I was lucky enough to have the opportunity to eat at Central twice between April and June. Unless I missed it, Alexander didn’t mention that they have two menus (Mundo Mater and Creativity Mater), which is why we went twice. However, as it turned out the two menus weren’t completely different. When the staff found out that we had just been there about a month and a half earlier, they had the kitchen prepare a special menu for us so we could try different dishes. It was a special experience, especially the second time around and amazing to see how the team was able to push out creative dishes on the fly to some extent.
I'm not sure a restaurant has ever convinced me to consider the place it's in more than this. It looks like such an incredibly unique experience and flavours I can't even fathom. Exciting.
I can fully understand why this restaurant got the first place in the top50. The menue is probably the best you've shown thus far and the presentation is breathtaking. Thank you for also giving us so much interesting backstory to the chef, the restaurant and the cuisine. Imo, your best episode so far. Simply amazing!
Define 'best'...there are plenty of others I'd rather go for that have been shown on this channel. Some of the dishes on this menu are inspired and sound brilliant, but others (see the piranha heads) are unappetising and off putting. An interesting menu that offers a different experience and showcases more than just food, and it deserves to be commended, but as far as the food itself is concerned, it's not the most appealing I've seen by a long shot.

Even for those dining at more respectable prices, Lima is the culinary temple. Peruvian cuisine is my favorite and the city deserves visiting just for that reason alone. Nice to see you touch upon this quite forgotten continent!
@@sydgerald you are right in the sense of enrichment, but just the diversity of the three biozones of Peru, the variety of papas, potatoes (2000+ I have heard), by itself is SO rich already, that whatever Asian influence has been evolved on top of that, could only make it better. Peruvian Georgia-Armenian Japanese (have not been to Japan unfortunately, but what I have tasted in other places...) are my top three of cuisines I have been able to enjoy in the 60 countries I have visited in my life (Hungary !! as very last and very alas before Don Alexander had his restaurant (very affordable for such levels!)), and working in 27 of them... Not having been to Michelin star restaurants, my palet through life has been very rich, at all levels from streetfood to culinary highlights and living happily in Colombia with my HUNGARIAN mudi beauty dog I say Peruvian cuisine is the best. Of all.

I've said a few nasty comments today about the worlds number 1...Central. I couldn't understand why it would be number 1 position against stiff competition from some superb restaurants around the world. Then I watched your video just now.....I'm converted and I eat my words. Chef sounds very humble and the restaurant is stunning. The food is exciting and very very different. The drinks pairings are well priced and also very exciting. Overall it was a stunning culinary experience for you Alex and definitely a well deserved number 1 worlds best restaurant 🙏

I believe I've probably watched close to 100 of his episodes I have been near Peru and around Peruvian food and every time I come to the same result it's just not for my palate I'm glad he enjoys his trip there glad you're able to learn from it I myself have been around in enough times to know I have to make a different choice😊
Oh, nice! I ate at Central in 2014, my first fine dining experience. The interior has gotten a lot nicer, but the concept of the menu with the different altitudes and such was already the same. The dishes themselves are all different now, of course. I still vividly remember the algae caviar though-- back then it was served with a puree from potatoes that had frozen on the fields high up in the Andes. Really unique flavor and mouthfeel. If I ever make it back to Peru I'd definitely eat there again.

Todo sudamerica tiene para ofrecer mucho de su gastronomia, pero son ustedes mismos los que tienen que valorar lo propio, resaltar lo mejor de sus comidas caseras o de alta gastronomia o como se le llama "Gourmet". Soy peruano pero se que en paises de sudamerica hay tambien buena comida, pero no las muestran y sus gobiernos no las impulsan. Aqui en el Gobierno de Alan Garcia se promociono tanto la gastronomia que rapidamente se hizo conocido de la mano de Gaston Acurio. De ahi en adelante el pecho se nos infló y todos supimos que aqui en Perú se comia rico, desde las carretillas hasta los mejores restaurantes. Yes, absolutely!! I’m half Peruvian and grew up eating Peruvian cooking. Of course, I’m a bit biased, but Peruvian food is so incredibly delicious. Everyone that eats my mom’s cooking can’t stop talking about how good her Peruvian cooking is. I’m always surprised there aren’t more Peruvian restaurants in the US!

I was lucky enough to visit Central for lunch just a few months before you and I’m amazed to see how different your menu was from the one I experienced just a short while prior. The part I enjoyed the most, actually, were the juice pairings which were incredibly diverse and unique. Excellent video as always.
I believe they change the menu about quarterly and it was last changed around mid-March. They also have two different menus and they tweak it daily based on products that are available.

Just came back from Perú and although I did not get to try Central the food and produce that they have is amazing. Virgilio and his team must work so hard on making this possible, I cannot even imagine. The country is amazing, being Spanish I felt much closer culturally than anywhere else in Europe (like in much of latin America). Much love to Perú from Spain.

A relative visiting made a comment she never had peruvian, so we went to a good restaurant ( there are like 4 near each others) she was not impressed. She lives in New Orleans, Creole food destination. I visited Peru, as a tourist, I like it all right but I was not blown away by any of the good food we had.

We the parents, respect our ingredients and honored THEM with creativity, curiosity, variety those are the secret of Peruvian Gastronomy, You must born in Perú to feel the food in every important moment of our lives. We peruvians celebrate with food, when somebody is coming back to our country we celebrate with our food to make You feel at Home, if somebody is going outside the country we cherish with food to remember our roots. They don’t have any stars because the Tourism Board of Peru/Lima has chosen not to pay the Michelin Guide to do a review of any cities or country. They would be a very solid two stars in my opinion though.

Todo sudamerica tiene para ofrecer mucho de su gastronomia, pero son ustedes mismos los que tienen que valorar lo propio, resaltar lo mejor de sus comidas caseras o de alta gastronomia o como se le llama "Gourmet". Soy peruano pero se que en paises de sudamerica hay tambien buena comida, pero no las muestran y sus gobiernos no las impulsan. Aqui en el Gobierno de Alan Garcia se promociono tanto la gastronomia que rapidamente se hizo conocido de la mano de Gaston Acurio. De ahi en adelante el pecho se nos infló y todos supimos que aqui en Perú se comia rico, desde las carretillas hasta los mejores restaurantes. Si tan solo los paises de sudamerica se unieran y velaran por cuidar sus tierras seriamos un Continente que abasteceríamos al mundo de alimentos. Dios quiera que eso suceda algun dia.

Yes, absolutely!! I’m half Peruvian and grew up eating Peruvian cooking. Of course, I’m a bit biased, but Peruvian food is so incredibly delicious. Everyone that eats my mom’s cooking can’t stop talking about how good her Peruvian cooking is. I’m always surprised there aren’t more Peruvian restaurants in the US!
Lots of peruvian restaurants in the usa have no respect for Peruvian Food. To be honest. They give peruvian food a bad name.

I was lucky enough to visit Central for lunch just a few months before you and I’m amazed to see how different your menu was from the one I experienced just a short while prior. The part I enjoyed the most, actually, were the juice pairings which were incredibly diverse and unique. Excellent video as always.
I believe they change the menu about quarterly and it was last changed around mid-March. They also have two different menus and they tweak it daily based on products that are available.
Production quality is insane. Subscribed to this channel when you only had like 2 or 3 vids out and knew it was only a matter of time until you blew up. Keep it up! I look forward to every upload
Just came back from Perú and although I did not get to try Central the food and produce that they have is amazing. Virgilio and his team must work so hard on making this possible, I cannot even imagine. The country is amazing, being Spanish I felt much closer culturally than anywhere else in Europe (like in much of latin America). Much love to Perú from Spain.

A relative visiting made a comment she never had peruvian, so we went to a good restaurant ( there are like 4 near each others) she was not impressed. She lives in New Orleans, Creole food destination. I visited Peru, as a tourist, I like it all right but I was not blown away by any of the good food we had.

We the parents, respect our ingredients and honored THEM with creativity, curiosity, variety those are the secret of Peruvian Gastronomy, You must born in Perú to feel the food in every important moment of our lives. We peruvians celebrate with food, when somebody is coming back to our country we celebrate with our food to make You feel at Home, if somebody is going outside the country we cherish with food to remember our roots. That is food to us, it is something about deep feelings.

I went to Peru in 2017. I ate Tomato soup with egg which was a first. It was amazing. Haven't seen that anywhere else in the world ever again.

They don’t have any stars because the Tourism Board of Peru/Lima has chosen not to pay the Michelin Guide to do a review of any cities or country. They would be a very solid two stars in my opinion though.
