Takoyaki (vegan) ☆ たこ焼きの作り方

    Ingredients:
    for the red pickled ginger :
    200g young ginger
    2 tsp salt
    200ml red plum vinegar
    for the mayonnaise :
    50ml soy milk
    100ml avocado oil
    1 tbsp apple cider vinegar
    1 tsp maple syrup
    1 tsp mustard
    1/2 tsp salt
    for the batter :
    100g whole pastry flour
    20g rice flour
    1/2 tsp baking powder
    3g dried shiitake
    2g kombu
    300ml water
    50g king trumpet mushroom
    1 tbsp oil
    2 tsp soy sauce
    30g green onion
    worcester sauce
    sea lettuce
    Instructions:
    1. thinly slice young ginger, sprinkle salt and massage well. Put a weight and leave for an hour.
    2. squeeze the ginger and soak in red plum vinegar.
    3. put all the ingredients for mayonnaise into a blender cup and blend until it thickens.
    4. combine all the ingredients for batter and whisk well.
    5. fry king trumpet mushroom and season with soy sauce.
    6. preheat takoyaki pan to 200C/390F, put oil in the pan and pour the batter.
    7. put king trumpet mushroom, red pickled ginger and green onion over the batter.
    8. make the batter into a shape of ball.
    9. top with worcester sauce, mayonnaise and sea lettuce.
    10. Enjoy!

    新生姜 200g
    塩 小さじ2
    赤梅酢 200ml
    *マヨネーズ*
    豆乳 50ml
    アボカドオイル 100ml
    リンゴ酢 大さじ1
    マスタード 小さじ1
    メープルシロップ 小さじ1
    塩 小さじ1/2
    *たこ焼き生地*
    全粒薄力粉 100g
    米粉 20g
    ベーキングパウダー 小さじ1/2
    乾燥椎茸 3g
    昆布 2g
    水 300ml
    エリンギ 50g
    油 大さじ1
    醤油 小さじ2
    ネギ 30g
    ウスターソース
    あおさのり
    「作り方」
    1、新生姜を薄切りにして塩でもみ、重石を乗せて1時間ほど置きます。
    2、新生姜を絞り、赤梅酢に漬けておきます。
    3、マヨネーズの材料を全てブレンダーで混ぜ、マヨネーズを作ります。
    4、エリンギを炒め、醤油で味付けしておきます。
    5、たこ焼き生地の材料を全て混ぜ合わせておきます。
    6、たこ焼きプレートをよく熱しておき、油をひいて生地を流し込みます。
    7、エリンギ、ネギ、紅生姜を加えます。
    8、たこ焼きの形に整えます。
    9、ウスターソース、マヨネーズ、あおさのりをかけます。
    10、エンジョーイ!

    I work at a halal/vegetarian restaurant in Japan, and we use radish instead of egg for the takoyaki batter. For the filling, we use こんにゃく、スリみ、and 椎茸. For the sauce, we use date-based sauce and vegan mayonnaise. A lot of our vegan/vegetarian customer love it. This video is a great inspiration for those who want to try turning their usual non-vegan takoyaki to vegan, and it will taste just as delicious. This was very relaxing. Great recipe. I hope to see more from you!

      Blaxx, my point exactly, fish are part of the animal kingdom, they are neither mineral nor vegetal. Therefore eating them is not vegan.

    Thank you so much for adding these outtakes, when I saw that shot of the mustard, I was thinking to myself: how does he manage this perfection of a shot? It is quite valuable to see that you have to take a few takes to get to this quality footage, you make it look so easy in the final edit. It's so mesmerizing that me a raw vegan watches your (cooking) videos for the cinematography. You have such an eye for focus, frames and composition. Stunning work.

    In The Netherlands we eat "poffertjes" - Dutch mini pancakes. It's a traditional treat. So we use the same kind of pan with round hollow shapes.
    This recipe gives me a lot of inspiration to experiment with my "poffertjespan". The wooden plate in the shape of a leaf 🍂is really pretty, Ryoya!

      A poffertjes pan is less deep, not really for fillings like this right here. Probably easier to make poffertjes with this pan then takoyaki with a poffertjes pan

      @Story Time I don't think it's related. Profiteroles are called "soesjes" in Dutch and are exactly the same as the French ones.

      StoryeTime poffertjes are like small crepes/pancakes. They’re puffy tho so not flat like crapes and they’re sweet too. The batter is kind of similar with a few changes here and there

    I love this recipe! One thing I also personally like to add to my takoyaki to mimic the texture of octopus is corn! It tastes exactly like octopus when inside a takoyaki, mixed with the rest of the flavour. I could hardly tell the difference. I recommend everyone to try it. Also one thing to note is not all Worcester sauce is vegan as it can have fish sauce inside of it. Mm, now I crave takoyaki!

    First video I have ever seen from this channel popped up in my feed.... Love vegan food and recipes and LOVE JAPANESE FOOD (ICHIBAN FAVOURITE) so I am very happy to find this channel and to see so many amazing vegan recipes.... Takoyaki and okonomiyaki were 2 or my very favourite foods before giving up meat... I have been to Japan 7 times and absolutely love the country but I hardly eat anything Japanese now....THIS HAS INSPIRED ME TO THE MAX!!!! THANK YOU!!! sugoi ureshii

    i usually buy takoyuki with my boyfriend when i was in collage.but he died 3 years ago. you make me miss him so much again.
