The most delicious Stuffed Focaccia
Ingredients:
500 g flour
¼tsp dry yeast
400 g warm water
10 g sea salt
20 g olive oil
Filling:
6 slices of Gouda or other cheese
3 slices of parma ham or any other ham
Topping:
dry thyme or rosemary
Directions:
Mix all the ingredients in a bowl until the flour is combined and let it rest for about 10 minutes. Then, you need to perform the first folding, bringing each corner towards the middle of the dough, as shown in the video. It is going to be very sticky and wet, it is absolutely normal. This is a high hydration dough. After the first folding, cover the bowl, and let it rest for another 20 minutes. Then you can do another folding. That's it!Transfer it to an oiled dish, and pop it in the fridge overnight.
Next day
Take the dish out and let it reach your room temperature. Prepare an oven dish with oil, dump the dough, drizzle more olive oil, add the cheese and ham, and flip over the dough, covering all the filling. You can sprinkle some dry thyme or rosemary. Then bake it at 220C for about 20 minutes.
