There will be no exact amount of water because each type of rice absorbs a different amount of water, so we can only estimate how much is enough. It will be a little wet or a little dry, if you are lucky the rice will be cooked well.

I grew up in a white neighbourhood in Canada. I was embarrassed about and rejected Korean food because I wanted to fit it. The white kids around me ate processed foods. Now as an adult I am so grateful to my Mom for teaching me healthy eating habits that set me for life.

Back just before the pandemic, I visited Hanoi and there learned to make a steamed bitter melon dish in which the gourd is cut into chunks and the "rings" are stuffed with a tofu mixture. Exceptionally yummy! Back home in Toronto, the challenge is that bitter melon tends to packaged in plastic with several of them them, more than I can cope with. I'm going to try the stir-fry!
With bittermelon, you need to cook them for a long time, up to 1h, and it will taste less bitter. Try minced pork stuffed bittermelon soup, cook for at least 1 hour, it is amazing.

The best tasting veggie we ever had, with minimal issues, is our home grown eggplant! Smaller, about 6 inches around and shorter. The seeds are so soft and are no problem eating them. I stir fry them or roast and it is better than any other eggplant we have ever eaten!

Marinade generally lemongrass, fish sauce, sea salt and pepper..sometimes sugar if I feel…i use thicker chops that are more juicy than the thinner varieties commonly used and I often slice the chops then place it on a plate for the family to enjoy from. Broken rice is ok but normal jasmine rice is eaten most in my experience
Your amazing wife surely knows how to choose pork loin. Those pieces of loin are called (by my mom) the “dragon heads” pork loin as they are the best in terms of quality. An outer ring of fat and held together by a piece of bone. Delicious!

When i cook with an air fryer, it normally goes with a bag of paper specially used for it so when we fry, we can put paper under the food before we cook so it can get less messier. I hope this helps
