Para los que se preguntan porque Perú tiene platos fusión de China es porque en el Siglo XIX Perú fue el primer país de América Latina en recibir miles de migrantes chinos porque en ese momento Perú no tenia suficiente mano de obra y en ese momento China era un país pobre. Y fue así que miles de migrantes chinos llegaron al Perú para trabajar en las haciendas azucareras en las construcciones de ferrocarriles y demás cosas. Y los chinos crearon platos nuevos con técnicas de preparación china en el Perú como el famosos chaufa, chi jau kay, etc, etc. pero esos platos solo lo encuentras en el Perú porque fueron creados por ellos con ingredientes autóctonos del Perú. Y por lado Perú también Perú fue el primer país que recibió miles de migrantes japoneses, también por la mano de obra barata. Incluso tuvimos un presidente peruano de ascendencia japonesa, Alberto Fujimori.
Es porque para ese entonces el tráfico de esclavos fue mundialmente prohibido (aunque lo hicieron por ser mas beneficioso tener mano de obra barata que mantener a un esclavo). El imperio Británico también hizo lo mismo con los indios (especialmente Guyaratis): Malasia, Kenya, Sud África, Guayana etc…. Se aprovecharon de países que eran pobres y estaban superpoblados (especialmente en el caso de Japón).

As Peruvian i can certify both of you are real foodies but are a long way from jewels of food found in Perú. you must go to the north of Perú at Chiclayo, Trujillo, Pacasmayo and will find a new world of food, and to the south to specially Arequipa. All in all you need is more time to really really really know Peruvian food.

Also the sauce of the lomo saltado is not only soya sauce but it has ají amarillo and ají panca and other flavours in it, not just soya sauce which is why it’s so delicious and very Peruvian, with some Chinese influence.

There are so many to choose from! If you have the budget, many people recommend “Central” - it was recently awarded best restaurant IN THE WORLD! We didn’t get the opportunity to try it, but maybe you will! 😋

If you are still in Peru, I invite you to go to a little bit more expensive restaurants (30-40 soles per dish) because while most tourist like to try street food, the peruvian food actually shines when they use higher quality ingredients or do a more refined version of the recipe (cooking per dish instead of cooking a whole bowl of food).
Peruvian here, in general street food is lower quality than the food you find in restaurants or prepared at home. The only exceptions are anticuchos, picarones and choncholis from a street vendor
Theres nothing compares to papa rellena make it at home. Sorry but that ones you buy on streets are terrible simple and far far away from how it would really taste.
