    What I particularly like about Chetna's videos is the pace. Not too fast, but not draggingly slow. Can get the info you need in the time you need and the recipes are always delicious.

    Love Okra! My mother-in - law taught me a slightly different version. You start with Okra in the pan and never cover it. Cook it uncovered, especially, American Okra has extra water, cover it and you will end up with a slimy mush!
    So let it dry till all the slime is gone! Add thickly chopped half moon onions, more the better!and let it dry again.
    Add spices and yes Do Add turmeric- it’s he healthiest spice in your ‘Daba’! … yes, use this gold every which way you can!
    And here is the Best part of this recipe … quarter a couple of ripe tomatoes and let the juices seep in for let’s say 5-8 minutes … and you will have- Bindi masala of your life!
    My daughter wants it with Rajmah! And yes, I agree, the tomatoyee texture of rajmah goes so well with the slightly rough texture of well cooked Bhindi masala!

    Not an okra fan but my wife loves it. I'll give this a try. Also can you please post your Chat masala recipe. First time I heard it I thought you said "charred masala" so I just roasted some garam masala in a pan and added it!!! Thank you.

    Hi Chetna I love bhindi too we cook it in my house but not often because in the grocery store all the fresh one run's out very quickly, my mum cooked bhindi a day ago we do put a little bit of turmeric powder in it just a little bit because it gives really nice colour to it, yes can you pls show us how to make chaat masala at home pls, thank you ☺️💖😁

    Great Video!! Wow, as I watched you cook the onions and okra was just the way a girl like myself grew up in South Louisiana cooking (Oakree), okra. So cool how cultures tens of thousands of miles away can creat dishes so similar and the difference is only in the cultural spices and herbs I’m such a fan of Indian Cuisine and my grown kids also.     I grew up eating my Grandmother's okra stew. She left the okra whole w/tomatoes, onions, salt and pepper. My mom fried okra to death lol....Both are my favorites. I was so happy to find this recipe. Okra is one of my favorite foods. I made your recipe the next day. My Grocery store had perfect small tender okra just waiting for me. I must confess that I used only Garlic powder, Onion Powder, salt and pepper. The rest was you. WOW!!!!! We devoured it all. Thank you for a awesome new way to cook okra.

    I LOVE okra so of course I had to try your recipe. It turned out so delicious!!! I used fresh okra but it’s much easier to find frozen okra where I live so I’ll be trying this recipe. With frozen okra next time. Anything I should do differently if using frozen?

    I enjoyed the recipe, I would say it would be useful to indicate that a nonstick pan would be best here. Heating on high in my good stainless pan made it difficult.

    I know you will say that it wouldn’t really work, cos frozen ones wld be wet and slimy … but I can’t find fresh okra, only frozen cut up ones … but wld it work? I don’t want to try and spoil the recipe !, thank you very much. I love yr recipes. And make quite a few of them .

    this looks delicious Chetna but i try to avoid eating when they are slimy so i just steam them for a minute and enjoy with just fish sauce and lots of lemon juice and eat with basmati rice... love them cook but still crunchy.. I am from Philippines ...btw i always buy the indian okra coz they are dark green the rest i noticed are light green and they are not chewy even if they are long.. why idk just prefer indian okras that's it coz Pilipino stores dont have them anyway lol but i grew up eating them whole my mom never cut them😋😋😋😋🙏🙏🙏🙏

    Thank you so much for taking us through all the steps and addressing all the things that might scare „noobs“ like me 😄 I indeed haven’t tried okra yet, but now I feel more confident to give them a try! ☺️
    (Next recipe already scheduled is the „black lentils with red kidney beans“ as I‘ll finally have plenty of time for the slow cooking and as it’s supposed to be better the next day, it‘s perfect timing as one of my best friends will visit me the day after ☺️)

    you cannot get bhindi at Tesco, Sainsbury's, or Co-Op?
    definitely bread with bhindi; I like it less well with rice for some reason.

    Looks delicious - I'm adding okra to tomorrow's groceries and will serve it with the dal recipe from last week.
    I would love the Chaat Masala recipe (although I did buy a pack as the Indian supermarket this week)

    I don't understand why people cook out the mucilage, bc its slimy.. that's the magic stuff for your gut and extracellular fluid. Lines your intestines, helps with digestion. To each their own. I say keep it slimy :)

    This looks like a wonderful recipe! How would you make an okra curry? Could you use the base of butter paneer and add okra as you’ve just made to it? Would love to see an okra curry recipe of yours too!

      Yes you can.. Just fry the okra deep/shallow before adding it to the gravy or it can get very sticky
