Soft Wholemeal Bread Loaf Recipe

  • Wholemeal Bread Loaf - There is not much difference between wholemeal and regular white bread. Method is the same, only difference is the ingredients. Wholemeal bread is more hard and dry compared to white bread in terms of the texture. Hence, I added partial bread flour to the recipe so that the bread can be softer and less dry. You can do a 100% wholemeal if you desire. Since it’s a lockdown period, and some of you might experience fighting for a loaf of bread, especially wholemeal bread is so popular and highly in demand. This is the time to make one yourself and no more fight for the bread. The wholemeal flour is always available at any baking ingredient shop or supermarket. I hope you’re inspired to give this a try.     Ingredients:
    I am using 9x5x3-inch loaf pan
    200g (1 ¾ cup) wholemeal flour
    125g (1 cup) bread flour
    2 tsp instant dry yeast
    1 tsp salt
    1 tbsp sugar
    270ml (1 cup + 2 tbsp) whole milk, blood temperature
    30g (2 tbsp) unsalted butter
    Instructions:
    1. In a mixing bowl, add both flours, yeast, salt and sugar. Give it a quick mix. Start mixing on low speed.
    2. Gradually add in the milk. Make sure the milk is luke warm, blood temperature or room temperature, whatever you called them. The dough will start to come together and pull away from the sides.
    3. Stop the mix and spread the softened butter around the dough. You can also add into the bowl while it’s mixing, whichever convenient to you.
    4. Increase speed to high speed and continue to mix for about 4-5 min.
    Remark: In this video, I have shown a quick tutorial on how to knead the dough. Kneading and slamming the dough on the table will develop and strengthen the gluten strands which will result in softer bread. You will need to knead for at least 20 min, wholemeal is tougher to knead.
    5. After 5 min of mixing, stop the mixer. Fold the dough into a ball like shaped. Grease a large bowl. Place the dough into the bowl. Grease around the dough to prevent sticking on the bowl later. Cover the bowl with cling film or a tea towel.
    6. Prove the dough for about 45-60 min or until the dough size doubled. You’ll notice the size of my dough has doubled, and in fact, more than double the size.
    7. Transfer the dough on the table. With a rolling pin, roll the dough for about an inch thick, to prevent trapped air bubbles. Roll up the dough like a swiss roll. Then use the rolling pin to press and roll the dough again. Place the dough into the loaf pan. Press down the dough in the pan, again that’s to prevent air bubbles. Cover the pan with a tea towel. Prove it for about 30-45 min. You’ll notice a dome under the tea towel, which is a good sign that the size has been doubled.
    8. Bake in preheated oven at 180°C/355°F for 30 min.
    9. Cool the bread completely before slicing.
    10. The bread is ready to serve.
    STORAGE TIPS:
    Store in airtight container for 1-2 days in room temperature (where I am from, I have high humidity level atmosphere) You can store even up to 4 days in room temp if you room is cold and dry. Store in fridge on the 3rd day for up to 7 days. You can store the bread up to one month in the freezer.
    The bread will be hardened in fridge or freezer. You can either steam the bread or lightly heat up on the pan, it will become softened again.

    Your approach is genuine. Most people doesn't admit of mixing GPF with whole wheat flour while making a whole wheat bread. Your video will help the new bakers to have a clear conception of the proper method and it's outcome.

    I really appreciate that you mixed wholemeal flour with bread flour, I think that bread made with 100% wholemeal flour turn out dense, hard and less rised. It's amazing that you made such a soft bread with wholemeal! Amazing work as always, Fiona

      You are absolutely right Valentina. 100% wholemeal will be a lot more dense and dry. Knowing I am going to toast the bread, I would prefer it to be soft and not too dry. I know the Italians like yourself are pro when comes to bread. Thanks for your support ❤️😘🌹😍

    i just did this recipe, it turned out super moist, soft and a ‘lil crunchy outside layer!✨ i’ve tried other recipes for a 9x5x3 loaf pan, but those recipes always made the bread overflow in the pan😭 luckily this recipe is suited for me💗 thank u my family is so proud of me!!

    That's a stunning loaf. Honestly nothing can beat homemade, I get that to some extent the reason things taste better is because the effort was made by you but there also comes a point where that isn't the only reason. Some of the greatest tasting food I've eaten has been homemade, either by myself or someone else. Since having swapped to wholemeal from white some while ago I definitely have to start using my bread machine again and make my own wholemeal bread. Cheers and all the best.

    A bit adjustment is required; believe thar it may from the ingredient branding difference between my country (Thailand) and yours; however I just want to tell you that it's so good; soft and delicious.     this recipe works. I have tried so many bread recipes, this is the only one which gives store like bread in all aspects. I mean even the professional, experienced chefs too, who have shared loaf recipes, the end product doesn't comes like that.
    I did change the temperature to 360 and baked for 35 mins. I also greased my tin pan. and important thing, we have to put in the lower part of the oven, not in the top rack

    I tried this recipe last week and the bread turned out slightly hard but still lovely..today I modified the recipe a little bit, activated the yeast with milk and sugar for 10 minutes before adding to the flour and the result was SUPER SOFT delicious bread! I also added some grains such as pumpkin sunflower & flax seeds.

    I like it when you measure the yeast using tsp instead of gram, because the yeast is so light it drive me crazy to get correct measurements

      hi, did yours turned out just like her? I mean the inner texture..? I tried it today, my texture was not like what's in this video. I did ferment the yeast in water rather than adding it dry into the flour.
      Edit: I followed the exact recipe. changed the temp to 360F. turned out better than store bought

    Most recipes ask to activate yeast first in water before adding to the dough so I was worried when the yeast granules in my dough were not getting activated while kneading. However, after adding butter, they started blooming a little. My dough did not rise as much as yours the first time but after rolling it and putting it in the loaf pan, it rose just the same. It took about 36 mins to bake completely and it turned out great! :)

    Great Video, just a quick question though, your recipe says 270mls milk to 325 grams of flour, which is a hydration of 83%, which makes sense as Wholemeal needs a higher hydration than white flour, however in the video, the milk is much less than 270mls in the jug, possibly 200mls. Can you confirm which is correct? Thank you

    I bake bread every week. I have made sandwich loafs with butter and regular AP flour. When I came across your recipe today, I knew I would have to try it out! It looks deliscious and so healthy!!

    Hi, tried your recipe couple of times. Bread is very soft and aromatic. In 1st proofing dough is doubling but 2nd proofing seems to be a challenge as not getting the Dome instead remains flat. Please guide.

    Thank you for this lovely recipe. I’ve made this bread 3 times. My loaf tin is a lot bigger and I am wondering if I double the recipe, should I leave the bread in the oven longer? My bread came out much softer and the crust is very soft but I prefer the texture of yours. Any advice please?

      my best guess is if your bread is really soft the gluten maybe didn't develop? maybe knead the dough longer? idk, i'm not very experienced with making many breads, but that makes the most sense to me.

    tried it again today. it did come out good, better than any other recipes I have followed, but not like in the video. yours look exactly like the store ones. I am guessing, do I need to adjust my oven temp like to 360 and 35 minutes? or should I place it in a lower rack in the oven? any suggestions, gracious treatz?

    I made this bread tonight. It is the softest homemade bread i've ever made. Most are wonderful toasted, but this is also wonderful fresh for sandwiches. Thankyou so much.     I recommend putting water on top of the bread after you take it out of the oven so that the top is more soft and it will be the perfect texture!
