- Uttarakhand has a simple cuisine and the recipes are passed from one generation to another. These are my grandmother's recipes. I was fortunate to imbibe some of our garhwali culture and learn the language from her. Thichauni word is derived from thichana or crushing something. Life is difficult in those rocky himalayas and people make do with what is available locally.
I am sharing a part of our culture hoping to preserve it for younger generation.

why milk?
In olden days there were very few ways to make dished special in hills as they had limited stuff. Milk was used to make dishes taste special. It adds creamy flavour, slight sweetness and also reduces pungency of radish.
I never knew radishes looked like that
Radishes in Himalayas are like these
Iss sabji me kachhi mooli ka use hota hai ya paki Hui mooli ka
kachi mooli ka
आलू को छीलना नहीं चाहिये /या छिला नहीं जाता
You can make it both ways actually
Yeh toh àalo.muli ki sabhji bna di...it's not traditional way...
