I saw another recipe. The same but where you cook almond milk after this procedure. Not to boil it, stirring it several minutes just below the boiling point, so it gets thicker. No artificial thickeners, all natural. You get more real milk rather than an almond tea. After leaving it in the fridge it won't get separated, the consistency is always the same. I love it that way! I was giggling when you said it, sorry, lol. I don't drink any kind of milk. If I need milk for a recipe, I just add water to my cream. I like the fact that you can make almond flour with the pulp though. More versatile this way.
There is no comparison between store bought and homemade! I make a blend of almond and cashew for a change too. Love the idea of making the super fine flour. That just didn't occur to me and I used the nut "crumbs" in a bases for tarts and pies. Nice one!
Be sure to soak cashews overnight to remove most of the lectins. Cashews contain high amounts of lectins which are harmful to beneficial gut bacteria. Check out Dr Gundry's channel for more info. Or simply Google it for soaking techniques.
Very Neat! We were buying an Ice Cream Shop, and the current owner and I were at the counter. An elderly lady walked directly to me and announced in a very loud voice: "Are your Nuts Wet?" The current owner spun around and headed to the back so she would not laugh in the lady's face. I calmly explained that no, we do not carry wet nuts as they are loaded with preservatives that our company, (Ben & Jerry's) does not use. She was not all that impressed, but bought a Sundae any way with Extra Fudge to make up for no wet nuts. Day in the life. Thanks Steve. This was neat.

I'm in week 2 of trying to eliminate dairy to get me off of a 18 month weightloss stall, and it's been going well... except for not being able to put HWC in my coffee. Speaking of silly...you may have been trying not to giggle, but I almost fell out of my chair laughing several times. I had to explain to my husband why I was hysterical. Some of the extra things I see on the Costco label are: sunflower lecithin, locust bean gum, gellan gum and zinc gluconate -- as well as a number of vitamins. I'm sure most of this stuff is to make it shelf stable and keep it from separating, but it just makes it taste unnatural to me.
Serious Keto, Not being natural, the gums are added to give products a “natural” mouth feel. I make my own sour cream, mayo, Worcestershire sauce and the such which DOES taste better and as you say, “you know what’s in it”. Thanks 😊
Same. I HATE soy milk (tastes like wet cardboard to me) and have not been a fan of almond milk (store bought) but I'm thinking maybe I can try this and see what I think... worth a shot!
Cute kid! My daughter would be just rolling her eyes during the taste test to demonstrate how "stupid" I am for being Keto. I used to make Almond Milk frequently but always discarded the squeezlings...never thought there was much taste left to use but I'll wait for your results.

I like the fact that nothing gets wasted, since you turn the strained almond meal into flour! I bet you could also just make almond milk by adding water to some of your homemade almond butter, which would be handy for people who don't necessarily drink almond milk but really just use it as ingredient in recipes.

I finally bought a pound of almonds..blanched and skinned them. They are soaking over night and I'll be making the almond milk and flour tomorrow. I admit that I'll pay more for the already blanched almonds when I can. Taking skins off a pound of almonds is comparable to stubbing my little toes over and over
I just made my first almond milk last night with my new Nama J2 and had no idea how to turn the pulp into flour. Ever since the pandemic started I started making my almond milk with almost The same recipe except that I add 1 cup of heavy cream and one cup of water blended with a quarter teaspoon of xanthan gum, and it's been working wonderfully with my daily latte.
I like all your videos , i do almond milk for 7 years now with some nuts . I'm in keto and intemmtin fasting for longtime, but i do croker with pulp mixing flaxseed and cook them in dehydrator. Thankyou for sharing friends stay healthy ..

I make this all the time, pinching the skins off the almonds first. I just throw the almond flour in with my store-bought bag of almond flour. Love your experiments!
I love the almond milk and now make it regularly. Use the unblanched (being a little lazy) and have found the flour can be used whilst still moist straight into my favourite chocolate brownie. Choc brownie with glass of ice cold almond milk delish. Thank you from UK.

Since I buy almond flour in bulk, I will have to give this a go. I am currently paying 12 bucks/pound here in Chile. Whole almonds are about half the price.
And you get two for the price of one. Almond milk and almond flour. You could look at it like getting the almond flour for half price with free almond milk.
Well, now I've got to try the Kirkland stuff, because, I compared Walmart's almond milk with Silk; and I think that Wally's tasted much more 'plain' ...in a good way. So if the Kirkland brand beats Wally's then I guess it's time to give yours a shot. (that's my logic :P) The Wally brand is about $2.50 per half gallon. I'm not one that likes spending time in the kitchen, so, that's also a factor. All the same; I love what you do on this channel!

I just made almond milk from almond flour and got the same white pulp. I'm dehydrating it now to use in recipes. All you need is one cup almond flour to four cups filtered water and blend for about 3 to 4 minutes. It tastes good.
O.M.G l was thinking of doing that as l was desperate trying to get hold of powdered Almond flour this is great thanks l need to buy a dehydrator this great Almond butter, Almond milk and powdered Almond flour so cool thanks ever so much.
I made the almond milk, regular, and then flour. Loved it. Using up my store bought and then only making homemade. My husband loved it too. By the way, you should maybe mention that the almond milk separates after a bit and needs to be shaken. The store bought...not sure cause I cannot see through the container. I’m thinking the added ingredients they put in it prevents the separation.
My kid (16-year-old) is trying to eat keto, but really misses milk. Going to try this out with her, Thanks! Also on the two for one topic, in the Pan-head burrito video, you said paneer could be made. So I did (almost 2 pounds from a $2.45 gallon of whole milk, cheese needed to be dried a little more), also dehydrated the whey. Whey powder might take a little more practice, but it turned out OK.
I have been making almond milk for a few years too. I have never tried making it with blanched almonds. I’ll give that a try next. I’ve always “soaked my nuts” in water with salt. I thought that was the big part of neutralizing phytic acids and making them more digestible. When I saw your blanched nut butter, I soaked mine in salt water and pinched the skins off. I kinda forgot about the actual blanching part. But if that’s just to get the skins off, soaking seemed to do it also. Hey hat might just save a step 😊
Great video Steve! Im by no means a baker or cooking expert but i have always noticed that store bought almond flour (kirkland in my case) is always sort of large in particle size and not as "dry" as flour and i always wondered if that was part of the reason most keto breads end up so dense. As a secondary experiment, when you compare your ultra fine almond flour, i wonder if you could also try dehydrating store bought stuff and running through a food processor too to see if it makes a difference. Thanks! p.s. my wife uses the kirkland almond milk, i might have to try to make some and have her blind taste test!
Making the almond milk and almond butter is so easy and cost effective. I have made my almond milk for almost 20 years. I would not even think of paying more to buy either item. I am so glad you have added this to your video offerings and that we could compare notes in the process. I have not used dairy milk for drinking for 2 decades. I use this in almost any recipe that calls for dairy milk. Excellent substitute.

Great video Steve! I'm fortunate to have an Aldi's near me that sells Almond Milk for $1.29 per Half Gallon. It probably doesn't taste as good as yours, but you can't go wrong for that price. I definitely make my own Blanched almond flour though 👍
I like that you don't let anything go to waste. I was wondering since I do like almonds and almond flour but I don't like almond milk, would I like this any better than the store-bought almond milk? I tried making ice cream that used almond milk once and it was horrible. No matter how much flavoring I used it still tasted like almonds.
I can tell you that the blanched almond milk just tasted cream and mild. Store bought ads several thickeners and other ingredient to make it shelf stable and keep it from separating. After drinking the homemade stuff, I find the commercial stuff to be pretty unpleasant.
I just bought almond/vanilla unsweetened yesterday @aldis. I haven't found an almond milk that I particularly like the taste of on its own. I usually just use it to make protein shakes. When I'm ready to go back to almond flour I am definitely going to start doing this rather than buying it in the store.
So glad I bought my milk bags way before this video ( they *were* cheap 😅). Ideas pop into my head for the almond flour you made (dusting cake pans) or, in the pre- processed state, using it as part of a "crumble" topping with chopped nuts & coconut. What do you think, too dry for that, even with the requisite butter?
I make my own after reading how little "almonds" are in the store brands. (there was a class action suit for that reason, false advertising). As for the almonds themselves, I buy the almonds (Costco) with their skins on, and soak them in my Instant pot. 3 mins high pressure cook time, and you can now continue to make your milk using a nut bag. The end product is definitely superior to store bought.
If you are interested in making the almond milk a little thicker, take about a cup and put it in a pan and bring it to a boil (not rolling, just bubbles around the edge of pan) This will thicken it and you add it back into the rest of the milk.
I have used that plunger pitcher for 20+ years. When it broke recently, my 20 yr old son asked how we were gonna mix drinks... yeesh... well i bought a new one online and now the world is as it should be again..
I'm definitely going to give this a go! Almond milk is pricey here in NZ. AND, if you read the carton of those store bought brands, they only have 2.5 - 4% almonds in it! The rest is water, brown rice/tapioca starch, salt, vege gum/thickener and calcium carbonate. Rip off!

Hey Steve, just wanted to share a hack you may be interested in only cuz I know you have an Instant Pot. I've been making homemade almond milk for a few years but not doing overnight soaking anymore for about 3 years. You can do the 1 cup almonds and 1 cup water in the Instant Pot for 4 minutes, drain and rinse under cool water and remove the skins, then into the Blendtec (I have one of those too haha) with the 4 cups water and makes awesome almond milk. Doing the pressurizing eliminates the negative effects of the phytic acids, at least for me, as well. Hopefully you give it a go sometime to see if you like it.
I love that idea! I have an instant Pot but rarely use it. Just wondering can you make several batches and freeze it? I figure if I am going to drag out everything might as well make a few batches at one time, but I really can't use it up fast enough since no one else in the home will use it, they drink only cow's milk.
@LF I don't know, I've never frozen it...but it keeps in the fridge for about 4 days because of the lack of preservatives in this unlike the store bought which has lasted a couple weeks. I've never gotten past the 4 day mark because when I make it, it's gone before that. Wish I could help with that information
@LF the other hack I know if you want to make smaller quantities is to take 3 tablespoons of jarred or homemade almond butter put that into a high speed blender with 1 1/2 cups of water and blend it for about 90 seconds. I call it the Lazyman's Almond Milk...it yields about a pint. I just made some this morning which is what made me think of it
I love the blanched almond milk or without the skins. I soaked mine overnight and then peeled so I guess they are not rally blanched. I blend 3 minutes in my Ninja. I find it so much creamier when blended just one additional minute. They peel fairly easily when soaked. Took me 45 minutes for 2 cups. Just wish there was a faster way to peel them. If you come across any tips, please share. Thanks for your great videos. I really enjoy your channel.
In terms of peeling, I've only done the brief boil method and they almost jump out of their skins. It's still sort of tedious, but I'll put on an audio book while I'm doing it and find that makes the time pass more quickly. If I could find a store around here that has bulk blanched almonds at a good price, I'd be all over that.
Serious Keto I’ve bought blanched almonds from Nuts.com, they’re pricey but so worth it! At the holidays I bake for family and my biscotti calls for 2 pounds of blanched almonds. It used to take forever and a day to do it, until I learned about Nuts.com. I know you mentioned a local store but here’s another option.

I finally bought a pound of almonds..blanched and skinned them. They are soaking over night and I'll be making the almond milk and flour tomorrow. I admit that I'll pay more for the already blanched almonds when I can. Taking skins off a pound of almonds is comparable to stubbing my little toes over and over
I just made my first almond milk last night with my new Nama J2 and had no idea how to turn the pulp into flour. So I put it in a glass storage container and in the fridge, to deal with it in the morning. I figured TH-cam might help me out and you delivered! THANK YOU! 💖 Now I'm gonna go dry and pulverize it. 😉

Thank you for the reminder, I use to make homemade almond milk years ago, and honestly got out of the habit. At that time I would put dates in it, but now doing keto I won’t do thatN thank you Steve!

Ever since the pandemic started I started making my almond milk with almost The same recipe except that I add 1 cup of heavy cream and one cup of water blended with a quarter teaspoon of xanthan gum, and it's been working wonderfully with my daily latte.
I have to try this. My husband misses milk and hates almond milk. Hopefully this will help👍
I like all your videos , i do almond milk for 7 years now with some nuts . I'm in keto and intemmtin fasting for longtime, but i do croker with pulp mixing flaxseed and cook them in dehydrator. Thankyou for sharing friends stay healthy ..

I make this all the time, pinching the skins off the almonds first. I just throw the almond flour in with my store-bought bag of almond flour. Love your experiments!
I love the almond milk and now make it regularly. Use the unblanched (being a little lazy) and have found the flour can be used whilst still moist straight into my favourite chocolate brownie. Choc brownie with glass of ice cold almond milk delish.

Since I buy almond flour in bulk, I will have to give this a go. I am currently paying 12 bucks/pound here in Chile. Whole almonds are about half the price.
And you get two for the price of one. Almond milk and almond flour. You could look at it like getting the almond flour for half price with free almond milk.

Well, now I've got to try the Kirkland stuff, because, I compared Walmart's almond milk with Silk; and I think that Wally's tasted much more 'plain' ...in a good way. So if the Kirkland brand beats Wally's then I guess it's time to give yours a shot. (that's my logic :P) The Wally brand is about $2.50 per half gallon. I'm not one that likes spending time in the kitchen, so, that's also a factor. All the same; I love what you do on this channel!

This was a great video. So you "sprout" after you blanche. I'm glad I focused in on that. I'll say it again...this was such a great video! I'm looking forward to you using the flour in some recipes. I'm curious how well it will perform. I'll bet it work well with one of the tortilla/flat bread recipes.
I just made almond milk from almond flour and got the same white pulp. I'm dehydrating it now to use in recipes. All you need is one cup almond flour to four cups filtered water and blend for about 3 to 4 minutes. It tastes good.
I'll have to give that a try and compare it. It would certainly be a heck of a lot less work.
Just an FYI, I ended up with 1/2 cup almond flour and 4 cups of almond milk.

I made the almond milk, regular, and then flour. Loved it. Using up my store bought and then only making homemade. My husband loved it too. By the way, you should maybe mention that the almond milk separates after a bit and needs to be shaken. The store bought...not sure cause I cannot see through the container. I’m thinking the added ingredients they put in it prevents the separation.
I’m pretty sure I mention it in the video when I talk about the plunger pitcher.

Also on the two for one topic, in the Pan-head burrito video, you said paneer could be made. So I did (almost 2 pounds from a $2.45 gallon of whole milk, cheese needed to be dried a little more), also dehydrated the whey. Whey powder might take a little more practice, but it turned out OK.

I have been making almond milk for a few years too. I have never tried making it with blanched almonds. I’ll give that a try next. I’ve always “soaked my nuts” in water with salt. I thought that was the big part of neutralizing phytic acids and making them more digestible. When I saw your blanched nut butter, I soaked mine in salt water and pinched the skins off. I kinda forgot about the actual blanching part. But if that’s just to get the skins off, soaking seemed to do it also. Hey hat might just save a step 😊

Great video Steve! Im by no means a baker or cooking expert but i have always noticed that store bought almond flour (kirkland in my case) is always sort of large in particle size and not as "dry" as flour and i always wondered if that was part of the reason most keto breads end up so dense. As a secondary experiment, when you compare your ultra fine almond flour, i wonder if you could also try dehydrating store bought stuff and running through a food processor too to see if it makes a difference. Thanks!
p.s. my wife uses the kirkland almond milk, i might have to try to make some and have her blind taste test!

Making the almond milk and almond butter is so easy and cost effective. I have made my almond milk for almost 20 years. I would not even think of paying more to buy either item. I am so glad you have added this to your video offerings and that we could compare notes in the process.
I have not used dairy milk for drinking for 2 decades. I use this in almost any recipe that calls for dairy milk. Excellent substitute.
And going with blanched almond milk really makes a difference, in my opinion. Just so nice, and white, and creamy. 😋

Great video Steve! I'm fortunate to have an Aldi's near me that sells Almond Milk for $1.29 per Half Gallon. It probably doesn't taste as good as yours, but you can't go wrong for that price. I definitely make my own Blanched almond flour though 👍
I like that you don't let anything go to waste. I was wondering since I do like almonds and almond flour but I don't like almond milk, would I like this any better than the store-bought almond milk? I tried making ice cream that used almond milk once and it was horrible. No matter how much flavoring I used it still tasted like almonds.
I can tell you that the blanched almond milk just tasted cream and mild. Store bought ads several thickeners and other ingredient to make it shelf stable and keep it from separating. After drinking the homemade stuff, I find the commercial stuff to be pretty unpleasant.

I just bought almond/vanilla unsweetened yesterday @aldis. I haven't found an almond milk that I particularly like the taste of on its own. I usually just use it to make protein shakes.
When I'm ready to go back to almond flour I am definitely going to start doing this rather than buying it in the store.
I'm so excited to make my own milk. I purchased cotton nut bags, hope they work as well. Really looking forward to getting the super fine flour.

Ideas pop into my head for the almond flour you made (dusting cake pans) or, in the pre- processed state, using it as part of a "crumble" topping with chopped nuts & coconut. What do you think, too dry for that, even with the requisite butter?
I think dusting pans would work well. I don't know that I'd eat it as part of a crumble, though...

I make my own after reading how little "almonds" are in the store brands. (there was a class action suit for that reason, false advertising). As for the almonds themselves, I buy the almonds (Costco) with their skins on, and soak them in my Instant pot. 3 mins high pressure cook time, and you can now continue to make your milk using a nut bag. The end product is definitely superior to store bought.
If you are interested in making the almond milk a little thicker, take about a cup and put it in a pan and bring it to a boil (not rolling, just bubbles around the edge of pan) This will thicken it and you add it back into the rest of the milk.

I have used that plunger pitcher for 20+ years. When it broke recently, my 20 yr old son asked how we were gonna mix drinks... yeesh... well i bought a new one online and now the world is as it should be again..
I'm definitely going to give this a go! Almond milk is pricey here in NZ. AND, if you read the carton of those store bought brands, they only have 2.5 - 4% almonds in it! The rest is water, brown rice/tapioca starch, salt, vege gum/thickener and calcium carbonate. Rip off!

Hey Steve, just wanted to share a hack you may be interested in only cuz I know you have an Instant Pot. I've been making homemade almond milk for a few years but not doing overnight soaking anymore for about 3 years. You can do the 1 cup almonds and 1 cup water in the Instant Pot for 4 minutes, drain and rinse under cool water and remove the skins, then into the Blendtec (I have one of those too haha) with the 4 cups water and makes awesome almond milk. Doing the pressurizing eliminates the negative effects of the phytic acids, at least for me, as well. Hopefully you give it a go sometime to see if you like it.

I love that idea! I have an instant Pot but rarely use it. Just wondering can you make several batches and freeze it? I figure if I am going to drag out everything might as well make a few batches at one time, but I really can't use it up fast enough since no one else in the home will use it, they drink only cow's milk.
@LF I don't know, I've never frozen it...but it keeps in the fridge for about 4 days because of the lack of preservatives in this unlike the store bought which has lasted a couple weeks. I've never gotten past the 4 day mark because when I make it, it's gone before that. Wish I could help with that information
@LF the other hack I know if you want to make smaller quantities is to take 3 tablespoons of jarred or homemade almond butter put that into a high speed blender with 1 1/2 cups of water and blend it for about 90 seconds. I call it the Lazyman's Almond Milk...it yields about a pint. I just made some this morning which is what made me think of it
I love the blanched almond milk or without the skins. I soaked mine overnight and then peeled so I guess they are not rally blanched. I blend 3 minutes in my Ninja. I find it so much creamier when blended just one additional minute. They peel fairly easily when soaked. Took me 45 minutes for 2 cups. Just wish there was a faster way to peel them. If you come across any tips, please share. Thanks for your great videos. I really enjoy your channel.
In terms of peeling, I've only done the brief boil method and they almost jump out of their skins. It's still sort of tedious, but I'll put on an audio book while I'm doing it and find that makes the time pass more quickly. If I could find a store around here that has bulk blanched almonds at a good price, I'd be all over that.
Serious Keto I’ve bought blanched almonds from Nuts.com, they’re pricey but so worth it! At the holidays I bake for family and my biscotti calls for 2 pounds of blanched almonds. It used to take forever and a day to do it, until I learned about Nuts.com. I know you mentioned a local store but here’s another option.
