    Motz is _the_ burger connoisseur. Worked at this place called Surf Club of Quogue a few summers back and this guy happens to be one of the board members. By my luck, I worked a private party with him and he showed me his slider recipe. This guy is phenomenal at was he does. Respect.

    2:45 Same with sourdough for bread. Very common that the dough is passed on for generations. In elementary school we visited a famous windmill in my town that bakes pumpernickel and the baker said they toss old loafes in every new batch they make. So you basicly eat pieces of bread that were made centuries ago. Love the idea of making new things by using old stuff. A piece of history in every bite!

      They're easy to make. Use a mandolin slicer to get the onions sliced real thin, then salt them to get them to give up their moisture. Then use 80/20 beef and get the pan ripping hot.

    Tennessean here.....first time ever even hearing about Dyer's and the deep fried burger....One more fact that proves to me that western Tn and Eastern TN are completely different worlds lol (I'm in Chattanooga). this is not the first time I've found something in TN that I had never heard of, even after living here off and on for 26 years

      I'm from West TN and im actually from a place called "Dyersburg" so whenever I first visited beale st. in Memphis I naturally gravitated towards the place called "Dyers Burgers" when I was super hungry haha. I honestly didn't know it was deep fried but I did hear the legend of the 100 year old grease. Its definitely super good and the milkshakes are great too. So yea, Tennessee is definitely a long state that changes the farther east/west you go with geography and culture. I went to school at MTSU so I love middle and east TN too :}

    I ran an onion through my mandoline on the thinnest possible setting (paper thin) and tried the onion burger . . . it was fantastic. I made them for the whole family. This is a great video. Learned something new today to add to my cooking repertoire.

      He's not wrong, they are incredible. I made these for my wifes family and they were blown away. Trick is, you need to find the right bun that works well with it as well.
      SUPER THIN Onions, Cast Iron Griddle. 75% chuck from a butcher shop. I also pressed out a ton of the moisture out of the onions first.

    Louis's lunch in New Haven, CT is the mecca for burgers. It's one of the oldest burger joints in the US. They still serve their burgers on sliced bread. It's amazing.

      Went to Louis's Lunch with my Dad a couple years ago...it's a really cool experience and the burgers are legit.
      I've been to Ted's as well (both in Meriden and Cromwell)...the steamed burgers are great too.

    My neighbor across the street growing up in Florida had his own steamed burger rig, looked just like this one but bigger. I didn't know it was a regional thing, I just know he would always invite our family over if he was doing a burger cooking day. He even opened a restaurant for a short period of time, but it sadly never took off. Those steamed burgers were some of the best damn things I ever ate. Nothing fancy about them, just traditional toppings and tasty meat and cheese.

    From UK and I love finding out about different types of burgers like this. Excellent video. In the UK (and I'm sure in the US) in the last 10-15 years there has been a lot of burger chains popping up focusing on "Gourmet" burgers, so probably most famously GBK (Gourmet Burger Kitchen) where they add all sorts of weird and fillings.
    I was into it way back when, but now I'm back to the basics - smashed seasoned meat, cheese, ketchup, yellow mustard, pickles and onions (raw or fried - in many ways I like the crunch of the raw onion) in a bun (toasted on the inside preferable) nothing else required (apart from good fries perhaps :) )
    Therefore, totally agree with the point he makes at 10:33...

      You get some deeply fried bits of onion mixed with almost raw bits of onion it's flavor profile is beautiful

    The best trick to the steamed burger is to order it to go, leave it wrapped in the container for 15 to 20 minutes. 1. The cheese is molten lava, but 2. Letting the cheese congeal for me kicked it up a notch.

      Powers Hamburgers... restaurant in Fort Wayne, Indiana...has been making slider-sized burgers like that for GENERATIONS. They only have 1 store left, all original, cant fit more than 12 people inside, just smells of old grease and coffee. It has 1, small grill. That's it. Just burgers, chips, chili and pie ( apple, pecan or merengue), coffee or soda. Amazing!

      Frying in the same grease without ever changing it? How does it work, it sounds extremely unhealthy.

      1. They filter it each night to remove food particulates and contaminates.
      2. As the grease reduces over time, they add fresh grease. So it's not the same grease every single night, it's cycled.

    I want one of those burger steamers so bad. I used to live in the Northeast and I went to Connecticut every year for a convention, there was a Ted's like a block down the street from the hotel. But now I don't and I can't get my steamed burger fix. I have to say that I'm really thankful for this show because I've lived in all four corners of the US, the top and the bottom middle as well, so... learning all kinds of different foods, burgers included, is the only way I'll ever get my fix for regional foods from regions I don't live in anymore.

    Taking the steamed cheese concept but putting it in a wood smoked cooker would be amazing. Wood smoke infused cheese on a TN thin fried burger. Think I'm going to try that combination.
