  • To help out all the Hot Ones fans looking to create their own wings challenges at home, First We Feast's Sean Evans sets out to discover the secrets of making proper Buffalo wings from scratch. To learn the poultry arts, he taps Dan Borowski and John Henninger of Dan & John's Wings in the East Village, who flex their Buffalo pedigree during a no-frills cooking tutorial. Armed with fresh, farm-raised chicken, a vat of soybean oil, and a stockpile of Frank's RedHot, these upstate natives will show you the keys to making crispy, no frills drums and flats at home.

      That's not just a coworker. His name is in the title of the restaurant! I was watching the whole time and the other guy was hogging all the camera time, and John couldn't even say a word. So he would interject himself at any time and in any fashion he could.

    As a Buffalo native, I am glad there are people out in the world spreading the message of good wings. Also, I have never seen anyone here use ranch on a wing, it's just not a thing.

      In the midwest we put ranch on a lot of stuff, and folks who don't like bleu cheese make the substitution, at which point they realize it works and it became a thing, at least here.

      Ever been to Gagsters? I'm from Toronto but we make the trip down at least once a year for the past 20 years to gagsters for wings and white pizza.. and sometimes a gagsters delight :D

    These guys really nailed it. That's exactly how it's done. My grandma used to add a little lemon juice but that's probably just a family tradition....

      Not uncommon my friend, my parents will go between random fruits depending on the need for the day. Most of the time it's a light shot of apple juice or freshly squeezed oranges/grapefruit.
      Growing up in Buffalo is like growing up in a very specific kind of hell. Everyone who lives there has tons of things to say bad about it, but we can definitely unite around the food. One thing I miss dearly is getting my Buffalo Chicken subs from Blasedale Pizzeria.

    I visited east village yesterday and stopped by the brindle room because I saw your video on here. I got the steakhouse burger. I can easily say that it was the best burger I've ever had. I've been all over the country and several countries and no one has nailed it quite like the brindle room. Thanks for posting that video. I'll be sure to stop by this place next time I'm in NYC.

    Go to wing stop, order 15 piece wings, all flats, 10 piece Louisiana dry rub, 5 piece lemon garlic rub. Side of fries. Sweet tea mixed with unsweetened tea with ice. Perfect day.

    I order from here at least once a week. By far the best spot in the city for wings. Traditional buffalo and BBQ Spicy are top notch here. Great Job!

    If you want perfect wings you need to double fry. First fry is longer around 225 degrees to get the inside juicy, second fry is hotter and shorter, around 375 to get the outside nice and crispy.

      Lot of people fuck up Buffalo Wings to no end.
      I have seen the following in my life, while moving state to state as a Buffalo native:
      - Breaded wings
      - Using Tabasco Sauce [HEATHENS]
      - Trying to make Buffalo Wings fancy with shit like truffles - Some guy tried to do this to impress me in Arizona, and I probably gave him the greatest "Are you fucking serious" face ever
      - Saying everything is Buffalo Wing flavored because you use hot sauce.
      - People undercook the wing, making it so goddamn rubbery that its might as well be the skin of a roundheaded goby
      - People thinking that you need to pair Buffalo Wing Sauce with really weird this - I have seen some crazy bastards here in North Dakota use it for walleye fillets.
      - Not getting the proper combination of ingredients: Butter, Ketchup, Garlic Salt, maybe Apple/Lemon/Orange juice.
      - Not getting the proper orange-red hue which tells you when the ingredients have melded together perfectly.
      - Making the sauce to watery. The guys appear to do this in the video, but not 100%, but the perfect sauce is when you can take a spoon and it drips in a very slow but continuous rate.
      I could go on for years :v

      I think its important to remind people what a real wing is, and why it got so popular. Instead of living in a world where people bread the wings and then add some rasberry based jalepeno with with lime zest horseshit...............................Which actually sounds kind of good now that i think about it.......minus the breading.

    I thought they were gonna show some next level wings. A toddler could make these. Everyone in the world knows it's deep fried wings with Frank's Red Hot with butter!
    Better & healthier way: 1- coat wings with flour, salt, pepper and paprika. 2- Put wings on baking tray with a couple table spoon of Olive oil brushed on the tray. 3- Cook at 400 F, flip them a few times and cook until crispy. 4- Mix Frank's with butter. Add onion and garlic powder (optional). 5- Mix both together well when both are hot still!

    This is how authentic Buffalo wings are done? Err where's a bit of coating on the wet chiclet to give em some crunch? or at least a bit of a pat down with some paper towel so it's not soggy. I absolutely agree with their blue cheese vs ranch argument but if no one is front flipping onto a walmart table while they're cooking it doesn't seem truly like proper Bills tailgate material

      Double-frying them helps add a nice crunchy outer layer (which they didn't do in the video). No coating needed to get that.

    If you don't have a fryer use baking powder and put them in the ovan it gets them crispier than frying them .Google it

    This is my favorite wing spot in NYC. I just hope this video doesn't make this place too popular so I can't get an order without having to wait forever. The place is super small and when you eat here you will smell like fried chicken the whole day. It's AWESOME! hahaha

    glad to see Sean is doing a little dive into the history of Buffalo Wings. I know its about 4 hours away but he should def go to Buffalo and try either the Anchor Bar or Duffs wings. Or wings from any pizza place in Buffalo for that matter.
