  • Hi 👋🏻….this is a must try recipe …I assure you it’s a game changer in the keto/low carb world …you won’t need any keto flours anymore to make bread
    Ingredients :
    1/2 cup egg whites
    1/2 cup water
    1/4 cup olive oil
    2 tbsps apple cider vinegar
    1/2 tsp baking soda
    1 tsp baking powder
    1/2 cup and more bamboo fiber
    4 tbsps psyllium husk
    1 tbsp sweetener
    1/2 tsp salt

    Thank you so much for this recipe! I made them in a silicon bun pan and they were the most beautiful hamburger buns I've ever seen! And absolutely delicious too! This recipe will be my go to bread recipe from now on. As a matter of fact, I'm on my way into the kitchen to make 2 or three more batches for Father's Day!

    I just made this and all I can say is, WOW! Game changer for me. So many different ways I will be able to use this recipe. I tried a pizza bun and it was delicious. I was skeptical, but I am so glad I tried this recipe.Thank you for all of your hard work and giving us these great recipes.

      They had great texture. I plan on trying to make hot pockets and stromboli with it. The flavor was neutral, but that was a plus because you can add your own spices.@@ketokat333

    I found this recipe this morning and made them immediately, hoping to create something that isn't like all the rest... you know, beautiful on the outside but wet and disappointing on the inside? These are PERFECT!!! You have just made my day, my week, my month and my year! Thank you so much for this recipe!! (Yes, I'm a picky eater when it comes to bread because I used to BAKE my own bread before my keto life began, so this really matters to me!)

    Vernaz, I made these today with the psyllium husk powder and they came out so well. I brought my ingredients to my inlaws and they didnt have a scale so i used measuring cup measurements without problems. I needed only 3 Tbs of the psyllium husk powder. I used the whites of 4 eggs so it made a scant 1/2 cup but it was just right. I only used 1 tsp. Allulose so mine came out more of a whole wheat color (where yours looks as dark as pumpernickle - i like pumpernickle but didnt want sweet and thought maybe 1 tsp would help both. Came out wonderfully!) My gluten free sister in law loved them. She has not been able to stay with keto because of missing bread (if she stops bread she gravitates to potato chips!) But she thinks this could help her overcome that hurdle. Yay! The bamboo fiber is so pricy, though. You said oat fiber give a different taste and texture. Have you happened to try coconut flour? I will be looking through others of your recipes. Thank you for this one, and your helpful answers. Blessings! (Also, we sliced and toasted one of the buns and it was sooooo good slathered with butter. Mmmm. I think i will plan to make smaller rolls for thanksgiving but make some of these bigger ones to make keto turkey dressing. I am really excited about the prospect! At church we have a family with nut allergies and they can have this!!!)

    Hello Vernaz. Beside the Allulos why are the buns so brown? Is there anything to sub for whole psyllium husks ? May be that is it. My grandkids won’t eat wheat looking buns 😔

      If you don’t put the allulose , it will not be a dark brown …more like a beige x

    They look really good. I don't understand though where any flavor, other than salt, would come through? Especially with only egg white and not whole egg. I am intrigued and will give them a try. Thank you.

      That is a completely different recipe …you can add a bit of egg white powder but you can’t substitute the bamboo fiber …see my flourless bread loaf recipe x

    Thank you for this! Two questions: first, I have psyllium husk powder - will that work? Second, since the egg whites don't need whipped, and you are adding oil, can whole eggs be used? (Or why not?) Thanks again!

      Hi 👋🏻….yes you can use psyllium husk powder but you will have to adjust the amount and whole eggs can be used but it will make the buns heavy and dense and will have an eggy taste x

      3 Tbs psyllium fiber worked great! I wrote a longer post above (which i removed from here as i had to correct some typos). Thanks again - they were really tasty and good textured. Funny to get excited about food but this did and I thank God for it!

      There’s no substitute for bamboo fiber….any other fiber will change the taste and texture x

    I found an organic bamboo “extract” on Amazon but not sure if that’s the same as bamboo fiber. I wonder if it’s the same thing. I looked up the brand you have but it’s sold in a different language. Wondering if you have any tips on this.

      Look for bamboo flour or fiber…I’ve never heard of extract but do see the consistency and colour of the flour in the video x

    Just received my Bamboo fibre and tried this recipe. Absolutely amazing, mind blown at the texture and taste of this bread, tastes better then any Keto bread I have tried. Soft airy and pliable. I had mine with Keto macadamia and raspberry butter sold here in NZ absolutely amazing. Thank you so much Vernaz for your recipe, you are awesome. I also have been making your gooey brownie recipe weekly for the past year, it satisfies my cravings and tastes delicious. I just add 1 Tbs of chia seeds to it and 5 pieces of Well naturally chocolate, has more of a brownie texture if chia seeds added. Many thanks, take care.😊❤

      Hi 👋🏻…you could use egg white powder but you do need enough liquid for the bamboo fiber ….the oil you use is entirely up to you x

    These looked beautiful and I added everything bagel seasoning. They were however a bit dry. I am wondering how to fix that? I did use psyllium husk powder and I believe you said whole psyllium husk powder. Is there a difference and could that be why they are dry? Very middle is not dry.

    Okay I was skeptical once I saw how much Psyllium husk you put in - it's always made my baked goods rubbery. But these were LIGHT and fluffy! I could still tell there was the PS in there, as it's a stretchy texture, but they had flavor I didn't expect, and fluffiness I sure didn't expect! Nice rise, nice puff, nice taste. Thank you so much!!!

    I finally made these tonight using psyllium powder (which amounted to half the measurement of the whole psyllium husks), and they turned out beautifully. They didn’t pop up as much as yours, but I think I patted them down into a larger diameter than you did.
    Anyway, this is a game changer for me. Thank you so much.

    Do you use psyllium husks whole or fibre? I just made these buns and the dough was not very firm and did not want to hold together. I tried adding more bamboo fibre but this did not help very much. Thanks.

      Whole psyllium husk ….let the dough rest for 10 mins x

      Check your baking powder and baking soda ….it should be fresh …I hope you kept dusting your dough so that you could handle it in your hands ?….i can’t think of any reason that it could have gone wrong as it’s a very forgiving dough …let me know on your next try what happens….ahhh !!…also do rest your dough so the whole psyllium husk absorbs enough of the liquid x

    I've been searching for an easy bread recipe. I've been looking at all the other Keto people and their recipes that 'require' the use of scales and ban the use of measuring cups.       This recipe needs the bamboo fiber…there’s no substitute…look for it in your country on google …you will have local suppliers x

      I believe that you have access to fresh bamboos shoots. And it is cheap.
      Dry the Bamboo shoot, then turn it into powder using a food processor/blender, or something else.
      Just like making cassava flour. You first dry the cassava, then pulverize it.

    Hello, thank you for the video. I just got a shipment of bamboo flour. Question: can I use ground psyllium husk? I would imagine the amount would need to be cut down. Thank you for your help.

      I was asking about this substitution, too. I have psyllium husk powder. So I appreciate you answered here. My other question is about using whole eggs instead of, or for part of the egg white amount. I know I can experiment but wondered if you already had and whether that would work or not and what happrns. I am on my second time reading through comments but missed this so maybe you addressed the egg question, too. Thanks!

      I ended up using eggs whites (and the yolks for another recipe) but I used psillium husk powder, 3Tbs instead of 4, and it worked fine. I have made this several times now and even used the rolls to make thanksgiving dressing twice and it was delicious!

      I ordered ground husks before seeing this video. Today I was in a store that had a clearance on it but it was also ground. I bought the last two bags.

    Thanks so much for the recipe - I'm sure it will work for me after 2 og 3 tries. I tried it this morning using real eeg white, and perhaps a little too little of it. perhaps also a little less bamboo fiber. The buns started out fine in the owen, but went flat after 15 min. Taste is really fine and they will stille do for hamburgers, but could I please ask for the recipe in grams... I do not have a cup messure as I live in Denmark :-)

      Oat fiber will give a completely different taste and texture …it will taste a bit sandy and gritty ….this one is soft and bready inside with a lovely crust …I would wait for your packet lol x

      I've made these buns several times...I like the recipe "as is" the most ..but sometimes add caraway seeds or other spices- or cheese on top just for fun..thanks Vernaz

    I followed the recipe to the letter, but all I got was a soupy mixture. I used about a third of the very expensive bamboo fiber (purchased the largest bag on Amazon0 to thicken it in an effort to form a dough. It became a thicker soup. I'm not an inexperienced baker. Are the ingredient measurements correct?

      Just add a tbsp or two of psyllium husk ….I hope you used whole psyllium husk …there’s no reason for this to stay a soupy mixture as both the main ingredients are fiber and both absorb liquids …x

    Is bamboo fiber, bamboo extract and bamboo flour all the same? I'm trying to buy on line and the brand you show is out of stock

      Fiber and flour is the same…do read the ingredient list on the packet …it should just be bamboo fiber , no other additives x

    Hi, these are my favourite Keto buns ever so thank you. I wanted to ask if this recipe would be okay to make a bread loaf. I know you do have a bread loaf recipe made with bamboo flour, but it also contains egg whites powder and I was wanting to make it without. I really enjoyed the buns and would like to try it as a bread loaf. Thanks, Julie.

      Hi 👋🏻….thx for the appreciation and yes the same recipe should work for a bread loaf …double the recipe and maybe a bit of adjustment of ingredients …as I work on each recipe for a few weeks and the egg white powder worked well for the loaf but there’s no reason this shouldn’t work …it might just deflate a bit but you will certainly get the texture and taste…if you do try it , do let me know x

    Where Can I order the bamboo fiber I live in Portugal when I look for it I get this Cassava Flour , is it the same or different , Have a feeling it is different ,, Thank you recipes looks great, if I can not find it what flour can I use

      Look for it on google in your country …this product has local suppliers that might not be listed on Amazon and cassava flour is very in carbs so you cannot use that …bamboo fiber is zero carbs x

      Oat fiber will not give you this texture and taste …there’s no substitute..:look for bamboo fiver on google …there are many local suppliers x

      There are many keto ingredients that are high in oxalates but this is zero carb and low fat so it’s well worth it x
