There are green crabs that are considered invasive species found in the US East Coast (Maine). They are European green crabs, about the size of the filed crabs you showed in the vid, some how found its way into the US eastern seaboard many moons ago. Locals don't know how to deal with them. Past summer I bought 10 lbs (dirt cheap) and decided to make the "Riêu" out of them. To my surprise, the Bún Riêu tasted way much better than using the filed crabs. I think all Viet restaurants in the US should consider using these type of crabs for their Bún Riêu . It is a win-win.

I prefer the Bun Reiu Oc. I live near San Diego, Ca. There is a Restaurant that specializes in Hue soups.. They do have the Bun Bo Hue, and it is the most popular, But I prefer the Bun Reiu Oc with the blood, fried tofu, and of course the shrimp paste! Great video! Thanks for all you do!
My parents are immigrants from vietnam in germany. It has been hard for us when I was younger to get proper Bun Rieu, so they substitued crab meat with pork mince and it has become one of my favorites.

Most soups in Vietnam are better than Pho. Lol. I've dated my gf for 4 years. We've never eaten pho or banh mi. She prefers bo kho. I am a Mi Quang guy. We pay 50k for a bowl of bo kho. 40k for mi Quang. I don't even know how she feels about pho. We've never spoken about it. We both love Bun Rieu, Bun Bo Hue. It's weird but we've never even talked about pho. Never came up. I'm going to have to find out. Ha. She's fickle. Agree about Bun rieu. The broth is unreal.
I see that you really like to eat all the noodle dishes from the North to the South, but in fact there are also noodle dishes in the Southwest region that you don't know about, such as: Bun Ken, Bun Xiem Lo, Bun Suong, Bun Goi Da, Bun Nham, Bun Nam Bo Choc, Bun Quay...etc. Each province in the Southwest has its own unique dishes that create the identity of that province.

The number of Bun bo shops is more than the number of pho shops, the favor of Bun bo is more accepted than Pho favor. some shop they cook Pho but it is not quite acceptable taste it 'd better closed soon, but the Bun bo is different, it 's like the Banh mi (bread) they can ajust and add variety toping what makes their Bun bo going in a far away compared to the original taste.
The raw meat in VN must be really cheap to be able to sell the bowl like with that much meat in it. Imagine that in the States, can't be less than $10 because the price of meat is so expensive.
The price per pound of beef, pork, chicken in VN are comparable to what you could find at walmart actually. Lower rent and labor are how those could be sold at such prices
I always found it weird how simple and vague the names of some of these dishes are, but the more I thought about it the less I thought that. Like, is bun moc really that different than naming a dish spaghetti and meatballs? We all know what that implies, but nothing about the name would suggest a tomato based sauce to a foreigner.
It's so sad that you chose a southern style place for the Bún Mọc place. The original name of that dish is Bún Bung, and there is a place call Bún Bung Mai Hạnh on Yên Thế street near Tân Sân Nhất airport sells the authentic Hà Nội style Bún Bung. She also has authentic Vietnamese beverage too. Bún Mọc/bún Bung is served with Dọc Mùng/bạc Hà, not with bean sprout or babana flower, and not with sate either 😂 that's all Southern style Bún Bò adaptation. I'm Hanoian lived 3 years in HCMC, if you want to find authentic Northern style Noodle dishes, go to the community next to Tân Sân Nhất airport.
Sorry for the rant. Bun Moc is my top 1 noodle soup so I want you to experience the authentic style. The indicator for Authentic Hanoian style noodle soup is it never comes with side vegetable, everything should come in the bowl.
Bún = angel hair Bún (larger) = spaghetti Bánh phở or hủ tiếu = linguine / fettuccine but sometimes you can find the width can be smaller or larger👍 Pasta makes from wheat/semolina on the other hand bún / bánh phở are from rice flour.
I am as Vietnamese as they come but i am not fond of any fermented sauce with the exception of fish sauce. i can eat plain rice with fish sauce no problem but i cannot stand the other fermented sauce. It reeks so bad. My wife loves those smelly sauces though.

The three bún, bún mọc, bún riêu, bún bò Huế are my favorite too and you've picked the true contenders to phở amongst many noodle dishes in VN .. BUT they're not better than phở, even at their best. I've had really well-made bún bò Huế which is in fact better than most average phở, but it's not as good as the best phở! Btw, all three dishes you've had here are a bit off the mark recipe-wise compared to their 'original' versions .. People have been experimenting too much, especially in cities, to try to differentiate with other vendors, but really, those are just weak imitations, and they become almost alike to each other!! Not good. Individually, they can be very, very good when well-made with their own unique characteristics.
