Try without egg. It's already coated with a wet mix of mustard and hot sauce, plus the moisture from the shrimp. There are egg substitutes but I've tried them and they suck for eating as eggs and didn't do well in a baking recipe. The egg just adds that little extra stick so the flour doesn't fall off. The only way to really know is to dig in and give it a try. That's how recipes were invented. Good luck and whatever you try, I pray it's a great success ❤
