I have tried black rice and red rice. I have measured my glucose after 2 hours, its definitely better than white rice. But still its not good for you, if you are diabetic. I haven't tried millets though.

Poridge is broken rice or millet which you make. The best way to eat millets is soak for 6 hours. Boil the millet, strain the starchy water and eat it with sambar or any traditional gravy which you like
Yes, you need to season the new pot. Soak the pot in water for 2 days, clean it and dry it. Then apply oil to the pot and leave it for one day. Then wash it and you can use it for cooking

Hi. I boiled the water to make kodo millet. After the water boiled, I added salt and immediately the water became black. Is it normal and is the rice safe to consume?. Ive also noticed it with fermented millets. Before eating when I add salt, the area around becomes black. Please clarify if it is normal.

More than one day is not recommended. Ideal time after fermentation is upto 8 to 12 hours depends upon the climate and dont store ambali in fridge

Something is wrong with your salt it seems.
