Whats the shelf life please?
6-12 months of thoroughly dried
Why no grind with the peelings? Why peel it off?
It’s optional to add the peels. but the peels add brownish color to the flour

Why to blanch and remove the skin? Can it not be done with skin on?
Removing the skin makes the flour white/clear but with the skin on, the flour is brownish
