Dane here. For the aebleskive: don’t use pancake batter use aebleskive batter. When baking them only flip them a small amount at a time (think of asbleskriver as an apple not a pancake). For the flip use a knitting needle. Don’t put filling inside. Eat them with jam and sugar (dip them in jam and afterwards in the sugar)
All this, also my family makes these for Christmas morning every year. We do bananas as well and some times chocolate. For sure powdered sugar is a necessity

You really need to try a 'poffertjes pan' it's a Dutch mini pancake and you eat a bunch of them with butter and powdered sugar. They are flatter so they cook better! Loooove to eat poffertjes 😍
My grandma (and her mom, born and raised in Denmark) used a tiny crochet hook to flip aebleskivers. The crochet hook she used is for making lace so it's minuscule, 1.5 - 2.25mm. We love them!
For the ebelskiver pan, the key is cooking in a lower flame, I honestly recoomend the non-electric one so that you can control the flame much better also try putting a lid on it. I will cook so much better and you can flip easier!
i bought an ebilskiver pan decades ago and i make them with the preserves in the middle, but also with ganache! make sure it's cold and scoop little balls of ganache with a small ice cream scoop (like really small). i do this ahead and keep it refrigerated. also, i make the ebilskivers and then freeze them. omg toast them in a toaster oven and serve with whipped cream or vanilla ice cream (especially the ones with ganache). it's to die for! the reheated ones get a slight crisp to them. to flip them, take a chopstick in each hand. one pushes along one side and the other helps to guide the push. in other words, as one hand pushes, the cooked side shows up on the opposite side. use the other chopstick to pull on the cooked part. like a ball rotating. also, cook them a little longer than you think you need to if you have a filling.
We use a very thin knitting needle to turn them. Also try and put cardemomme in the batter. We don’t put filling in, but dip them in powdered sugar and jam.
For the mini pies, maybe if you used flour instead of spray, it may not stick as much? And maybe the sushi roller, you add a bit less rice, then your veg/meat, then more rice? I’d give each of these a try!
I have that same ebelskiver pan. I'd recommend cooking one or two and then testing them for doneness. That way you can figure out your timing. (You can also just throw them back on if they're not done in the middle.) Good luck figuring it out-- they're one of my favorites. ❤
I use two bamboo toothpick like sticks that are about 3" long to turn the mini pancakes. You sort of tip the uncooked batter back in the reservoir as you turn it. I love them so much for a quick sweet treat.
I used to work at a Danish museum and I made thousands of aebelskiver. I used a wooden skewer to turn them, not a chopstick, and the batter recipe is really key. I would really suggest that you have someone that’s an expert walk you through your first time making it. Good luck!
aebleskiver definitely has a learning curve but I use one chopstick and make a J motion to flip them. I use a cast iron pan on the oven so probably better temperature control than that appliance

I’m no aebleskiver expert but I am a takoyaki expert and we only do a quarter turn at a time adding more batter each time. Then, keep moving them once they have become round so they cook evenly! You can also purchase takoyaki picks that make this sooo easy! There is probably a similar tool for aebleskiver.❤

That first ‘pie thing’ in the beginning is called a Pastie in the UK! And is savoury. The half circle shape is easier just to fold over yourself. What you did is more like a McDonalds pie in the UK

If you want the batter to be cooked more try covering it before flipping. That might help cook the batter more. We have a similar pan and we use it for takoyaki (Japanese octopus balls) so you should try making that. It works well. It’s like a savoury molten lava Tim Bit with octopus filling. Lol.

Be careful not to flip your dough after you cut it out. You sprayed the cutter, which gets spray on one side of the dough, so if you accidentally flip it, it won't seal. Just an idea.
The pancake thingys we call them poffertjes in the nerherlands we dont fill them but we put powdere sugar on it and a bit of butter wich melts or jam or ig you call it maple syrup? Put less bater in the thingy and twist them with a fork whe they come lose from the bottom.
I have no shame, I love raw dough lol! 🫣🤭 Cookie dough, bread/pastry dough, batter…30 years of eating raw dough with raw flour and never had an issue. Never once had food poisoning either. Sure there’s risk, but there’s risk with almost anything. It’s too delicious not to indulge every now and then!
Having made both mini pies and regular size pies many times, I have to say that mini pies take so much longer to make (because of the number of them), but they're also so much better for some reason. Maybe it's the crust to filling ratio. I don't know. But no matter how much more time it takes, I'm always making the mini pies instead.
No idea about Danish aebleskiver, but I feel like the method to making them is similar to Japanese Takoyaki, where the batter is a bit thinner, and can be rolled to cook into a circle. The holes is the machine are a lot deeper compared to a Takoyaki one so a thick batter may be right?

There is a German recipe for the aebleskiver pans. My former in-laws called them Fudgins. You did make a dough for those which contains yeast. I can sent you the recipe if you are interested.

I found that sushi maker on tiktok, you have to lay the insert flat and fill it, then latch it in the middle and roll!
