Kim, thanks for watching and commenting. Chicken is easy to smoke on a Bradley but hard to get skin that isn't rubbery. I would dry the chicken very well and apply a light coat of baking powder, that will help dry the skin. Or you could smoke the chicken until the internal temp reaches approximately 140 degrees and then place them in a 375 degree oven until they reach 165 degrees internal to crisp the skin up. I hope this helps. You can use whatever your favorite rub is, I like Weber Kick-n-chicken myself. For wood I would run either apple or oak pucks in my Bradley for chicken.
