortunate! Do you have a cold storage root cellar? That would help keep the potatoes fresh longer. If they are exposed to warmth and moisture, they will sprout right away! The Presto canner sounds intriguing!

We've been trying to start our homestead for some time now, but just haven't been able to. Thank you for making it seem more realistic to actually do. It can seem like an overwhelming thing to start.     Hi there, I heard you mentioned that your hubby is having heartburn eating tomato sauce, well I have recommendations, we were unable to eat most of Italian food because it contains tomato sauce,
    Untill I did extensive research on what kind of spice or food that would help with heartburn, I found Tamarind paste or powder teaspoon of paste in any kind of food that we are preparing we use tamarind paste we don't have any issues with the food anymore. So give that a try ,it's very healthy for our bodies.

    Love this video!! So nice to have it all explained so beautifully!! I just moved to a lace with a cold room and need to figure out the storage thing with it, it does have a drawback to it....a fair part of it is above ground under morning sun so it seems to get damp and humid in there. What a great idea about the beans, makes so much sense!!

    Absolutely brilliant totally jealous. I’ve started to do my own food now instead of going to supermarkets. However, I go to the local farms and deal with the farmers and gardeners directly. I first started out by freezing my provisions. After a little while of doing it, I invested in a chain bird, vacuum sealer totally recommend it increases the shelflife of everything in your freezer and fridge. Plus, it’s also great when you make lots of food and take the leftovers, put it into a vacuumed bag and then take it out for a quick meal drop the bag into a pot of boiling water and the only dishes you have to do is your bowl and cutlery. Started canning last year. Did some water bath and pressure canning. I also started curing my own meats. Would totally love to set up you guys have that’s awesome.

      @@morethanfarmers no I do not have tons of skills when it comes to homesteading but I am learning. When I eventually get my own little homestead though I can take my construction skills to my little farm I'll just have to learn everything else lol .

    In Russia and throughout the post-Soviet space, we also make a lot of preparations for the winter. The city has a Dacha (a plot of land where people grow vegetables, fruits and berries.) And pickle for the winter

    I too can’t eat tinned tomato products but can use my home grown tomatoes. My sons girl friend is the same. I wonder why this happens?

    Finally someone who doesn’t can beans! Lol So many of your dry goods will store for very long times w/o canning them! Loved your video! I’ve had trouble storing my potatoes in my basement, but after listening to you I think it’s because they’ve gotten too much light. Thank you!

      Yes! Light and warmth are a problem for potatoes. A potato is like a seed...If you give it light, warmth, and moisture it has the capacity to sprout and grow:) So glad to hear of someone who understands why we don't can beans...haha. So many people do and it's never made sense to us:)

    Hi, just found your channel. Love your attitide about not having to can everything and preventing feelings of overwhelm!. May I ask if you use oxygen absorbers, I'm a little confused if I should be putting them in my buckets. They are working items, not loooong term storage.

      Glad to have you! 😊 We do not use absorbers. Not necessary for stuff that’s gonna be used. The kind of lids we use don’t even make a tight seal 😉 We’ve never had any issues. But like you said.. ours aren’t looooong term storage either.

    We are starting very small since we live in an apartment, but I’m curious where you get your bulk food storage bins for rice, beans, oats, etc.? We go through so many oats and want to start buying and storing in bulk but can’t figure out the best containers. Would love any recommendations!

      Several ours were used honey buckets, or other food buckets from restaurants. But, my favorite are the food grade buckets you can get from Home Depot. You can get the easy snap on lids for them. It's not an airtight seal, but we've never had an issue with that. The regular bucket lids were so hard to get on and off that it was drudgery to get stuff, and the kids couldn't even get it. Bulk foods is a really good way to get started! That's how we got started in our little basement apartment 😊 Just get yourself a few homesteading books and it's all downhill from there 😉

      Welcome to the community! We just went to Home Depot and bought food grade buckets. We have had them for years and have had no issues at all with them! So yes, we are happy with the quality😊

    Great video you guys! I too have adrenal fatigue and other things but twice your age perhaps! You can also use beef liver the same way, especially if you use ground beef you can add some liver. I actually love liver! I sauté it and then caramelize the onions and it's yummy! I think, anyway!💕🤗

      Ideally you would use stuff within 1-2 years. The food starts losing its nutritional value over time. The food will be “good” for longer than that, but I honestly don’t know how long.

      I know right! But we do have a generator that should keep us going for a few days on gasoline. And I figure if there’s a crisis big enough to put everybody out of electricity then we are going to have bigger problems than just our freezer food. And biggest of all we have the skills we need to build back up. To me that’s what modern homesteading is about 😊

      We have a generator that we could run off of for awhile. If it goes out for longer than that, we have canned food, bulk foods, and root vegetables in the cold cellar. If it goes out for so long we run out of that stuff too, then I think we've got even bigger problems than just our freezer food being gone 😉

      I fill my instant pot with chicken backs and necks, add salt and seasonings and a dash of apple cider vinegar, then fill with water to the fill line. You may need to experiment a little bit with the ratio of bones to water. If you add too much water for the amount of bones that you have, your broth will still be delicious and nutritious, but it won’t gel. I usually try to do about 50-50 ratio of water to bones. I set my instant pot on low pressure for three hours. Beautiful broth every time. I just strain it out and store it in glass jars in my refrigerator.
