      @@Food-Language , well! Yes and no. Usually I am a very laid back person. But I am very strict as to how I make my food. We all know how dirt can hide under rings and all. Hygiene in the kitchen is a must, for me, and sometimes a see known chefs doing their thing with plenty of jewelry. If one wants to keep them while making food, there are gloves.

      Less yeast, more flavor! Bread doesn't like shortcuts, adding a lot of yeast may shorten the time, but the result will be disappointing.

      I don't have a link. I got them a long time ago, probably at a local kitchen store. But any two pans of the same size will work, you can see me using regular pans in other videos.

    Just subscribed, I'm definitely gonna try this here in the USA! Can the dough be fermented in the fridge for a couple days? If so, how/when would be a good time to do that?

      Thanks for subscribing! Yes, you can ferment the dough longer, I'd put it in the fridge after the last stretch and fold. Basically, you'd be replacing the final rising time with a cold fermentation process. I usually keep the dough in the fridge for 24 hours, but it should work with longer fermentation times. When you take the dough out of the fridge, just let it come to room temperature before shaping. After that, everything should stay the same. Please let me know if you try it, I'm curious to know how a longer fermentation works with this particular recipe. Thanks!

    Love, love, love, so simple, so perfect. I’m Italian decent, and as soon as he cut the loaf, showing those airy holes, I was ready to make an Italian sandwich. Of course mortadella, Genoa salami, prosciutto, sharpe provolone cheese, olive oil, oregano, black pepper. Now roasted red peppers fresh onions, sliced tomatoes lettuce. The bomb.       Just until it cools down (if you have the patience). Just don't cut it while it's hot, the crumb will clump together and it won't be as nice. Also, the steam will escape from the bread and it will dry out quickly. But once it is cool, you can enjoy it without remorse.

      The pan is about 15.5"x10.2" (39x26cm), I use two identical ones, turning one upside down to use as a lid.

    Love this!!! Watching from USA. Been looking for a type pf bread that reminds me of Germany, and this is it. Is it possible to bake this as one or two loaves instead of four small ones? Would the times of rest and baking be the same or would I have to adjust?

      Thanks ♥ If you are making two loaves, bake them covered for 5 more minutes (25 minutes instead of 20) and when you uncover them you could leave the temperature up. For smaller loaves, I lower it for the second stage, but if the loaf is larger, you can just uncover and bake for 10 more minutes at the same temperature.
      Everything else remain exactly the same, same rest times and everything.

      It's not a lid, it's another pan of the same size. It just happens to have the little indentations to keep it from sliding. In other videos, I just use two regular pans of the same size and they work perfectly. Just turn one upside down and use it as a lid. I can't remember where I got these, but it was definitely at some local kitchen store, not online.

      Yes, definitely! But I wouldn't replace all the flour with whole wheat, it will have a hard time rising and will be denser. Will taste good though. I usually replace 1/3 of the total flour with whole wheat, it maintains the same shape and tastes amazing! I'm planning on making a video about this as well.

    Can Multigrain bread flour be used?

      I would try replacing half of the bread flour with multigrain flour to see how it goes. Multi-grain flours often contain gluten-free grains like buckwheat or oats, and they need the boost from the bread flour to rise properly and hold the shape.

    I don't consider bread that uses yeast & you have to let rise 15times to be a quick bread. If it takes me 2 days to make a loaf it's simply not worth it

      It's different to:
      1. Soda bread
      2. Focacia
      3. Sourdough
      4. Flat bread
      5. Naan
      6. Pitta bread
      7. A bread recipe using instant yeast
      8. Bagels
      9. Crumpets
      And so so many more. So no, this is not like any other bread recipe.
