How To Cook “Bindhi” Chicken Curry! - Okra/Ladyfinger Authentic Bangladeshi Chicken Curry

  • Hi guys, just a simple dish that I cooked for my mother. Hope you enjoy!
    1 kg Chicken
    2 Cups of Bhindi (2 handfuls)
    4-6 tbs oil
    2 cinnamon sticks
    5 Cardimon Pods
    3 Bayleaf
    2 Medium Onion
    5 Cloves Garlic
    2 Heaped tsp ginger, garlic paste
    1 & 1/2 tsp salt
    2 small tomato
    2 tbs yogurt
    4 sliced green chilli
    1 cup water
    1 handful coriander
    Spice mix:
    1/2 tsp turmeric powder
    1 & 1/2 tsp coriander powder
    1 & 1/4 tsp curry powder
    1 tsp Chilli Powder
    1/2 tsp cumin powder
    1/2 tsp garam masala powder
    This is an amazing dish if you try following my recipe!

    Latif! You're a legend my brother! My Jewish mom who lives in New York watches every episode of your cooking. She has started cooking your meals and the way she speaks about you with her friends, you'll think you are both friends... She always puts your name before the meal e.g. 'Latifs chicken curry' 'Latifs biriyani'. She's 70. Thank you!

    Okra curry was one of the first curries I made over 30 years ago, I'd never tasted orka at all prior to cooking them and was very pleasantly surprised, it was great and back then I remember being surprised by how well it had worked out from a book and it was nothing like as involved as your dish, so I'll look forward to making this again with your instruction as soon as the shops have any stocks back in again lol. Thank's Latif.
    To facilitate ease of "getting it" as close to what your doing in the videos, I'm now reorganising your ingredients listing into time sequence, and adding a few light notes as a memory jogger so I work to the video plan, I generally watch the video once through and a second time just stepping through it to ensure I have it clear in my head what I'm doing. Here's my reorganised sequence ingredients list if it helps anybody.
    High gas to start
    4-6 tbs oil
    2 Cinnamon sticks
    5 Cardamon Pods
    3 Bay leaf
    2 Medium Onion
    5 Cloves Garlic
    2 Heaped tsp ginger, garlic paste
    1 & 1/2 tsp salt
    Cook for a good few mins, caramelising to golden
    about 8 mins total time
    Add the spices
    1/2 tsp turmeric powder
    1 & 1/2 tsp coriander powder
    1 & 1/4 tsp curry powder
    1/2 tsp cumin powder
    2 small tomato
    lowers the gas before yogurt
    2 tbs yogurt cook for a few mins at about 20 mins now
    1 kg Chicken on the bone, chicken will release water
    turn up the gas high heat keep an eye it does not burn 2 mins then medium heat
    4 sliced green chilis
    Cook for 5-6 mins see how much water is released
    from the chicken
    Add about 1 cup water max.

    2 Cups of Bhindi (orka) (2 handfuls)
    We are at about the 35 min cooking time now
    1/2 tsp garam masala powder powder
    1 Handful coriander
    Cook for a further 5 mins, check for salt

      Bangladeshi home curry dishes are interesting and very nice.. I'd say it's much better than British curry asian restaurants dishes. World needs to know about this more. Most of us Bangladeshis in UK hardly eat curries from restaurants because we have better curry home cooked dishes at home.. last time I had anything from uk curry restaurants was like 6months ago. Because our own dishes home cooked are more healthy, tasty and better prepared.

    From East Texas. Okra was usually fried, stewed with tomato or in gumbo. I prefer them your way.

      I know what you mean bro. It's the old mindset in the community..which transferred to new gen.. people are ignorant. They should first know and educate themselves that even our Prophet pbuh was a Shepard as a boy. So think before you judge others. Bengalis like any south asians and arabs have many ignorance issues.
      I personally would have loved to be a chef, or know how to cook whenever I want to cook. Cooking is such a great skill/talent to have. We all eat! Daily! Cooking is highly essential. I can make few dishes that's about it, always have had a great like for cooking.. maybe one day when I settle down.
      Btw I work for a supermarket distribution centre, we are classified as KEY WORKERS.. we pick, load, send out deliveries of food that people go and buy at from stores of whichever supermarket stores they go to like tesco, asda, morrisons.
      So do remember us. Working tirelessly trying to feed the nation. It's so busy, busier than ever been. Stores low on stock as shelves are emptying fast. We cant pick and send enough to stores..

    Had a meal in Ocho Rios Jamaica, it was curried goat not like your spicy curry but it had okra in it, it tasted like a beef stew and the okra thickened the gravy. Absolutely delicious. I’ll now have to buy the spices that you used to make this gorgeous chicken curry. Thanks for the video.

    Okra is widely used in Oklahoma where I am from in the US. We slice it up then panfry it with a little cornmeal, flour, and salt, very simple.

      Heartland Okie howdy... I live in NewZealand but OK is where I’m from and all my family is. I totally agree. My great aunt Pauline made the best fried okra ever. We would usually have it with fried catfish that my uncle caught. He would catch the catfish in the Arkansas river, bring them home live and let them swim around in one of those cheap little kiddie swimming pools for at least 3 days in fresh water. Took out any muddy taste. Catfish and Okra both fried in cornmeal, corn on the cob and potato salad. YUMMIE

    Oh Latif I love okra. I cook my okra in slices. And fry with onion and tomatoes and eat with basmatie rice. Now I see how you cook this fish I will cook it this way but without chili.
