I made this today but used some butter in the sauce and white wine instead of stock and red onions instead of challots. It turned out amazing! Never thought of using chili peppers or lemon zest, but they made the dish OMG. So good!!
Just practice with a comfortable and proper chef knife. You’ll get good in no time. Speed is second, accuracy is first. Literally the first part of all culinary programs is learning how to properly use knives. It just takes time. But after the first week of school all of us were 100X better than when we came in. Before I learned how to properly make the traditional cuts of veggies, I completely quit prepping them before cooking. I just do it as I go.

Additionally, varieties are even lower in taxonomy than subspecies. It's incomprehensible that people still try to argue against biological facts.
I am making this dish for the second time. My wife said it is her favorite dish of all the ones I make. We live in the mountains of North Georgia so obtaining shallots is fruitless. There are Amish farms which supply wonderful huge green onions so I substitute the white bulbs for shallots and it works pretty well. Cheers!

Due to new (in the last month) disability, I can’t stand for long periods. Not more than 5-10 minutes at a time and only with assistance equipment. However, I LOOOVVE cooking. @kommisar Shallots are onions. They both literally belong to the family "amaryllidaceae." Onions are allium cepa, and shallots are a variety of allium cepa. Additionally, varieties are even lower in taxonomy than subspecies. It's incomprehensible that people still try to argue against biological facts.
I am making this dish for the second time. My wife said it is her favorite dish of all the ones I make. We live in the mountains of North Georgia so obtaining shallots is fruitless. There are Amish farms which supply wonderful huge green onions so I substitute the white bulbs for shallots and it works pretty well. Cheers!
