Low Carb Lasagna Recipe with bamboo flour noodles - Made of Bamboo Flour, Low Carb And Gluten Free

  • The best low carb lasagna is here! Everyone loves a good lasagna, right? Even if we are on low carb, keto or gluten free diet. This noodle is made from bamboo fiber and tapioca flour and has the texture of a regular lasagna noodle. I hope you will enjoy this meal! :)
    How to make bamboo baking flour:

    Full Recipe
    extra virgin olive oil
    1 onion
    1 tbsp paprika
    1lb (about 500g) ground beef
    1 ½ tsp garlic powder
    2 tbsp italian seasoning
    ½ tsp pepper
    1 ½ tsp of salt
    24oz (about 650g) marinara pasta sauce
    12oz water
    2 large eggs
    1.7oz (50ml) water
    15g tapioca flour
    ¼ tsp salt
    40g bamboo baking flour (32g bamboo fiber and 8g powdered whole psyllium husk).
    2 tbsp (30g) unsalted butter
    120g cream cheese
    200g unsweetened coconut milk
    1 tbsp pure bamboo fiber
    ¼ tsp salt
    pepper
    2-3 cups shredded italian style cheese or mozarella
    Steps:
    Heat extra virgin olive oil in a medium-sized pot over medium heat,
    then add 1 diced onion and cook for a few minutes (until softened).
    Add 1 tbsp of paprika and mix to combine quickly.
    Add 1lb (about 500g) of beef and cook while breaking it up with the end of your spoon, until browned.
    I use meat chopper to separate ground beef into smaller pieces while cooking.
    Season with 1 tbsp of dried vegetable seasoning (optional)
    ½ tsp of garlic powder,
    1 tbsp of italian seasoning (marjoram, basil, rosemary, thyme, oregano, savory, and sage),
    ¼ tsp of pepper and
    1 tsp of salt.
    Mix to combine and add 24oz (about 650g) of marinara pasta sauce (no sugar added) and
    12oz of water. (rinse the remaining tomato sauce out of the jar with the water before adding to them)
    Mix well to combine.
    Cover and lower the heat to maintain a low simmer then cook for about 30 minutes. Occasionally mixing, until the sauce has thickened slightly and meat is tender.
    Make the noodles. Crack 2 large eggs into a bowl.
    Pour 1.7oz (50ml) of water to them.
    Whisk to combine.
    Add 15g of tapioca flour and ¼ tsp of salt and
    40g of bamboo baking flour (32g of bamboo fiber and 8g of powdered whole psyllium husk).
    Stir them with a spatula thoroughly then let the dough rest for 10 minutes.
    Adjust the seasoning of the sauce to your taste. I add ½ tsp of salt,
    1 tbsp of italian seasoning,
    ½ tsp of garlic powder and
    ¼ tsp of pepper.
    Knead the dough lightly with your hands for a few minutes. Use a silicone sheet as the dough is actually a little sticky.
    Divide the dough into 4 equal pieces.
    Place the dough onto a floured silicone mat and sprinkle it with flour.
    Roll every piece of the dough out until you get the desired thickness.
    Cut noodles to desired length or shape.
    For the best results dry the noodles. You can transfer the noodles to wire cooling racks and
    let air-dry at room temperature for up to 24 hours.
    Or you can cook/bake at low temperature to dry them.
    You can dry them in your oven at 200F for a few minutes or cook them in a pan.
    Cook for 1 minute at low heat then flip it to the other side. Cook for another 1 minute then transfer to a cooling rack.
    Make the low carb white sauce.
    Add 2 tbsp (30g) of unsalted butter into a pot.
    Add 120g of cream cheese and
    200g of unsweetened coconut milk.
    Place the pot onto stove and heat them up over medium heat and mix until the butter and cheese is melted through.
    Reduce heat to low and whisk in 1 tbsp of pure bamboo fiber until well combined.
    Season with ¼ tsp of salt and some pepper then mix and it’s ready to use.
    The next step is to assemble the lasagna.
    Preheat oven to 380F (190C).
    Spoon one layer meat sauce on the base of a 9.5x7-inch baking dish or pan,
    then cover with lasagna sheets. (Trim sheets to fit over the meat if needed.)
    Layer with meat sauce (enough to cover pasta),
    Spoon the third of the white sauce
    and sprinkle with shredded italien style cheese or mozzarella cheese.
    Repeat layers.
    Pour the remaining meat sauce and white sauce over the last layer of lasagna sheets and bake for about 30-35 minutes.
    Top with the shredded cheese and bake at 380F for 10-15 minutes or until golden.
    Allow the lasagna to cool for at least 15 minutes before serving.

      I haven't tried them yet, but I think so. I know it works as a simple noodle, only the cooking time was shorter. If you don’t dry them, the cooking time is about one minute. :)

    Melinda, looks yummilicious! I read that flaxseed meal can be used as a substitute for tapioca flour in keto baking. What do you think? Do you think it may work for your crepe recipe and maybe in this recipe?

    Hi! i have recently discovered this channel, and i wanted to know, if there is any replacement for the bamboo fiber, because we don not have that in Argentina.- Neither oat fiber.- If i try with coconut flour, do you think it could work? Thanks!!

      Unfortunately, I have no idea, but I think you can mix 40g coconut flour with 10g p.husk and try a dough recipe (half batch). I'm pretty sure the sponge cake recipe won't work because the coconut flour kills the egg white foam. :(

      You can replace 15g of tapioca flour with 7.5g of cornstarch (but I haven't tried it)

      I used Bob's Red Mill Finely Ground Tapioca Flour. But you can replace it with corn starch. It can be used as a 1:2 substitute for tapioca flour (2tbsp tapioca flour = 1 tbsp corn strach)

      @annyoung4423 They contain similar amounts of carbohydrates and only a small amount is needed for the recipe.

      @bambooLoveChannel I tried with arrowroot and it didn't work, the dough turned out very liquid. Now I've tried with tapioca and I think it's working well. 🙌🏻

      Thank you for sharing this. I've never used arrowroot before, but from researching on the internet, I've read that tapioca can be substituted for arrowroot. Good to know that it doesn’t work :(.
