    Cotto Salami, or cooked salami, is an Italian recipe. It is made with pork and seasoned like normal salami.
    Cotto salami is a salami with traditional recipe but is cooked in water. Cooked salami is also an excellent alternative to the classic cotechino, as it is simple to prepare and has less fat.
    Cotto salami can be eaten as an appetizer, in sandwiches or in the preparation of various traditional dishes.
    INGREDIENTS
    1 kg of pork leg;
    50 ml of dry red wine;
    18 g of salt;
    10 g of sugar;
    4 g of garlic powder;
    3 g of curing salt;
    3 g of antioxidant (with sodium erythorbate);
    1 g of nutmeg.
    COATING / CRUST
    INGREDIENTS
    200ml of water;
    2 tablespoons of corn starch;
    1 tablespoon of gelatin;
    Pepper, sesame and paprika.
