    Hey Leah, I love the recipes, but just a tip for the Moroccan one! Tagine and couscous are technically 2 different dishes. Traditionally tagine is a thicker stew eaten with Moroccan bread or some baguette (we take pieces of bread and pick up the stew out of the pot/pan using the bread and our hands). Couscous on the other hand is usually made with a really brothy stew on top and is often served with buttermilk as the drink of the meal. Just thought I'd point that out if you ever want to try more Moroccan dishes, love the video!

    Couscous is such a life saver when you don’t have much time to cook and you’re craving some good ol carbssss 😍 I cook a 5 min salad with it, with fresh tomatoes, olives, onions, garlic and maybe some feta cheese, with a simple olive oil dressing and some herbs, and it’s soooo refreshing and tasty!

    Black salt makes the difference for vegan "egg" dishes. You can find it in the Indian cooking section of grocery stores if your shop has that.

    When he said that the Tajine is not typically like a dish that you present beautifully, I was shocked because, as a Moroccan, I was like, how'd he know? That aside, cooking a Tajine in a clay pot tastes HELLA different and delicious but doing so in a regular cooking pan is okay.

    I had a tajine and couscous mania a few years ago, so I know how it feels ! These are definitely comfort food !
    And agreed about the joys of discovering a new recipe. I've been cooking for more than 24 years, now, after my mom taught me the basic logics and steps of chinese cooking, and it has been a merry chase of textures, tastes, flavors, and colors ever since. Well, not everyday, of course. There are sometimes some long periods of time when I just get comfortable and always cook the same 4-5 dishes over and over again. But every once in a while, I get curious about an ingredient I never tried cooking before, realize how easy it is (hello chickpeas and couscous), and just incorporate them in almost all my previous dishes,
    Now my dishes are like monstruous mountains of random lego pieces patched together ^^. (but still tasty ^^)
    Or I just come up with entire new dishes altogether. And when it works, the feeling is just so glorious ! You feel like you've climbed on top of a mountain with a beautiful view, or something.
    So, where do we post our own recipes for you to try next ?

    Leah cooking couscous IN BOILING WATER is suffocating for my north African ass also vergan tagine is pretty impressive bcs traditional tagine is DEFINITELY not vegan (this cooking vid has a very north African taste to it LOVE THE DIVERSITY)

      Tajine can easily be made vegan, all you have to do is take out the meat. I have it all the time back home

    Hey, if you ever want some indian black salt (or Kala namak, make sure to not take just "black salt" because it could be only salt with activated carbon) to give that eggy flavor (really convincing), there's some at Épices de cru in the Jean-Talon Market ;)

      I know this sounds super long but we should be called archaeobotanicals - they are plants which you search when you do field work (fieldnotes) and it is the research of historical plants for food/medicine (very on brand for Leah)!

    Ras al hanout is a spices mix! I was surprised when I heard you saying Ras al hanout haha
    Ras al hanout means literally 'The head of the shop' in moroccan, it's like all the best spices mix the shop has to offer
    You should try more of Moroccan food! I think you'll enjoy it!

    One suggestion try Indian dishes most of them are vegan and very delicious and nutritious and with the chickpeas the most famous indian food is Chole bhatoore please search the recipe online and try it

    Hey Leah ,for the chickpea recipe you made in the beginning it is an Indian regional dish . We call it cheela and not omlette at all !!😅😂 Its pretty famous in bundelkhand region the spices such as turmeric are mostly used in Indian food. Would love if you see this 🥰
    Ps. A little tip on making that: don't put too much batter on the pan its supposed to be thin like rice paper .

    5:50 small vegan cooking tip: black salt is also called "kala namak" so maybe you can find it somewhere under this name, and PLEASE! do not use a whole teaspoon of it!!!!! for me, a tiny tiny pinch is always enough because it tastes soooo egg-y it almost reminds me of foul eggs if i use too much???? and we don't want that in our omelet right? 🤗 but feel free to try for yourself of course! 💫

    You don't necessarily need to put the Tajine in the oven. Simmering it on the stovetop is also fine. This is what we do all the time and it also works super well! 😊😊😊

    in Brazil we call this recipe "Grãomelete" which is a vegan version of the omelet, but made from chickpea flour and vegetables. we vegans love this recipe ❤️ it's so practiced, delicious and nutritious! I like to add carrots, spinach, onions, leeks and tomatoes, very good!
    test the recipe of Brazilian cheese bread. the original recipe is made with cheese and polvilho (I don't know how to speak polvilho in English haha) , but the vegan version can be made too! is a typical food from Minas Gerais in Brazil 🥰 Brazilian recipes are so good 😭 Abraços do Brasil 🇧🇷🇧🇷🇧🇷

    cous cous is literally the easiest thing, i just put in a bowl and pour hot water and add some spices, let it sit for a bit and then add cucumber, bell pepper and red beans. Season with more salt and pepper if needed and add a bit of oil and lemon juice. Super easy, quick, yummy meal.
    ooor I put in in pan and just add garlic and zucchini :)

    17:27- I gor really anxious about this pan falling off from a stove xd. Happened to me couple times so I recommend always moving the holding part(don/t now what is it called like in en) to the side so you don't accidentally knock the pan off the stove

    Hey Leah, I'm so surprised you've never made couscous before (it's in like 90% of savoury meals at my house lol), but then again your staple dishes might be something I've never tried before which is kind of cool. Anyway, a quicker way to cook couscous is put it in a bowl of water, put a covering over it and microwave it (probably start at like 1min) or you can just put it in a bowl, pour boiling water over it, cover the bowl and leave it to fluff!

    hi its not my own recipe but you could check out the channel called 'Veggie Bear' if youre interested in making korean dishes :) they are pretty much all vegan, simple, and also authentic(homecooked style)!

    Buy chickpea flour at Indian store , if you have one in your area. We Indians use chickpea flour in lot of our dishes; and don't throw away the canned chickpea liquid, you can make meringue or macaroons from it(substitute for egg white)

    Cous cous tip for lazy people - no cooking involved! Swap however much water in the recipe for tin of chopped tomatoes/pasata/pasta sauce whichever you've got and mix it into the cous cous, then leave it to soak in for 30 mins or really good to do overnight. The cous cous doesn't need cooking it soaks up all the tomatoey goodness and is delicious X

    Just search up how to make roti ^^ we usually add a little olive oil and for my sister (who is picky) a little salt. Other than that eat plain or with some aloo and channa curry. You can search up done recipes for that too. It’s potatoes and chickpeas keke 😊 Guyanese dishes are kinda a bunch of different cultures food mashed together and is really good. Plus don’t see people mention it much!

    If you're looking for cheaper chickpea flour, try a local Indian/Bangladeshi/Pakistani shop and look for 'Besan' which is the local term for chickpea flour. This stuff is mad cheap around these parts of the world so I hope its cheaper in those shops too

    Chickpea flour is is also known as besan flour and is much, much cheaper if you buy it at an Indian or Asian supermarket. :)

    You can get ras el hannout at Anatol on St-Laurent in Little Italy. You can get everything there, it's such an awesome place. It's also sometimes called couscous spice.

    chickpea flour is 'besan' in hindi and way cheaper at indian grocery stores! get it from there! suppourt local & ethnic

    I looked forever for black salt in grocery stores and finally gave up and bought some online and I don’t regret it at all! It’s almost creepy how much it tastes (and smells) like eggs. My boyfriend and I love it on avocado toast and when making vegan egg recipes.
    If you want a recipe that will blow your mind try the “Deviled Potatoes” recipe from “It Doesn’t Taste Like Chicken”, you’ll need the black salt though!
