Minor correction: Bún cá rô đồng was a dish from Hải Dương, not Hải Phòng. The dish from Hải Phòng that you were thinking of was probably bún cá Hải Phòng, which is with deep fried fish and tomato-based soup. That thick bone-based soup you were having is the dish from Hải Dương. Rô is the name of the fish (anabas), cá rô đồng (Anabas testudineus, accordign to wiki) is the type of cá rô that lives in muddy water areas. We call things that live in those areas "đồng" such as cá rô đồng, cua đồng, etc. Cá rô đồng is common in many northern dishes as it was kind of a poor people fish. It lives everywhere from ditches, ponds, paddy fields; it eats a lot of things including trash; and it has a shit ton of small bones so people usually have to cook it for a very long time so that the bones don't stab your mouth while eating it.
Bánh bò is actually a cake, translating to English is 'honeycomb cake'. Look in the internet for different version. I love two of them. But I never eat them together in a sandwich like a lot of my people, who prefer to enjoy them that way. I enjoy the fatty ' bánh tiêu' separately and prefer to eat the green bánh bò' with a cup of coffee or tea. 'Cá rô'= perch is a common fish in the Mekong delta. Love your food tour very much. Please review some vegetarian options again soon😀
when you sandwich Bánh Tiêu and Bánh Bò together, we have a fancy name for it: Ếch Ngậm Ngọc (Toad hold Jewelry, or Money Toad), like a Feng Sui figure you sometimes find in Chinese places. It come from an old funny tale. When a newly bride first time cook dinner for her mother-in-law, her mother-in-law then ask what is she cooking. She answer alot of fancy food name including "Ếch ngậm ngọc", which make her mother-in-law looking forward to it. But in the end they are all pretty common dish, and "Ếch ngậm ngọc" is just Bánh Tiêu and Bánh Bò sandwich (Bánh Tiêu look like a Toad from outside, and green Bánh Bò look like a big jewelry)
at 16:10, the outside is banh tieu (chinese origin), and the green stuffs is banh bo. both are usually eaten separately but people in the mekong delta often eat both like a sandwich.

quick tip when stiring the mắm tôm aka shrimp paste, is that u tend to add a lot of kumquat juice, then when u stir it, u stir in a circular motion, for ex clockwise, and only follow that motion, no ziczac or anti-clockwise, and this might already being done, but u can ask them to add a little bit of their boiling cooking oil, this would give you the perfect foam every time

When I was last in Saigon, there was a brunch place in Thao Dien that served a banh tieu breakfast sandwich (sausage, eggs, pickled onion, and siracha mayo.)
We also have that thing you're looking for, with the savory meat fillings, it's called bánh bao chiên, smaller than a steamed meatbun. Usually they sell it with bánh bò bánh tiêu bánh quẩy. Maybe that vendor of yours didn't happen to sell it.
Chad, that bánh quảy is very 😂similar to churro version in Spain in terms of taste. But in Spain they dip their churro in warm chocolate sauce, yummy!!!. So, every time I miss that Spaniard churro I’d buy that quay and make myself a chocolate sauce to dip in, great replacement!!!
There's actually a Vietnamese place in the US that make bánh tiêu in house and use it as wrappers. I think I saw them in a Guy Fieri video. Also bún cá/fish noodle might be the most underrated Viet dish.

If you want to try something new, I'd recommend trying Phở khô Gia Lai. It's a dry noodles dish from the Central Vietnam area. My favorite spot is Phở khô 2 tô Gia Lai - Chú Cuội at 57/F Number 2 Street, Thủ Đức. I would love for you to try this dish out.
One day you should try Banh Tieu or Banh Quay dipped in hot milk coffee for breakfast, it's very delicious, it's one of the delicious dishes that the elderly love, I recommend you try it the way I show you.
i highly recommend "Bò bít tết số 9" on Mai Văn Vĩnh street, District 7. i've been eating at this place for over 20 years. I know this is not a decent Vietnamese dish, but you should try. The place only opens in the morning (maybe until 12PM).
That weird steamed rice cake sandwich is basically combining 2 very traditional chinee items. The Chinese steamed rice cake isn't usually green (it's usually white made with white sugar or brown made with brown sugar & fermented rice batter. I like it but it's definitely a acquired taste. The "donut" is traditionally eaten at breakfast with rice porridge, the sesame on top is a Vietnamese twist.
The Chinese steam rice cake is called 白糖糕 - báitáng gāo in Mandarin, which literally means white sugar cake. I love it! The fried hollow doughnut of Cantonese origin is called Ham Chim Peng 咸煎饼. It usually has two flavors, sweet (with sweet red bean paste inside) or savory (with five spice or glutinous rice). You can find both báitáng gāo and Ham Chim Peng all over S.E.Asia. I've never seen anyone put these two together, so it must be a pretty interesting and strange....lol.
Is that rau diếp cá in your bún đậu ? That's an odd one. In Hanoi I have only seen bún đậu with kinh giới and maybe tía tô. Seems like southern folks really love their herbs and have the tendency to herbifize things.
for foodhunt you must try bánh dừa and bánh kẹp, i know a vendor sale it, she 's in front of Lộ Thiên Quán, 37 street and Mai Văn Vĩnh street, about very 8-11am every morning. I eat bánh dừa every week
a bit late on the recommendation of another bún đậu location since you've already done twice , but next time you think about bún đậu, maybe try out bún đậu Chí Phèo, there's one over District 4, they serve filling portions and also add a bit of oil/pig fat (not sure which one) in the shrimp paste. Nice video tho!
