    LEARN HOW TO MAKE AN ICONIC PLANT-BASED TAKOYAKI I CALL SHIITOYAKI!
    LAY HO LAY HO! This recipe is probably the plant-based ramen's best friend. If you're up for completing your ramen experience, then this popular Japanese inspired street food snack will be your next destination. Join me in this episode and learn how to make my version of the popular takoyaki called shiitoyaki. Let's begin
    Ingredients:
    3 lbs russet potatoes
    20g kombu
    5 dried shiitakes
    1/4 cup chickpea mayo ( • THICK vegan Mayo Recip... )
    2-3 sticks green onion
    5 tbsp white sesame seeds
    2 tbsp soy sauce
    1 tbsp avocado oil
    1/4 sheet nori
    Directions:
    1. Peel the russet potatoes and roughly chop into small cubes
    2. Add the potatoes, kombu, and dried shiitakes to a large stock pot. Fill the stock pot with enough water to submerge the potatoes. Cover and boil the potatoes until fork tender (be sure to keep an eye on the pot as it can boil over)
    3. In the meantime, add some chickpea mayo into a squeeze bottle
    4. Strain out the potatoes and remove the kombu. Transfer the shiitakes into a small bowl and run under some cold water
    5. Very carefully remove and discard the stalks from the shiitakes. Chop the caps into small 1/4 tsp pieces and set aside
    6. Rice the potatoes into a large mixing bowl (a masher will also work). Finely shop the green onions and add to the bowl. Add the white sesame seeds and soy sauce. Mix well
    7. Flatten about 1 1/2 tbsp of potato mixture onto the palm of your hand. Then, place a piece of shiitake in the center. Fold the potato inwards and shape into a ball. Repeat with the remaining mixture
    8. Drizzle some avocado oil onto the takoyaki pan. Use a brush or paper towel to spread the oil. Turn the heat onto medium and carefully place in the potato balls. Drizzle a little bit more oil on top of each ball
    9. Allow the potato to cook for about 5-7min. Then, carefully turn them over by touching only the cooked side. Let the other side cook for another 5-7min
    10. Plate and garnish with the chickpea mayo, shredded nori, and some more white sesame seeds

      I love the idea to use potatoes! But is there a particular reason you didn’t use a flour-based batter to mimic more of the texture?

      I'm fairly new to the traditional dish, and finding an alternative without the octopus is wonderful!! 💜 The place where I tried the traditional dish, a ramen bar, had a sweet brown sauce drizzled over the dish too. Do you have a recipe for that particular sauce?

    Ok, I don't go around saying this much but I genuinely love you. Ever since I got sick I had to give up eating a lot of things, and one thing that gets me depressed every time is that I cannot eat traditional Takoyaki anymore. So you uploading this easy recipie, with things I actually have, just made me smile.

    Quick tip with the kombu and shiitake mushrooms - I actually make a strong broth with kombu and shiitake steeped and then slowly simmered in water. Add a dash of soy sauce at the end and it’s been a great fish sauce replacement in Korean and Chinese dishes!

    I once made vegan takoyaki for my friends' 'techno-yaki' party. One of the Japanese hosts was so impressed by it. Ah... memories of times we could get together, eat and party. I'll have to try your version!

    One of my favorite Japanese snacks to eat before I went vegan was takoyaki! Always love to see different takes on vegan version of this dish. Love that you didn't use any flour but it still looks very legit!

    Only discovered you recently. I crave Chinese/Japanese food at times after 15 years living in Hong Kong as a British expat. But having turned more veggie these days many dishes are off limits. Your recipes therefore have been a god send and I look forward to trying them. I’m currently testing wheat free noodles, it would be good to have your verdict too. 🙏🏼

    recipe looks delicious however I'd cut the bad spots out of the potatoes and rinse them first (removes some of the starch) before cooking :) and you should be able to find the Takoyaki pan on Amazon -

    Takoyaki and oyako don burin were my favourite street foods in Japan. I am glad you’re now offering a vegan substitute for the former… I can’t wait for your take on the latter 😁
    Edited to add : if you folks are having a hard time finding a takoyaki pan, look for an Aebleskive Frying Pan, it’s a traditional Danish utensil and basically serves the same purpose 👍

    Kohl’s used to sell a cake pop appliance, small, but not good for cake pops. I have, however, used it for “tator tots.” I think this recipe would work, too, since I don’t want to buy another appliance.
