I saw your last side by side using the foil boat method. I'm pretty sure that the foil boat is used in place of wrapping not from the beginning. That way you still get the smoke and crunch you are looking for. You are always a first stop for me on technique and recipes.
Great video, as always! The baby back ribs in the stores around where i live (Sweden) are just half the thickness, with almost no meet on the flat side, only between the ribs. I need to find another butcher 🙂
Got a napoleon gas grill late last fall that came with their smoker box. Love the grill, however, the smoker box is a joke. With it sitting directly on the burner, the wood chips burn up way too fast instead of smoking like wood chips should, even on the lowest temp setting. I ended up purchasing one of those a-maze-n smoker tubes & it is far better and far longer burn times with the same amount of wood than the napoleon smoker box can offer.

What is flavor profile compared to weber kettle with wood chunks, pellet grill. Whats your opinion of pellet grills.
I only have a gas grill. I do them in a similar way but wrap at the 3 hour mark. Yours look better!

So confused on why no butter on the ribs but then you drench it in the bbq sauce 🤔
If you put the butter on top you will get stains as it melts, where the sauce will spread evenly and give you a nice look.
