I'm sorry but you forgot about one thing. The Battle of the Seven Potters. If Voldemort were to go after someone duting that battle, it would've been Sirius

I haven’t watched this video, so allow me to throw my hat in before I hear what you have to say.
The biggest thing is that Sirius wouldn’t think of Harry as James, he would think of him as a son and thus he would be a more responsible caregiver because Harry was only a year old when they died, which basically means you shape up as a parent or the baby dies, which Sirius would never let happen due to the guilt he felt over not being the Secret Keeper.
The other big thing is that Harry wouldn’t be as selfless. Don’t get me wrong, we witness a lot of arrogance from him, but at the end of the day, he would grow up with the fortunes of both the Black family and the Potter family. When Harry sees them bullying Snape he thinks it’s horrifying because he spent his entire childhood as Snape, being an outcast who was bullied with caregivers that hated him and would beat him just for trying to listen to the news outside the window.
It’s conceivable that Harry never becomes friends with Ron or Hermione because he always knows that he’s famous…and I’ll even go a step further that he may be so prideful that he’s sorted into Slytherin, which would completely change the course of his life. Either he succumbs to the opinion of his peers and becomes a racist, or he becomes the sole voice of dissent and ends up a pariah. Because he never really struggles, he also isn’t as prepared to face down Voldemort. Conceivably, in this version of events “neither can live while the other survives” means that Voldemort wins and takes over.

There is one major thing that upsets this though. Great theory.... But it's indirectly because of Sirius that Harry learns the Patronus charm. If Lupin never teaches Harry that because there are no Dementors at Hogwarts looking for Black then Harry would have been killed by the Dementors in Order of the Phoenix not knowing how to fight them off

One problem with Sirius raising Harry. Lilly Potter's spell of protection! It needed a living relative to keep that spell going. Hence the Dursley's & Lilly's sister!

I like to think Sirius and Remus would coparent Harry. Like Remus just essentially moves in because he’s just like “you don’t know how to raise a baby” and is just like the level headed parent and Sirius is the “cool” one

If Sirius had raised Harry wouldn’t that mean that Wormtail would have been tried and convicted for the crimes he had framed Sirius for? Therefore Wormtail would have been sentenced to Azkaban and would not have brought Bertha Jorkins to Voldemort, which is how Voldemort found out about the Triwizard Tournament taking place at Hogwarts and Barty Crouch Jr being at large. That means the plan to put Harry in the Tournament wouldn’t have come to pass.
