I was introduced to dill pickle pizza at the Minnesota State Fair in 2022. It was one of the new foods at the fair and I had to try it. In 2023, I introduced it to my husband. He said it was just okay, but I love it. My new favorite fair food. Firstly, the restaurant/food truck that does it at the fair uses their own tangy dill ranch sauce, not a cream sauce. Secondly, they give it an extra sprinkle of dill seasoning blend and thirdly, they put the pickles on top of the cheese, not under it. The one at our state fair is sold by Rick’s Pizza and you can find a TikTok of it on their account, but local pizza joints have been making now too. Also, why didn’t you sprinkle some flaky salt over the popcorn squares? Sweet and salty, right?
I looove pickle pizza! You need to take a spoonful or two of the pickle juices and drizzle over the top after baking to bring back the dill-ness. Also use high quality dill pickles. 😋
Rach and Chris, you should try an overnight pizza dough. It's dead simple to just stir everything together at night, give it a tiny knead in the bowl, then cover it and leave it in the fridge til the next day (12-24 hours). It has an amazing sour flavor to it and because the flour has been allowed to sit with the liquid for so long it absorbs a lot of it, which helps build the gluten and keeping it together =)
